Deep Fried Prime Rib

I’ve learned that there are multiple benefits to smoking something before deep frying. Obviously there is the flavor element, providing smokiness that an otherwise non-smoked & deep fried piece of meat wouldn’t have. But possibly the greatest benefit is the affect on the crust.

We know that dry brining (salting hours prior to cooking) dries out the exterior leading to a significantly better crust. But what I’ve found is that smoking for a couple hours first, can compound this affect. The smoking step significantly dried the exterior of this prime rib and the turkey I did last month, and in both cases, the crust was absolutely perfect.

Also I tried two processes when it came to prime rib. In one case I smoked it to 100F internal then deep fried until it reached 115F internal. There was a huge grey band this way.

The far better option was to smoke it all the way to 123F, let it rest a full hour, then quickly deep fry for about 8 minutes right before carving. This was significantly better.

The last thing to keep in mind is to always be careful when deep frying large cuts like this. Always follow the deep fryer directions closely and make sure the flame is off when you add it in!

Crispy Chicharron Beef Wellington 🐖🥩

After a few failed attempts with this recipe, I almost gave up.

But I gave it one more shot and I discovered the easiest and best method to pull this off. Big thanks to and their Sync Thermometer. They engineered 6 sensors into their thermometer and it’s all Bluetooth or Wi-Fi. It made perfecting this cook much easier.

👉 You know where to find the full recipe but here’s the crispy skin method:

🔹With a skin on pork belly, remove the skin. Slicing away as much fat as possible without puncturing the skin.

🔹 In a vacuum sealed bag, place in a sous vide at 140°F for 24 hours. Remove from the bag and scrape off any remaining fat.

🔹 Using a lattice cutter, press hard and cut a pattern in the softened skin. It won’t puncture all the way through, but it will create guidelines for you to finish the pattern with a knife.

🔹 Salt the skin and place in your fridge uncovered while you assemble your beef Wellington.

🔹When your Wellington is assembled, wash off the salt and dry your skin with paper towel. To make the skin less stiff from the cold fridge, heat it up a bit fat side down in a pan.

🔹Drape over your Wellington and use tooth picks to keep the skin secure on the edges.

🔹Bake in the oven at 425°F until the beef tenderloin is 115°-120°F. Let it rest for 10-20 minutes.

🔹While it rests, heat up 2 quarts of oil to 480°F

🔹Over a deep, heat safe tray (aluminum, glass, metal) pour the hot oil over the skin slowly. It will begin to puff up and get crispy. Even when the skin is bubbled, go over it a few times with the oil to ensure it’s crispy all the way through.

🔹Let it rest for 5 minutes. And enjoy!
