Happy cinco de mayo! Here’s what I made for my client on this day. (Not cinco de mayo related ) This was a little different since I only had to prepare lunch and do some meal prepping instead of the usual dinner evenings. For lunch I served a Greek salad over a bed of lettuces. The salad contain heirloom tomatoes, cucumbers, Kalamata olives, red onion, dairy free feta cheese, avocado & pepperoncini peppers. I dressed the salad in a red wine vinaigrette. I served that with grilled chicken thighs which I marinated in red wine vinegar, lemon juice, garlic, fresh oregano, olive oil, salt and black pepper. I also included a couple of slices of sourdough bread that I toasted on a cast iron pan with some butter. I served winch with a ginger, lemon, mint & honey beverage that was topped off with sparking water. Post game dinner for my clients. Appetizer was a spinach, roasted chickpea, red onion, avocado & toasted almond salad with a citrus champagne vinaigrette. ✨ The entree was a pan seared halibut over freeing pesto & a bad of seared shallots, topped off with a butter, garlic, white wine & lemon reduction. Happy Sunday! ✨ On this day I thought it would be a great idea to prepare a Mexican inspired dinner since my clients love that flavor profile. I started off by making a habanero hot sauce using white onion, garlic, habanero, cumin, oregano, vinegar and blending that up after sautéing. I followed by preparing ahi tuna tostadas with a guacamole spread on the tostada, ahi tuna that I marinated in an orange and lime dressing, topped it off with a mango salsa & a siracha mayo drizzle. 🤤 For the main dish I make some tinga chicken stuffed pabalano peppers that I baked with a little bit of vegan cheese. I topped that off with a spicy avocado crema and dairy free sour cream. Hello friends! 😊 Today I’m sharing how to make these delicious and nutritious @Sumo Citrus sour gummies. Indulge in the perfect sweet treat packed with benefits like vitamin C, essential for immune support, and collagen, promoting healthy skin, joints, and digestion. Ingredients: -1 cup Sumo Citrus juice -1 tbsp Sumo Citrus zest -1/4 cup gelatin -3 tbsp honey Instructions: 1. In a small saucepan, heat Sumo Citrus juice over low heat. If using orange zest, add it to the saucepan as well. 2. Once the Sumo Citrus juice is warm (not boiling), stir in the honey or maple syrup until it dissolves completely. 3. Gradually sprinkle the gelatin powder over the warm juice while continuously whisking to prevent clumps from forming. 4. Continue whisking until all the gelatin is fully dissolved and the mixture is smooth. 5. Remove the saucepan from the heat and let the mixture cool slightly. 6. Pour the mixture into silicone molds or a shallow dish greased with a little oil 7. Place the molds or dish in the refrigerator and let the gummies set for at least 2-3 hours, or until firm. 8. Once set, remove the gummies from the molds or cut them into bite-sized pieces if using a dish. 9. I decided to prepare these delicious crispy smashed potatoes using some @Sumo Citrus juice to make things more interesting. Let me tell you, these potatoes were absolutely delicious! 🤤 😍
recipe:
-1lb baby potatoes
-1 tbsp extra virgin olive oil
-¼ cup Sumo Citrus juice
-1tbsp minced garlic
-salt & black pepper to taste
Boil in salt water for 10 minutes, smashed & roast in the oven for 40 minutes at 400 degrees F.

It was another game night which meant a light dinner being it was so late in the night.
Before working on dinner I prepped a few things like pan seared chicken thighs, oatmeal banana cookies, and pureed protein & veggies for their baby.
For their appetizers I prepared a shrimp ceviche with a side of baked plantain chips and endive. This is something I’ve made for them in the past and they really enjoyed.
For the main dish I pan seared grouper and topped it with a citrus salsa . I served that with a side of sautéed green beans, pan seared radishes over a cashew and cilantro spread.
