I had an amazing experience with their Summer menu.
The summer hassun were decorated with a whimsical beach scene taking inspiration from summer, sunshine, sea and wave.
Truly a sumptuous culinary journey!
9 course menu ($338++)
Pre appetiser Broth made with Katsuo dashi, kelp(kombu) and yuzu zest.
1. Foie gras Monaka- Miyazaki mango, Ulam Raja Flower, Myoga Kinome and Kaffir Zest
2. Black Abalone with Sh*take mushroom, kujo negi purée, lime juice, Sudachi skin zest, Abalone liver sauce and topped with Hamaguri foam. 🥰

5. Kue Fish (Grouper with egg plant purée and pickled peppers)
6. Omi beef (A5 Wagyu from Shiga prefecture with chirizu sauce, asparagus and fried burdock chip)
7. Akamutsu Donabe with watercress and sweet peas
8. Plate cleanser: Momo peach with cream cheese
9. Summer melody (1 hot passion fruit soufflé and 1 cold melon calpis)
10. Chef signature Wasabon (sweet potato with black truffle) supplement $28++

First time trying Blue Label Pizza and it was ok (ordered the Dr. Pepperoni $34, buffalo chicken wings $14 and house fries $15). Sourdough crust were crisp and a little too hard when I dabao home. Will try to dine in next time!
Homemade Spicy Mapo tofu
Homemade Spicy tofu for lunch! I added Extra peppercorns, Dou ban Jiang (Spicybean Fermented Beans Paste) extra dried Chili 🌶🌶🌶🌶 to my tofu and it was very spicy. I need to reduce the dobanjiang to 1.5 table spoon and cut back on peppercorns and 🌶.
1 ginger
2 gloves garlic chopped🧄
1 Tbsp Sichuan peppercorns,
5 Sichuan dried chilli chopped
2 Tbsp spicy dopanjiang
1 Tbsp oyster sauce
½ Tbsp soy sauce
1 tsp sesame oil (roasted)
1 tsp potato starch/cornstarch
4 Tbsp water
