A bit of a fusion mix of everything going on for Tuesday dinner tonight - but bloody lovely

Roasted Jerk spatchcock chicken
On a spiced tomato risotto with chilli, paprika and cumin spiced vegetables and chickpeas

Absolutely banging and ready in 40 mins - you can not beat that 🫶🏼

Hard to beat a wee spatchcocked chicken from the butcher for a quick meal 🙌🏻 - butchers always serving the community so well ❤️

My son has done us mega proud this week. He’s gone and got himself in the Sale Sharks Player Developement Program for the season ahead and I am actually so happy for him. He’s grafted so hard at the gym and really stuck it out. And finally we’re starting to see some green shoots popping up for him 🥹

And with that my glorious family and friends I come asking for your help.

Some of you will remember that in 2023 his team had a massive fundraising campaign to take them on tour to Portugal 🇵🇹 and our son, Mel McCaugheynd myself pushed that so hard and you were all amazing, but unfortunately just a couple of weeks before the tour he has a brutal rugby injury that required surgery and he ended up not being able to play. It literally devastated Benji and it totally broke my heart, but the opportunity has presented itself again - and the team are actually going again which is outrageous and amazing and I really want to make sure Benji gets the chance to actually avail of that opportunity this time after all his hard work.

As before - our club is managed by volunteers (myself being one of them) and so the fundraising is coming down to us to drive it.

Please donate whatever you can to support this team on their tour to Lisbon Portugal in 2025 - it’s such an amazing opportunity for the kids but it is SO expensive and I am committed again to making sure it’s accessible to all families - but I need help 🥹🥹🥹

We are also offering some sponsorship opportunities so if I have friends with businesses that are up for sponsoring Benji or any of the other lads - come talk to me!! PLEASE 🙏🏼

We need to raise funds to support the U15 rugby team to travel to Portugal to represent Stockport Rugby Club in an international tournament.

First time visiting Firehouse last night and it did not disappoint.

I’ll start by saying I walked past it several times before actually figuring out where it was 😅 I think it’s a bit too cool for me haha but it shares a site with its sister (which I am also dying to try!!) which luckily says RAMONA outside 💀😂

This is a very cool spot and the food was DIVINE.

We had:

All three types of pittas - these are one of those items on the menu

We each opted for the chicken breast - which speaking honestly has a “boujee” price tag but you soon forget about that when you’re eating it - fabulous quality chicken, a big portion and unreal crispy skin. Again we got all 3 sauces a aioli, hot honey and peri peri - beautiful!

And for sides we feasted on:
Butternut squash
Truffle and Parmesan potatoes
And the broadbean green salad - this was absolutely amazing! I’m definitely going to recreate this at home!

Drinks - I had the Smokey pineapple spritz and it was perfect with the charred chicken - amazing.

As I mentioned it’s definitely on the upper end of the budget for this type of meal but it is well worth it! I’ll definitely go back!

Then take a deep breath and despair as you approach the weekend…

Less than a week to go until my chefs table at the Milliner - I am so nervous! But knowing that I’m putting myself out of my comfort zone for such a worthwhile cause is keeping me motivated and less afraid!

Thank you so much to everyone that’s donated so far - even donations as little as £1.00 make a difference to this amazing charity. Homesless in Stockport is at an all time high and I know I don’t need to remind anyone of how expensive everything is now - but if you can spare a little please join me in fundraising - I’d really appreciate your support and it will help keep my nerves at bay for Thursdays chefs night 🙌🏻🥰
