Lower Sodium Shrimp Scampi w Linguini
This recipe has a nice lemony scampi sauce, I love it. Let’s keep the added salt out even in the pasta water…we just don’t need it. We are flavoring our pasta water with the 🍋’s
You’ll need
•1-lb linguini
•4-tbs olive oil
•1-lb jumbo shrimp cleaned tails left on
•8-tbs unsalted butter
•6-8 garlic cloves minced you decide
•Juice and zest of 2 lemons
•1/4-cup chopped fresh parsley
•1/2-tsp red pepper
•pasta water
1-juice and zest the lemons in a small bowl set aside for step 5
2-in a skillet large enough to hold the whole recipe heat the oil over medium heat.
3-add the shrimp cook until done about 3 minutes move to a plate.
4-add the butter, garlic, red pepper to the skillet when the butter has melted saute about 5 minutes.
5-Add the lemon juice, zest, parsley and remove from the heat
6-get a pot of UN salted water with the lemons cook the pasta and reserve 1 cup of the pasta water.
7-put the heat to medium under the skillet add the shrimp, strained pasta, 1/4-cup of pasta water toss for one minute to create the sauce add more pasta water a tablespoon at a time if needed
8-serve with lemon wedges and a sprinkle of parsley
