2020 was... different. For the hospitality industry, it meant tackling curve ball after curve ball with grace and enthusiasm - shifting table arrangements and adapting business models to stay afloat. Sadly many restaurants broke our hearts by closing for good.

But... a few dared to debut on the theatre of hospitality during this uncanny year, their bravery and ebullience allowing us once again to sink into a whimsical dream of celebration, for no other reason than the fact - life should know it. Among these is , ‘s tribute to the food and nightlife culture of NOLA, Paris and NYC.

Thank you for making it sparkle through the dark. In a perfect world, we’d be ringing in the new year with you. In its absence, we’ll patiently wait for good things to come. 🌟

If there is one thing all Nigerians unify behind, it is suya. Originating from Northern Nigeria (and probably other parts of West Africa), suya is Nigeria’s beloved street food - beef grilled over open fire, seasoned with a signature spice blend. Children light up when these newspaper-wrapped parcels are brought home. Teenagers wait patiently for the skewers, requesting what cut of meat they want with precision. As do adults. Drivers, aunts, sisters, husbands, fathers - no one is above a suya pick up.

I have no doubt that in Kano, Kaduna and Adamawa, suya tastes magical. In Lagos, Glover Court Suya is where to go for this Nigerian sensation.

I created Dynein at the height of lockdown to celebrate exceptional restaurants around the world, but more importantly to help revive the global hospitality industry through the COVID19 pandemic at a time when dining out was impossible.

Dynein applauds and fully embraces the UK government’s Eat Out to Help Out scheme, through which diners can receive up to 50% off food orders at participating restaurants on select days (mostly Mondays, Wednesdays and Fridays) until the end of August.

Below is a list of some incredible London restaurants worth discovering or revisiting for their summer menus and/or classics.

A tip? Walk everywhere. Eat. Walk in the beautiful sunshine. Eat again. And repeat.

Alongside its renowned theatre arena, Terra Kulture hosts a Nigerian restaurant where local delicacies like jollof rice, ofada rice, and assorted stews are served to the delight of Lagosians. Pictured is efo riro, a traditional Yoruba spinach stew (generally eaten with rice or eba) which you are likely to come across at Terra Kulture. In 1992 at age 18, moved to Berlin. The wall had fallen and opportunity beckoned. Thus began the journey of Cookie as a pioneer in Berlin nightlife and culinary culture. In 2007, Cookies Cream was created as a pre nightclub restaurant with incredible food that happened to be strictly vegetarian. It was awarded a Michelin star in 2017. Consistently inventive, Stephan Hentschel leads this institution demonstrating that vegetables, spices, and the playfulness of food need not come at the expense of flavour.

Although its origin is disputed, okra is one of the few vegetables known to have been cultivated for centuries in and remains part of the continent’s staple diet - particularly in West Africa.

During and after the slave trade, okra became a key part of the African American diet, particularly in the South, where it features prominently in many stews and soups. It’s a key ingredient in gumbo, a popular stew that could be called Louisiana’s signature heritage dish.

Origin Story

Once upon a 2020, the world was ambushed with many vices. Frightened people were forced to stay home, children were pulled out of school and good human beings fought over toilet paper. The world stood still.

Many industries were gut-punched by this moratorium on existence, none more intimately and swiftly than the hospitality sector. The global culinary theatre was forced into an indefinite hiatus, and as we became deprived of our daily bread, they did too.

Dynein was born out of the need to maintain closeness between restaurants and the community of food and travel lovers they were and in many cases are still temporarily estranged from. As an affirmation of life, I began to replicate the dishes I love most of my favourite global restaurants, allowing me to travel through the experience. I created a cooking class with friends across continents. Finally, I decided to invite the world into the experience through Dynein.

As cook, communicator, curator and creative director, Dynein is my expression of vitality, one human being’s defiance of the end. It’s an ode to nature and travel. A love letter to the culinary world.
