Christmas party wine

Today, I'll introduce Vin Chaud which is a good drink for Christmas party.^^

First of all, Vin Chaud is known as 'warm wine' that is boiled with a variety of spices and fruits,

All around Europe, people drink it to prevent a cold
and it always appears at winter markets and festivals.^^

I'm introducing a simple way to make it deliciously to you guys
because I thought that if you have it at your end of the year party,
it would be a nice and warm party.^^

(This Vin Chaud is much more tasty and cost-efficient
so if you enjoy home party or home cafe, try it out,)

🍓 Ingredients :

Vin Chaud Kit : lemon, orange, grapefruit, pineapple, pear, tangerine, cinnamon stick, clove, star anise, rosemary, rose, etc..
1 bottle of wine 750ml
sugar, honey ( as much as you like )

Cream Cheese Frosting : cream cheese 200g, butter 100g, whipped cream 80g, sugar 60g
( prepare cream cheese and butter that are a little squishy and soft)
biscuits for canape and some fruits

Today, as the second episode of "Levain cookie", the best cookie in New York!
I'm introducing the dark chocolate chip cookie recipe.^^

🍪 Ingredients ( For 1 cookie, 170g / 5~6 pieces )

All-purpose flour 200g (1.5 cup)
Cake flour 100g (1 cup)
Powdered cacao 50g (1/2 cup)
1 teaspoon of cornstarch (3g)
3/4 teaspoon of baking soda (2.5g)
1 teaspoon of baking powder (4g)
Half a teaspoon of salt (2g)

Cold butter 200g (1 cup)
Brown sugar 130g (3/4 cup)
White sugar 70g (1/2 cup)
2 eggs
Chocolate 300g (Hershey dark 150g + Dark couverture chocolate 72% 150g)

🍓 How to make it

1. Sift flour, cacao powder, starch, baking soda/powder, and salt to make them soft
- It gets even softer if you sift twice.

2. Cut the cold butter into a small cube shape.

3. Let the egg out and stir it 30 minutes in advance.
- You need to use a warm egg when making the cream so that it doesn't get separated

4. Chop the Hershey dark into small pieces and scale it with the Dark couverture
- Put 50g less if you use Hershey milk chocolate

5. In a big enough bowl, whip slowly until the butter and sugar cuddle up together, and whip with a fast speed for 4 more minutes..

6. Add eggs in 3 separate steps, and whip fast so that they don't separate.
- For about 2~3 minutes, until the tone goes up by 1

7. Add the powders that were sieved, and mix it lightly until you still see 20% of unmixed powders

8. Mix it with the chocolate
- Mix it lightly so that they don't overly mix.

9. Settle the dough in the refrigerator for 2-3 hours...

10. 170g of dough per cookie. Place it on the pan after rolling it into a ball.
- Give enough space between the cookies ..

11. Settle the panned cookies for 30 more minutes in the fridge. (Optional)

12. Heat up the oven to 200℃ (392℉) and bake it at 180℃ (356℉) for 10 minutes. Then it's done

13. You can have the cookies after resting it for 15 minutes while it's still warm or you can enjoy it after completely cooling it down ^^

Hello everyone^^

Today, I'd like to show you how to make all-purpose seasoned soy sauce
and related recipes.

Please read the description box and watch the video for more info ^^

🌻 1 cup = 200ml / 1 tbsp = 15ml / 1tsp = 5ml ( 계량스푼과 계량컵 기준 )

1. How to make seasoned soy sauce

* ingredients

1 leek
1/2 onion
1/6 daikon
1/3 ginger ( about 15g )
Anchovies for stock ( remove the head and the intestines and lightly toast on a frying pan)
Kelp that's about the size of a palm ( about 5g / rinse before use )
handful of DRIED BONITO SHAVING

5 cups of water
2 cups of Brewed Soy Sauce
1/2 cup of rice wine ( no soju or wine / must use rice wine or chungha )
1/3 cup of mirin
4 tbsp of allulose
- Use sugar or oligosaccharide instead of allulose ( use 1 tbsp less when using sugar )
1 tbsp of lemon juice ( raw lemon )

* How to make

1. Grill the daikon and leek.
- It will enhance the sweetness and the savory flavor even more.

2. Remove the head and the intestine of anchovies and lightly toast on a frying pan without oil.
- Removes bitterness and the fishy smell. Enhances savory flavor.

3. Put the grilled vegetables, anchovies, and ginger in a pot of water.

4. When it starts to boil, open the lid and boil for another 5 minutes.

5. Add the soy sauce, rice wine, mirin, and allulose. Boil for another 20 minutes on a medium heat.

6. Add the kelp and boil for 10 minutes. ( keep the heat medium low )

7. Remove the kelp and turn off the heat.
- If you leave the kelp too long, it will turn bitter. So only leave it for 10 minutes.

8. Lastly, add one handful of dried bonito shavings. Leave it for 10 minutes. Strain and cool completely.
- If you leave the dried bonito shavings for too long or overcook, it will ruin the taste and the aroma.

8. Transfer it to a sterilized glass jar and put it in the fridge to store. ( 3 months )

2. Udon

*Ingredients

Water
Seasoned soy sauce
Salt
Beef or anchovies or powdered seasoning
Udon noodles
Toppings ( leek, fried tofu, seasoned seaweed, crown daisy, udon soup powder, little bit of pepper flakes )

- Water 4 : Seasoned soy sauce 1 ratio ( Adjust the broth seasoning according to your taste )

3. fried rice with egg

* ingredients

leek
eggs
rice
seasoned soy sauce
salt
cooking oil
sesame seed oil, sesame seed, hot pepper (optional)

4. tempura over rice ( tendon )

*ingredients

warm rice
mushroom, tofu, or seafood.. ( whatever you like )
flour for deep frying ( or regular flour + water + salt )
- use cold water to adjust the viscosity .
cooking oil
seasoned soy sauce
mayonnaise
hot pepper ( optional )

- do not rinse the mushroom. wipe off the dirty part.

5. soy sauce tteokbokki

ricecakes

onion
carrot
leek
oligosaccharide ( sugar )
seasoned soy sauce
water
sesame seed
sesame oil ( optional )
cooking oil

Today I prepared the recipes for Button Mushroom Soup and Potato Croquette that are good for kids snack and a simple meal. (There's also a recipe for potato soup^^)

For more details, please refer to the explanation below and the video^^

1. Button Mushroom Soup (For 2 people)

- Ingredient :

Button Mushroom 100g (5~6EA)
Onion 50g (1/4EA)
Garlic 10g (1.5EA)
Potato 75g (1/2EA)
Water 150ml
Milk 200ml
Fresh cream 150ml
Veggie seasoning or Chicken stock 1/2 teaspoon (you can use oligosaccharide 1/2 tablespoon instead)
Salt (adjust the salt content to your liking)
Pepper
Olive oil & butter (you can use either one)
Parsley
Crouton (bread, butter, a bit of crushed garlic)

2. Potato Soup

- Ingredient :

Potato
Onion
White part of green onion
Garlic
Water
Milk
Fresh cream
Veggie seasoning or Chicken stock 1/2 teaspoon (can use oligosaccharide instead)
Olive oil & butter
Salt
Pepper
Parsley

3. Potato Croquette

- Ingredient (For 2~3 people)

4 potatoes
1/2 onion
1/4 carrot
Flour 1/2 cup
Bread crumbs 2 cup (bread)
2 eggs
A bit of butter
Mayonnaise 3.5 tablespoon
Salt
Sugar
Pepper
Parsley
Cooking oil
Ketchup or pork cutlet sauce

Introducing the recipe for softest and the most delicious Castella cake.

🍰 Ingredients

80g of cake flour
20g of bread flour
30g of milk
105g of sugar
10g of honey or oligosaccharide
4 eggs ( both white/yolk )
25g of butter ( anchor butter )
25g of vegetable oil ( canola oil )
1/4tsp of salt (2g)
1/2tsp of vanilla extract (3g)
1/2tsp of Chungha rice wine (soju or refined rice wine) (3g)
A bit of squeezed lemon ( optional )

* 60g~65g of extra-large sized eggs were used.
* Based on UNOX Shop Pro standards
- Preheating at 180℃ / 15min at 160℃ / 50min at 150℃ / 20min at 140℃ ( pan speed level 1 )
* Adjust the temperature and time according to the specification of your oven.

🍎 Ingredients (For 2 servings)

Beef 250g
1/2 onion
1/2 green onion(only the white part)
1/4 carrot(medium-sized)
1T minced garlic(4~5 cloves)
1/3T minced ginger
2.5T brewed soy sauce
1/2 sesame oil
Pepper
Cooking oil

*Marinating sauce ingredients

1/2T sauce
1T oligosaccharide or honey
1/4 onion
1/5 pear
1T rice wine

- With the grated pear and onion, only use the filtered juice for a better flavor.
- Marinating the meat first produces more tender and flavorful meat.
- Only use a little bit of carrot, just enough to give color to the dish.

🍏 Kale Juice

Kale 8~10 leaves
1 apple
1 banana
1 bottle Yakult 65ml (Can leave out)
200~250ml water

🍎 ABC Juice

Apple
Beet
Carrot
( Apple 1 : Carrot 1 : Beet 1/3 ratio)
Green plum syrup (Can leave out)
Water (Adjust to taste)

🥛 Oat Milk

1 cup oatmeal
3 1/2 cups water
Agave syrup (Can substitute for honey, sugar, etc)
Pinch of salt

- Cool the toasted oatmeal completely.
- Use cold water.
- Blend on high for only 1:30 ~ 2 minutes.
- Pour in a milk nut bag, and don't squeeze too hard! (Only extract 80%)

( The oat milk has to be kept cold, and you have to extract the least amount of starch possible, for the milk to not get sticky.)
