Oh Snap! Gingerbread Fried Donuts 🍩☃️🎄
Dough:
* 1 cup milk, lukewarm
* 2¼ tsp active dry yeast, 1 packet
* 1/2 cup unsalted butter, melted
* 1/4 cup granulated sugar
* 2 tsp molasses
* 1 tsp vanilla extract
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1/2 tsp ginger
* 2 large eggs
* 3 2/3 cup flour
* 1 tbsp oil for bowl
For Frying:
* 8 cups vegetable oil
Filling:
* 1 package, 3 oz. Vanilla Pudding g Mix
* 1 tbsp nutmeg
* 1/2 tsp nutmeg
* 1 cup milk
* 1/2 cup heavy whipping cream
Topping:
* 1 cup granulated sugar
Directions:
* Warm milk to 110 degrees F. Pour yeast packet in milk and let sit for 10 minutes.
* Melt butter and set aside.
* Using a stand mixer, fitted with the whisk attachment add sugar, molasses, vanilla extract and all spices in the bowl. Add butter and mix all together till combined.
* Add eggs and continue to mix.
* Add in yeast mixture and combine.
* Remove whisk attachment and put dough hook attachment on. Add flour in slowly. It will take about 6 minutes for dough to form and it for to all be combined.
* Remove dough and put in a clean greased bowl, covered with a towel in a warm place for atleast 90 minutes till it has doubled in size.
* Punch dough down and roll out on a clean surface. Using a @wiltoncakes medium to large Gingerbread cookie cutter cut out donuts and place on a parchment paper cookie sheet. This will make 10-12 donuts. Let dough sit covered with a towel for another 45 minutes.
* While dough rises, heat oil in a lager pot to 355-365 degrees F. In addition make your filling by combining pudding packet, spices and 1 cup of milk, stir till thickens. In a medium bowl whip 1/2 cup heavy cream till soft peaks form and fold into pudding. Set in fridge to chill.
* Time to fry your donuts. Using a slotted spatula place 3-4 donuts in the oil at a time. Fry for about 2 minutes on each side and place on a paper towel cooling rack.
* Cover donuts in sugar and pipe filling into center of the donut!

Crust:
* 1 2/3 cups graham cracker crumbs crushed
* 6 tbsp unsalted butter, melted
Cream cheese Filling:
* 4, 8 oz. cream cheese, softened
* 1 cup granulated sugar
* 1/2 cup packed light brown sugar
* 4 large eggs
* 2 tbsp flour
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1/4 tap salt
* 2 tsp pure vanilla extract
Brown sugar Filling:
* 1 cup brown sugar
* 1 1/2 tbsp cinnamon
* 1/2 cup flour
* 5 tbsp unsalted butter, melted
Icing:
* 2 1/2 sticks of butter
* 3 cups powder sugar
* 2 tsp vanilla
* 3-4 tbsp heavy cream
Cinnamon drizzle:
* 1/4 cup brown sugar
* 1 tbsp cinnamon
* 4 tbsp unsalted butter, melted
* Extra cinnamon for dusting the cake
Instructions:
* Preheat oven to 350 degrees F.
* Grease 9” springform pan and put tinfoil around the bottom outside of the pan for when you bake.
* Make crust by combining Graham cracker crumbs and melted butter. Press down in spring form pan with spatula till evenly distributed.
* Make cream cheese filling by beating cream cheese for 2-3 minutes, add in sugars, beat till fluffy. Add in eggs one at a time. Only beat till combine. Do not over-beat. Add in flour, cinnamon, nutmeg, and salt till combine. Whip in vanilla extract. Set aside.
* Make brown sugar filling by combining brown sugar, flour, cinnamon and melted butter till you get coarse crumbs.
* Now pour about a third of the cream cheese filling in the pan. Layer on top your brown sugar filling and repeat till cream cheese layer is the final layer. Bake for about 80 minutes on a baking sheet, till top is only slightly jiggly. Turn oven off and keep oven door cracked for 45 minutes with cake inside of oven. Remove and refrigerate for 6 hrs.
* Make icing by combining butter, powder sugar, vanilla extract and heavy cream.
* Make Cinnamon drizzle by combining melted butter brown sugar and cinnamon together.
* Pipe frosting on and the pipe on cinnamon drizzle. Sprinkle a little extra cinnamon on top of the cheesecake!

* Optional Vanilla Pirouette Wafer, gingerbread crumbs, dusting of cinnamon
Directions
* Preheat oven to 350 degrees F.
* In a stand in mixer bowl with fitted paddle beat butter, brown sugar, and molasses. Add in eggs.
* In a separate bowl combine dry ingredients. Mix dry ingredients into wet ingredients till cookie dough forms. Using a ice cream scooper, scoop 12 balls into a greased muffin pan. Press cavity down in center of cookie.
* Bake for 12 minutes. Do not overbake. Let cool for 5-10 minutes and transfer to cooling rack.
* Make whip cream by whipping together heavy cream, sugar, molasses, cinnamon, and nutmeg till stiff speaks form. Pipe or spoon center of cookie cup with the Vanilla Petit Pot french dessert and pipe whip cream on top. Can dust with cinnamon and gingerbread crumbs if desired and add wafer for decoration. Enjoy!

This cake is so good my husband and I could not stop eating it last night! It’s light and fluffy. It has coconut and chopped pecans in it and the FROSTING is so delicious! Recipe below!
Ingredients:
Cake:
* 2 cup flour
* 1 tsp baking soda
* 1/2 tsp baking powder
* 16 tbsp unsalted butter, softened
* 2 cups granulated sugar
* 5 egg yolks
* 5 egg whites
* 1 cup buttermilk
* 1 tsp vanilla extract
* 3/4 cup chopped pecans
* 1/2 cup shredded sweetened coconut
Frosting:
* 16 tbsp unsalted butter, softened
* 8 oz. Cream cheese, softened
* 4- 4 1/2 cup powder sugar
* 2 tbsp heavy cream
* 1 tsp vanilla extract
* 1/2 tsp almond extract
Topping/Center:
* 1/3 cup chopped pecans
* 1/3 cup shredded sweetened coconut
Directions:
1. Preheat oven to 325° F. Line and grease two 9x9 baking dishes. Could use a 9x13 dish.
2. Mix flour, baking soda and baking powder in a medium bowl. Set aside.
3. Seperate eggs putting yolks in one bowl and whites in another. Set aside.
4. In a stand in mixer bowl fitted with paddle beat butter and sugar together till soft and fluffy. 2-3 minutes. Add in only egg yolks and continue to beat together till combine.
5. Slowly add a little flour, alternating adding flour and milk till fully incorporated.
6. Fold in pecans and coconuts.
7. In a clean stand in mixer whisk together egg whites till white and fluffy peaks. About 3-5 minutes. Fold into cake batter till combine.
8. Bake for 30 minutes if using the 9x9 dishes. 9x13 may take up to 40 minutes to bake. Take out of oven and let cool. Put cakes on cooling racks after 5 minutes.
9. Make frosting till cakes are completely cool by beating together butter and cream cheese till smooth. Add in powder sugar, extracts and heavy cream and beat till smooth.
10. Frost first layer of cake and sprinkle half the pecan/coconut in that layer. Put the other cake layer on top frost and sprinkle remaining pecans and coconut.

Ingredients:
- Oreo Crust:
- 2 cups Oreos
- 8 Tbsp (1 stick) unsalted butter, melted
- Filling:
- 32 oz cream cheese (4 blocks), softened
- 1 cup powdered sugar
- ⅓ cup sour cream
- 2 tsp peppermint extract
- ¾ cup heavy cream
- Ganache:
- 8 oz Ghirardelli semisweet chocolate bar, chopped
- 1 cup heavy cream
- 5 mini candy canes, crushed
- Chocolate Frosting:
- 16 Tbsp (2 sticks) unsalted butter, softened
- 3-3½ cups powdered sugar
- ½ cup cocoa powder
- ¼ cup ganache, cooled
- 1 Tbsp heavy cream
Preparation:
1. Line the bottom of an 8- or 9-inch springform pan with parchment paper.
2. Crush the Oreos in a blender. Transfer to a medium bowl, add melted butter, and stir to combine.
3. Press the Oreo crumbs evenly against the bottom and up the sides of the prepared pan. Refrigerate while making the filling.
4. In a stand mixer fitted with the paddle attachment, beat cream cheese, powdered sugar, sour cream, and peppermint extract until smooth and fluffy.
5. In a separate bowl, whip the heavy cream until soft peaks form. Fold it into the cream cheese mixture.
6. Pour the filling into the crust and refrigerate for 6-8 hours until set.
7. In a small saucepan, bring the heavy cream to a simmer. Pour it over the chopped chocolate in a heatproof bowl. Stir until smooth and let it cool slightly.
8. Pour the ganache over the chilled cheesecake and sprinkle crushed candy canes on top. Return to the refrigerator.
9. In a mixing bowl, beat butter until smooth. Add powdered sugar, cocoa powder, reserved ganache, and heavy cream. Mix until smooth.
10. Remove the cheesecake from the refrigerator and pipe the frosting around the edges.
11. Slice and serve.

* To make the brown butter place butter in a small pot on medium heat on the stove top. And stir for 3-5 minutes till butter simmers and browns.
* In a 4 cup measuring cup or medium bowl whisk a large egg. Add brown sugar. Add flour, cinnamon, baking powder, baking soda, cream of tartar and slat. Add milk. Add vanilla extract and brown butter. Whisk all together till combine. There will be some lumps.
* To make the pancakes, scoop 1/4-1/2 cup of batter into a medium greased skillet, on medium heat. Let pancake cook for 2 minutes on each side. Repeat till batter is finished. It makes 8 pancakes using 1/4 cup.
* In a small cup or bowl combine powder sugar, cinnamon and milk, stir together.
* Pour icing over pancakes and sprinkle with cinnamon sugar. Garnish with cinnamon sticks. Slice and enjoy!

Banana Donuts:
* 2 ripe bananas mashed or blended
* 3 tbsp unsalted butter, melted
* 1 egg
* 1 tsp vanilla extract
* 1 cup all-purpose flour
* 1/2 cup light brown sugar
* 1 1/2 tsp baking powder
* 1/2 tsp cinnamon
* 1/2 tsp salt
Brown Butter Glaze:
* 1/2 stick unsalted butter
* 1 cup powder sugar
* 1 1/2 tsp extract
* 1/3 cup heavy cream
Topping/Sides:
* 1/3 cup cinnamon sugar
* 1 tsp cinnamon
Instructions:
1. Preheat oven to 350 degrees F. Grease donut pan or line a muffin pan.
2. Blend bananas and add to a medium bowl. Add melted butter, egg and vanilla extract and combine all together.
3. In a separate bowl mix together flour, brown sugar, baking powder, cinnamon and salt.
4. Add dry ingredients to wet and combine till smooth.
5. Pipe donut mix into donut pan or muffin pan, filling 3/4 the way full.
6. Bake for 12-15 minutes. Pop out on cooling rack.
7. Make glaze by adding butter to a small pan on the stovetop on medium heat and stir for about 3-5 minutes till it bubbles and browns. Remove from heat and let cool for a couple minutes. Combine powder sugar, vanilla extract, butter and heavy cream and stir till smooth. Glaze donuts.
8. We dunk the sides of our donuts in a little cinnamon sugar. This is optional. We glaze the tops and sprinkle a little cinnamon sugar on top! Enjoy.

* 1 packet active drive yeast, 1/4oz package
* 1 stick unsalted butter, melted + cooled
* 1/4 cup granulated
* 1 tsp vanilla extract
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 2 large eggs
* 3 cups all-purpose flour
* 6-8 cups vegetable oil for frying
Chocolate Ganache
* 1/2 cup chocolate chips
* 1/4 heavy cream
Marshmallow Fluff
* 4 egg whites
* 3/4 cup sugar
* 1/4 tsp cream of tartar
* 1 tsp vanilla extract
*Optional Graham cracker crumbs and blow torch
Instructions:
1. Microwave milk for 1 minute till it’s at 110 degrees F. Combine yeast and stir. Let sit for 10 minutes. Yeast should foam.
2. In a stand-in mixer add melted butter, sugar, vanilla extract, cinnamon and nutmeg, blend together.
3. Add in yeast mixture and eggs.
4. With a dough hook. Slowly add in 1 cup of flour at a time till combine. Dough should become less sticky and pull away from the bowl into a nice ball.
5. Let sit in a bowl with a towel over it for about 2 hrs till it doubles in size.
6. Roll out dough on a floured surface and cut donuts with a biscuit cutter or cup.
7. Place donuts on a parchment paper baking sheet and cover with a towel for another 45 minutes.
8. While dough rises in a large pot heat vegetable oil to 365 F.
9. Fry for about 90 sec. on each side & put on a paper towel cooling rack.
10. While cooling, make marshmallow fluff. Separate 4 egg whites and add sugar and cream tartar and stir in a mixing bowl. Start a double boiler with about an inch of water and let simmer. Take bowl and place on your double boiler and stir constantly till mixture is at 160 degrees F. Beat mixture till stiff peaks form, about 3-5 minutes, add in vanilla extract and beat for another 2 minutes. Place fluff in pipping bag
11. Make ganache by microwaving chocolate chips and heavy cream for Appx. 1 minute and stir.
12. Pipe marshmallow fluff in donuts and cover tops with ganache and Graham crackers
Apple Strudel Puff Pastry 🍎🍏
This apple strudel puff pastry is so good and it is super easy to make! Literally 10 minutes prep and 15 minutes to bake. Such a tasty morning treat.
Ingredients:
* 1 box puff pastry, 2 sheets
* 3 tbsp unsalted butter
* 3 apples red or green, diced
* 1/3 cup brown sugar
* 2 tsp cinnamon
* 1 tsp vanilla extract
* 1 egg, beat for egg wash
* Sprinkle Turbinado sugar
* Optional icing
Instructions:
* Preheat oven to 400° F.
* In a median saucepan on medium heat, melt butter, add in diced apples. Let simmer for 1 minute. Add in brown sugar, cinnamon and vanilla extract and stir till apples soften, a couple minutes.
* Roll out both sheets of puff pastry. Cut both in half this recipe makes two strudels. Place in cookie sheet with parchment paper.
* Take 1 cup of diced apples and spread evenly on one bottom layer of pastry, leaving a 1” inch edge. Place other half layer of puff pastry on top of bottom layer. Fork around the edges, brush with egg wash and cut slits on top of puff pastry. Sprinkle sugar on top. Repeat for other puff pastry sheet. Bake both for 15 minutes or till golden brown.
* Optional drizzle icing. You can buy or mix 1/2 cup powder sugar with two tablespoon of heavy cream and drizzle. Enjoy!

Dry:
* 1 1/3 cup flour
* 1 tsp baking powder
* 1/2 tsp baking soda

Wet:

* 1/4 cup brown sugar
* 2 eggs, room temp
* 1/4 cup @botticellifoods baking olive oil

Frosting:
* 3 sticks unsalted butter, room temp (24 tbsp)

Directions
* Preheat oven to 350°F. Combine all dry ingredients in a medium bowl. Set aside.
* Combine all wet ingredients in a bowl. Pour wet ingredients into dry ingredients. Whisk together.
* Pour cake batter into a prepared 8×8 baking dish, greased parchment paper. Bake for 30-35 minutes. Remove from oven and let cool.
* Pop cake out on cooling rack after 15 min of cooling in baking dish and continue to cool.
* Make Frosting by beating butter till fluffy. Add powder sugar, maple syrup, vanilla extract, molasses and heavy cream and beat till smooth.
* Frost cake with a thick layer of frosting. Optional to make the Christmas tree but I use a large star tip and make shells starting from the bottom of the base of the cake. You can also just do piping of stars from the bottom up. Be creative. Sprinkle on sprinkles of choice. Slice and enjoy.

Ganache:
* 1/3 cup chocolate chips
* 1/3 heavy cream, heated
Directions:
* Preheat oven to 375° F.
* Combine oil, sugar and whisk together.
* Add egg, sour cream and vanilla extract and whisk together till smooth.
* Combine flour, baking powder and salt together in a small bowl and add to wet ingredients. Pour in buttermilk and stir till combine.
* Fold in chocolate chips. Leaving a handful for the top.
* Pour muffin batter into lined muffin pan. Bake for 18 minutes.
* Take muffin’s out of the oven and make your ganache by heating up heavy cream and pouring it over the chocolate chips. Stir till smooth pipe on muffins. Ganache is optional.

This Brown Butter Banana Cinnamon Roll Cake is so good! The texture is moist and it has a nice crumb to the cake. This is perfect with a cup of coffee or tea (for me)!
You will need 10 ingredients total: brown sugar, cinnamon, butter, bananas, egg, milk, vanilla extract, flour, baking powder + powder sugar. Full recipe below. We did our shopping at Giuntas!
Ingredients:
Cinnamon Topping:
* 5 tbsp brown sugar
* 1 tbsp cinnamon @giuntasmeatfarms
* 4 tbsp unsalted butter, melted
Banana Cake:
* 2 mashed bananas or puréed
* 4 tbsp brown butter, melted
* 1/3 cup brown sugar
* 1 egg
* 3/4 cup milk (we used whole, can use almond or buttermilk)
* 1 1/2 tsp vanilla extract
* 1 2/3 flour
* 1 1/2 tsp cinnamon
* 3 tsp baking powder
Icing:
* 1/2 cup powder sugar
* 2-3 tbsp milk or heavy cream
Directions:
1. Preheat oven to 350° F. Prepare a 8x8 baking dish with a square of parchment paper and grease dish with baking spray.
2. In a small bowl combine brown sugar, cinnamon and melted butter, stir and set aside.
3. Make brown butter by simply heating butter on stovetop on medium heat and stir constantly for 5 minutes till brown.
4. In a medium bowl combined mashed or puréed bananas, brown butter, and brown sugar and whisk together. Add egg, milk and extract and stir.
5. In a separate bowl add baking powder to flour and stir. Mix into wet ingredients and combine. Add batter to prepared baking dish and smooth out evenly.
6. Scoop out cinnamon topping on to cake and swirl into the top of the cake. Bake for 30-35 minutes. Ours baked exactly at 30 minutes.
7. Remove from oven and combine powder sugar and milk for icing. Once cooled pop out of baking dish and pour icing on top. Slice and enjoy.

Gingerbread Cupcakes:
* 1/2 cupolive oil @giuntasmeatfarms

* 1 cup molasses, uncultured
* 1/2 cup brown sugar
* 1/2 tsp baking soda
* 1/4 tsp baking powder
* 2 tsp cinnamon
* 2 tsp ground ginger
* I tsp nutmeg
* ½ tsp cloves
* 1/4 tsp salt
* 2. 1/3 cup flour
* 1 cup hot water
Gingerbread Cookie:
* 1 package of Gingerbread Cookie Mix
Maple Buttercream:
* 16 tbsp unsalted butter, softened
* 4 cups powder sugar
* 1 tsp cinnamon
* 2-3 tbsp maple syrup
* 1 tbsp heavy cream or milk
Sugared Cranberries:
* 1/2 cup water
* 3 cup cranberries
* 1 1/4 cup of sugar, separated
* Rosemary for decoration
Directions:
* Line 2 baking sheets with parchment. Line a 12 cup muffin pan with baking cups.
* Start by making your sugared cranberries. Pour water and a 1/2 cup of the sugar into a medium saucepan, stir and bring to a boil. Pour in cranberries and stir for 1 min. Remove cranberries from water with slotted spoon and place on one parchment paper cookie sheet. Let them dry while you make the cupcakes and cookie.
* Make cupcake by combining olive oil, egg, molasses and brown sugar. Whisk together. Combine all dry ingredients together in a bowl and pour into wet. Fold in with a spatula till almost combined. Pour in hot water and mix till smooth. Pour batter into lined cupcake pan and bake for 18-22 mins at 350° F.
* While baking cupcakes follow instructions on the gingerbread cookie package mix. I bake them once the cupcakes are out of the oven. This is a great shortcut.
* Make the frosting it takes 5 mins. By beating butter till smooth, add in remaining ingredients and continue to beat till combined.
* Cover your cranberries in rest of sugar. Frost cupcakes. Add gingerbread cookie, rosemary and sugared cranberries.

Molasses Cookie Crust:
* 2 cups Iced Molasses cookies or ginger snaps, crushed, separated
* 6 tbsp unsalted butter, melted
Gingerbread Cheesecake:
* 16 oz cream cheese, 2 blocks, softened
* 1 cup powder sugar
* 1 tsp cinnamon
* 1/2 tsp nutmeg
* 1/2 tsp ground ginger
* 1/2 tsp all spice
* 2 1/2 tbsp molasses
* 1 tbsp milk
* 1 1/2 cup heavy whipping cream
Whip cream layer
* 1/2 cup heavy whipping cream
* 1 tsp vanilla extract
* 1/2 tsp cinnamon
* 1/2 tsp nutmeg
Optional pipe with whip cream and gingerbread cookie in center
Directions:
* In a blender crush molasses or ginger snap cookies. Set aside 2 tbsp of cookie crumbs to sprinkle on your final cheesecake.
* Combine remaining crushed cookies and melted butter in a medium bowl and mix together. Pour crust in an 8” spring form pan and press down evenly on the bottom and up the sides. Put in fridge while making the filling.
* Make filling by beating the cream cheese in a stand in mixer with fitted paddle or using a handheld mixer till smooth. Approximately 2 minutes. Add in powder sugar and continue to beat. Add in all spices till combine. Add in molasses and milk. Once combine remove filling and put in clean medium bowl.
* Using the same bowl you made the filling add the 1 1/2 cup heavy whipping cream to bowl and whip together till soft peaks form. Fold into filling. Pour layer on top of crust.
* For whip cream layer take 1/2 cup heavy whipping cream, cinnamon, nutmeg and vanilla extract and whip together till soft peaks form. Spread thin layer over cream cheese filling layer. Let cheesecake set in fridge for 6-8 hrs.
* Once set take out and pipe with whip cream swirls, and sprinkle the crushed cookies on top. Place gingerbread cookie in center. Slice and enjoy.

Peanut-butter Frosting:
* 16 tbsp unsalted butter, softened

* 1 cup peanut butter, smooth
* 3 tbsp milk
Topping:
* 1/4 cup chocolate chips
* Chocolate bar, shaved
Instructions:
* Preheat oven to 325° F. Line 2, 9x9 square baking dish with parchment and grease with baking spray.
* In a bowl beat together butter for a few minutes till fluffy. Add in oil, sugars and vanilla extract. Beat in eggs. Stir in mashed bananas.
* In a separate bowl combine dry ingredients. Mix dry ingredients into banana mix and slowly combine while adding milk. Fold in chocolate chips. Pour half batter in each prepared pan. Bake for 30 minutes. Take out to cool for 20 minutes.
* Make frosting by beating butter, adding powder sugar, peanut butter and milk till smooth.
* Flip cakes out of pan. Frost top of first layer and add second layer on top and frost top of that layer.
* Topping: Melt chocolate in microwave for 45 seconds. Pipe on to cake and take a spoon and smooth it into the pb frosting. Add chocolate shavings and enjoy!

* 2 1/2 cup all purpose flour
* 2 1/2 tsp baking powder
* 1/2 tsp salt
* 1 3/4 cup granulated sugar
* 12 tbsp unsalted butter, room temp
* 3 eggs, room temp

* 1 cup buttermilk
* 1 cup mini chocolate chips
Cannoli filling:
* 32 oz. Whole Milk Ricotta, dried
* 3/4 cup powder sugar
* 1/4 tsp vanilla extract
* 1/2 cup mini chocolate chips
* 2 cannoli shells
Extra mini chocolate chips for topping of cake
Instructions:
* Preheat oven to 350° F. Line two 9” square cake pans with parchment paper and grease the sides.
* In a large bowl combine dry cake ingredients, excluding sugar. Set aside.
* In a medium bowl beat butter with an electric mixer. Add in sugar and beat for 5 minutes. Add eggs and vanilla extract and beat till combine. Alternating milk and flour add in a little at a time till it is combined and smooth. Fold in chocolate chips.
* Pour half of the cake batter in each pan. Smooth with spatula. Bake for 25-30 minutes. Let cakes cool for 5 minutes and pop on to cooling rack.
* While cake is continuing to cool make your cannoli filling by drying out the ricotta by patting it down with a paper towel to get out any wetness. Fold in powder sugar and vanilla extract till smooth. Now fold In chocolate chips till combine. Pipe two cannoli shells with some filling. Set aside.
* Cut sides of cake and frost one layer of the remaining cannoli filling on top of the cake. Put second layer of cake directly on top and frost top layer. Sprinkle chocolate chips and add cannolis to top for decoration!

Day 2 of No Bake Week for all my Chocolate-Oreo lovers.
Ingredients:
Oreo Crust
* 34 Oreos
* 1 stick unsalted butter, melted
Cream Cheese Filling:
* 2, 8 oz. cream-cheese
* 1/3 cup sugar
* 8oz cool whip
Pudding Filling:
* 2 small 3.9oz boxes of instant chocolate pudding
* 4 cups milks
Topping:
* 8oz cool whip to top, you could make homemade whip cream if you like with pint of heavy cream, 1/2 cup powder sugar and 1 tsp vanilla extract.
* Chocolate shavings or chocolate chips
Instructions:
1. Crush Oreos in a blender and add melted butter and combine. Press Oreo crust on the bottom of your dish! Make sure to use parchment paper if you plan to freeze it vs. refrigerate it. Set aside in fridge and make filling.
2. Beat cream cheese and sugar till smooth. Fold in cool whip. Layer on top of Oreo crust.
3. Make pudding and add layer on top of cream cheese layer. Put back in fridge for 15 minutes.
4. Add last layer of cool whip and and refrigerate for 4-6 hrs.
5. Take out and add chocolate shavings or chocolate chips to top and enjoy!

Holy Cannoli! No Bake Cannoli Cheesecake Bars are easy and perfect for any occasion!

What you will need…
Graham Cracker Crust:
* 1 1/2 cup crushed Graham crackers
* 1/4 cup @javamelts French Vanilla Sugar
* 1 stick unsalted butter, melted
Cannoli Filling:
* x2-8oz package cream cheese, softened
* 1 2/3 cup powder sugar
* 15 oz. whole milk ricotta or part skim
* 1 tsp Javamelts French Vanilla Sugar
* 1/8 tsp cinnamon
* 1 tsp orange zest
* 1/8 cup chopped pistachios
* 1/2 cup mini chocolate chips, we overfill
Optional:
* 3-6 Cannoli shells
* Additional mini chocolate chips for the top
Tools:
* 9x9 or 8x8 baking dish
* Parchment paper
Instructions:
1. Start by making your Graham cracker crust. Combine Graham cracker crumbs, sugar and melted butter.
2. Place parchment paper in a baking dish and firmly press down Graham cracker crumbs and set aside.
3. In a mixing bowl beat together cream cheese and powder sugar.
4. Add in ricotta, sugar, cinnamon, and mix.
5. Add in orange zest and combine.
6. Fold in pistachio and mini chocolate chips.
7. With a spatula scoop cannoli filling on top of Graham cracker crust and spread evenly. We leave about 1/2 cup of cannoli filling to fill in a few cannoli shells.
8. Sprinkle chocolate chips on top of bars and place in fridge for a minimum 4-6 hrs! We like to leave it overnight with tinfoil or plastic wrap on top.
9. Pull cheesecake bars out of dish using the parchment paper sides. With a warm knife, cut into square bars. Makes 6-9 depending how big you cut them!
10. Assemble by adding your cannolis on top of some of the bars. This is optional. You can eat as is without cannolis on top!

Oreo Crust:
* 2 cups crushed Oreos
* 6 tbsp unsalted butter, melted
Chocolate Cheesecake:
* 16 oz cream cheese, softened
* 1 cup powder sugar
* 1/4 cup cocoa powder
* 1 tsp vanilla extract
* 1 pint heavy whipping cream
* 3.5 oz dark chocolate bar, melted
Petit Pot layer:
* 2 jars of Dark Chocolate Petit Pot
Whip-cream:
* 1 cup heavy whipping cream
* 1/4 cup powder sugar
* 1 tsp vanilla extract
Garnish:
* Dusting of cocoa powder
Directions:
1. Combine crushed Oreos and melted butter in a bowl. In a lined 12 cup muffin pan press down Oreo crumbs in baking cups.
2. In a stand-in mixer beat cream cheese for two minutes till smooth. Add in powdered sugar, cocoa powder and vanilla extract and beat till smooth. Remove cream cheese mix and put it in a medium bowl.
3. Using the same stand in the mixer bowl, whip heavy cream till stiff peaks form. While beating heavy cream melt chocolate bar in the microwave. Pour cooled chocolate into whip cream and fold till combined.
4. Fold in chocolate whip cream into cream cheese mixture till smooth.
5. Scoop cream cheese filling on top of each Oreo crust baking cup. Put in the fridge for 4-6 hrs. to set.
6. Remove cheesecakes from the fridge. Pipe on the Petit Pot layer and top off with whip cream. Dust with cocoa powder and enjoy!

Holiday Nog Cinnamon Rolls These rolls are super soft and absolutely delicious! You can make them overnight or same day! Full recipe below. Dough:* 3/4 cup holiday nog or egg nog, warm* 4 tbsp unsalted butter, melted * 1, 4-oz package active dry yeast or instant yeast package (2 1/4 tsp)* 1/4 cup granulated sugar * 1 egg, room temp* 1 egg yolk, room temp* 2 3/4 to 3 cup all purpose flour* 1/2 tsp salt Filling:* 1/2 cup brown sugar * 1 tbsp cinnamon * 5 tbsp unsalted butter, softenedFrosting: * 8 tbsp stick butter, softened* 3 cups powder sugar* 1/2 tsp cinnamon* 1/4 tsp nutmeg* 3 tbsp Holiday nogDirections: * Warm holiday nog to 110° F. Melt butter. Pour nog and melted butter into a large measuring cup or mixing bowl. Pour yeast in and let it sit for 10 min till it activates. If using instant yeast no need for activation. Add sugar and eggs. Mix together with a whisk attachment.* Slowly add flour + salt, whisk together till combine. Don’t over mix. Once combine put on a dough hook attachment and on medium speed knead for 8-10 min. * Remove dough and knead into a ball for 1 minute. Put into an oil bowl and cover with plastic wrap and a towel. Let dough sit in a warm place for 90 minute up until one hour and 45 minutes. Till dough is double in size. * Punch down dough. Roll dough out into a rectangular shape. Spread softened butter on the dough, leaving a 1/2 inch rim. Sprinkle brown sugar cinnamon mixture on top. Roll dough into a log. Slice rolls using twine or a knife. Will make 9 rolls.* Put rolls in a greased 9x9 baking dish and let them rise for another 30-45 min.* Bake rolls at 350° F for 20 min. Tops will be golden brown.* Make frosting while rolls are baking by beating together butter, powder sugar, spices and holiday nog till smooth.* Take rolls out of oven and frost rolls while warm. The Best Pecan Pie Bars Pecan Pie Bars are my favorite to make! The cinnamon shortbread crust is delicious and a nice pairing with the pecan pie filling. Optional but you can top it off with ice-cream or whip cream if desired! Ingredients Cinnamon Shortbread Crust: * 2 sticks unsalted butter, softened (1 cup) * 3/4 cup light brown sugar * 2 1/2 cup flour * 1 tbsp cinnamon * 1 tsp salt Pecan Pie Filling: * 1 stick unsalted butte (1/2 cup) * 1 cup light brown sugar * 1/3 cup honey * 3 tbsp heavy cream * 1 tsp vanilla* 2 1/4 cup chopped pecans Optional Topping: whip cream or vanilla ice-creamDirections * Preheat oven to 350 degrees F. * In a large mixing bowl cream together butter and brown sugar. Add in flour, cinnamon and salt and beat till it's a crumble texture. In a 9x9 baking dish lined with parchment paper press down shortbread crust evenly and bake for 15 minutes. When crust is done baking remove and set aside. * While shortbread crust is baking make pecan pie filling. Melt butter in a medium saucepan or skillet, add in brown sugar, honey, heavy cream, and vanilla extract. Stir for a couple minutes on medium heat and add in the chopped pecans. Stir for another minute and pour pecan pie filling over baked crust. Put back in oven for another 15-20 minutes to finish off. * Remove and let cool.
