Thai Red Chicken Curry has always been one of my husband's requests.

I have been using Mae Ploy Curry Paste because the other brands I tried didn’t give the same umami as Mae Ploy's. I use both their Green and Red curry pastes.

For the fish sauce, I choose Tiparos. A high-quality fish sauce is essential if you want your dishes to taste restaurant-like. Don't skimp on this.

For the sugar, it's better to use palm sugar, but I sometimes substitute it with brown sugar. Palm sugar has a more caramel taste if you're curious about the difference.

Instead of bamboo shoots, I use potatoes so my kids can enjoy them too.

One of my kids’ favorites! How about trying these epic Deep-Fried Meatballs stuffed with gooey cheese and savory ham? They’re a flavor explosion waiting to happen!

To whip these up, grab some ground chicken (or switch it up with pork or beef). Marinate those meaty orbs in a mix of calamansi (for that zesty kick), salt, and pepper for about 30 minutes. Then, stuff ‘em with cubes of cheese and thin slices of ham. Can you say yum?

Next up, get your dredging station nice and ready. Roll those stuffed balls in flour, dunk them in beaten egg, and coat them generously with crunchy Panko breadcrumbs. It’s about to get crispy up from here!

Heat up some oil and deep-fry those bad boys until they’re beautifully golden brown and screaming “eat me!”

Usapang Corned beef! What’s the best corned beef brand for you?

I grew up eating Purefoods Corned Beef but when I was in college, mas gusto ko na yung Argentina and Star Corned Beef. Nung nakatikim ako Delimondo, ay grabe, nakalimutan ko na pangalan ko.

Pag nauwi tatay ko from Saudi, may corned beef din sya laging dala na ang dry ng hibla. Parang sinulid na sya sa nipis. I don’t remember the brand.

Pag galing US naman na corned beef, dala dala ng lola ko yung may susi yung lata. 😂

Sa Japan, ang mahal ng corned beef, pero gustong gusto namin ang Nozaki’s — natry nyo na yun?

Thai Red Pork Noodles บะหมี่หมูแดง — it was my first time to try this!

My Thai classmate in my Nihongo class (yes, I’m taking intensive Nihongo classes so I have been very busy) gave me this.

For me, the noodles tasted like Mi Goreng but extra spicy. The grilled pork tasted like Chashu — it was sweet and salty! The meatballs at the side were so moist and soft.

It was full of umami!

And for the Latik Syrup topping, I learned it the hard way to use very Dark Brown sugar (Muscovado sugar) and not just any Brown Sugar. Molasses is great too and has a stronger taste than Muscovado sugar. And always don’t forget a pinch of salt in your latik.

I added kashmiri spice on top to make it a bit spicy because Filipino Chicken curry is sweet and salty but it totally has no spiciness.

Nilagang baboy (En. Pork Nilaga or Boiler Pork Soup.)

A simple Filipino dish commonly served in Filipino households.

Recipe:
1 kg Pork Belly or Pork Pigue or Pata (Pork hock) or Spareribs
1 medium Onion, quartered
4-6 cups Water
1 tsp Black Peppercorns, lightly crushed
2-4 tbsp Fish sauce
Pinch of Salt
1 Pork bouillon cube (optional)
4-5 Potatoes
1 small head Cabbage, quartered
1 bunch Baguio Beans (Green Beans)

You may also add:
Petchay or Bok choy
Napa Cabbage
Corn
Saging Saba

Pork Siomai with minced shrimp — since high school, I have already been trying to perfect my siomai recipe (back then there were no smart phones and recipes online were not yet a thing.)

My first siomai, I added tons of carrots as extender, people who tasted liked it, but I knew that I failed. For me, it was a pretentious lumpia in a shape of siomai.

From then on, I never used carrots. I used singkamas aka jicama instead.

Now that I’m in my mid 30’s, I never thought my siomai recipe can still go another level just by adding one more ingredient! And that’s GARLIC!

Yes! Garlic minced or garlic paste! The same secret recipe of my Japanese mother-in-law in her Gyoza!

Garlic brings out the best flavor to the minced meat (pork or beef).

Easy Chicken Galantina — instead of using a whole deboned chicken, I use chicken thighs so I can easily make Chicken Galantina every time!

Recipe Procedure:
1. Flatten the Chicken Thighs, keeping the skin on, and marinate for at least 4 hours or overnight:
- [ ] 6 chicken thighs
- [ ] 3/4 cup soy sauce + liquid seasoning
- [ ] Juice of 1 lemon or 1/2 cup Calamansi
- [ ] 1 1/2 tsp salt
- [ ] 1/2 tsp pepper
- [ ] Thyme

2. Prepare the filling:
- [ ] 1 lb. ground chicken breast
- [ ] 3/4 cup chopped Vienna sausage, minced
- [ ] 3 tbsp sweet pickle relish, minced
- [ ] 1/2 cup raisins, hydrated
- [ ] 3/4 cup minced ham, cubed
- [ ] 1/2 cup minced yellow onion, minced
- [ ] 1/2 cup minced carrot, minced
- [ ] 1/2 cup chopped red bell pepper, minced
- [ ] 5 tablespoons bread crumbs
- [ ] 3 Eggs

3. Prepare the additional filling:
- [ ] 2 pieces hard boiled eggs, sliced
- [ ] 4 pcs Chorizo, sliced

4. Cut an aluminum foil, top it with parchment paper.

5. Place one piece flattened chicken thigh (chicken skin down), fill it with the ground chicken breast mixture, sliced egg, and sliced Chorizo.

6. Roll the parchment paper first then the aluminum foil.

7. Steam for 20 mins.

8. Let it cool and keep in the fridge for 4-8 hours.

9. Slice and serve cool with gravy.

Okonomiyaki — this type of Okonomiyaki is Hiroshima style. It has yakisoba, cabbage, and fried egg. Topped the same with the Osaka style Okonomiyaki with the Okonomiyaki sauce (I use tonkatsu sauce), mayonnaise, Katsuobushi, and ao nori (I apparently didn’t have at this time 😭.)

Did you know that it is rude for people in Hiroshima or Osaka to call it Hiroshima Okonomiyaki or Osaka Okonomiyaki? So we must just call it Okonomiyaki.

Siomai — steamed, deep fried, or BOILED????

Yes! You can boil siomai. Here’s the recipe:
1. In a food processor, grind onion, garlic, and turnips or jicama (singkamas)
2. In a bowl, mix in #1, ground pork, egg, flour, and seasonings:
- light soy sauce
- oyster sauce
- salt, white pepper, sugar
- chicken granules
- sesame oil
3. Let the mixture rest covered in the fridge for at least 10 mins.
4. Individually wrap a teaspoon of the filling in dumpling wrappers and cover with a kitchen towel
5. Boil water with sesame oil
6. Once the water is boiling, add the siomai and cook for 6-8 mins.
7. Strain and serve with toyomansi and chili garlic oil.

Chicken Inasal recipe:

2 pcs Chicken Pecho
1 cup Vinegar
1 tbsp Calamansi
3 tbsp Yogurt
2 Thumb size ginger
3 Garlic
3 white stalk of lemon grass
1 tsp Salt & Pepper
3 tbsp sugar

Procedure:
1. Pound the Chicken pecho lightly with a kitchen hammer.
2. Combine all of the marinade ingredients and marinate the Chicken pecho overnight.
3. Preheat your Cuisinart Digital Convection Oven/Airfryer to 190C.
4. Place the chicken pecho, skin side down, and cook for 20-25 minutes, flipping the chicken halfway through.
5. When done, remove the chicken from the air fryer and let it rest for 2-3 mins before serving.

Pork cooked in Sukiyaki sauce — a 10-minute easy recipe!

Procedure:
1. Sauté thinly sliced pork loin for 1 minute (this should not be fully cooked)
2. Add sliced onion and carrots
3. Add broth base: soy sauce, dashi, mirin, raw sugar or light brown sugar, water
4. Let it cook until the carrots become soft.

Serve with rice and miso soup as desired.

Tinolang Manok sa Gata aka Chicken Tinola with Coconut cream — when making this, I surely want the broth to be spicy.

How to make it?
Start by making your tinola.
1. (Brown your chicken first if you prefer) Sauté onion and ginger and add Chicken
2. Cover and slow cook until you see the blood of the chicken has been cooked
3. Season with fish sauce, salt, and white pepper (ground black pepper is absolutely fine too)
4. Add enough water to cover the chicken
5. Slowly simmer with pot covered
6. Add the papaya or sayote and once they are a bit soft add the coconut cream
7. Simmer until the sauce thickens and you could see some oil
8. Add chili leaves (or kangkong or spinach) and red chili.
9. Serve hot with rice.
