Host Bryan Mayer got talking to Michael Lapi, Instructor of Culinary Arts and Meat Processing at SUNY Cobleskill

His current position allows him a platform for the continuance of his mantra through Farm to Table and Whole Animal Butchery classes.

He is also deeply involved with the Chef's Consortium, a group of like-minded individuals who promote the use of local diversity and sustainable farming methods through an educational and fundraising platform. Michael is driven to share what he has gained!
