This combo is absolutely banging! Pimento cheese belongs with chicken on a sandwich and you won’t change my mind!
-I marinaded some bonless skinless chicken thighs in buttermilk and crystals hot sauce for 3 hours but could go longer.
-For the pimento cheese its 2 cups cheddar cheese, 3/4 cup of mayo, a block of cream cheese, and a drained 4 ounce jar of pimentos. Mix ingredients in a large bowl.
-Grill chicken then place onto a toasted bun and top with the pimento cheese and honey.

I had to try these for myself! Worth it though? I’d say for a quick weeknight dinner yes, but definitely hard to beat a perfectly smoked rack of ribs. They were still juicy and tender though. Hard to mess up a rack of ribs in my opinion even if you overcook them theyll still eat just fine. Its definitely worth trying for yourself. You could replicate this on any grill just set it up for indirect cooking between 350°-375°.

This Pulled Pork Chipolte Smoked Queso was incredible and so easy to throw together.
🔥 Dice half an onion and a whole jalapeno.
🔥Chop 4 chipoltes in adobo
🔥In a pan throw in a block of velveeta cheese, block of pepperjack cheese and a block of cream cheese.
🔥Top with everything you chopped and a can of green chiles.
🔥Add pulled pork or whatever meat you like on top and season with whatever you like.
🔥Smoke at 300° for an hour or until all the cheese is melted and combined. If needed add some heavy whipping cream to thin.

I sort of measured with my heart but these measurements will be very close. Throw all ingredients in a pot and mix together. Bring to slow boil on medium/low heat careful not to burn, reduce heat to low and simmer for 5 minutes. Remove from heat and let cool.
1/2 cup tamari or low sodium soy sauce
1/2 cup brown sugar
2 teaspoon fresh ginger minced
Teaspoon garlic minced
Tablespoon honey
Teaspoon sesame oil
3 tablespoons mirin
1/4 cup water
Tablespoon corn starch

If the apple pie isn’t smoked I don’t want it! You guys loved my smoked peach cobbler so when I saw these apples growing on the tree I knew I needed to throw down an apple pie on the smoker!
🥧 INSTRUCTIONS⬇️
🥧Peel and thinly slice 5-6 apples. 7 cups total. Sprinkle with cinnamon.
🥧Melt a stick of butter in a sauce pan, then whisk in 3 tablespoons of flour. Once flour and butter are combined, add a cup of sugar and 1/4 cup of water. Simmer on low until the sugar melts. (3-5 minutes)
🥧Pour sauce over apples and stir.
🥧Press pie crust into a pie pan and pour apple mixture into crust.
🥧I cut my top crust into strips and made a lattice top, you could do that or just put the entire crust on top and make a few slices in the center.
🥧Smoke the pie at 350° over apple wood for 45 minutes. Time could vary based on your crust. Just cook until its a nice golden brown.

Meatzarella sticks are a game day move at my house! I sliced Italian sausage out casing. I used whole milk mozzarella cheese sticks and wrapped them with the sausage. Seasoned them up and smoked at 300° for 45 minutes or until the internal temp on the sausage was 160°. Cut a pork butt into cubes and season with whatever you like. Smoke the bites at 225°-250° for 3 hours then throw them in a pan or foil boat with butter, brown sugar, and maple syrup on the bottom. Then top the bites with whatever sauce you like. Best bite in BBQ? In my opinion these are hard to beat! Whenever I make belly bites I like to smoke the belly in strips. This gives you way more bark on the outside versus just cooking the belly whole then cubing it. I seasoned them up and put them down on my weber kettle over post oak 250°. Smoked them for 4 hours. After that, cube them up and put them in a pan with a couple tablespoons of butter, maple syrup, japanese bbq, and some brown sugar. Cover rhe pan and put them back on the smoker until they are as tender as you want rhem to be.
