Chocolate Chip Heaven Cupcakes
Ingredients:
* 1 cup (200g) all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 cup (100g) unsalted butter, softened
* 1 cup (200g) granulated sugar
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/2 cup (100g) milk
* 1 cup (200g) chocolate chips
* 1/2 cup (100g) white chocolate chips
For the frosting:
* 1/2 cup (100g) unsalted butter, softened
* 2-3 cups (400-600g) powdered sugar
* 1-2 tablespoons milk
* 1 teaspoon vanilla extract
Instructions:
* Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners.
* In a medium bowl, whisk together flour, baking powder, and salt.
* In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
* Alternately add dry ingredients and milk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
* Fold in chocolate chips and white chocolate chips.
* Divide batter evenly among cupcake liners. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
* Let cupcakes cool in tin for 15 minutes before transferring to a wire rack to cool completely.
* In a large bowl, cream together butter and powdered sugar until light and fluffy. Beat in milk and vanilla until smooth.
* Frost cupcakes and drizzle with melted chocolate.
* Decorate with additional chocolate chips, if desired.
