ZEBRA CAKE
Ingredients
4 eggs
1 cup sugar
1 cup vegetable oil
1 cup milk
1 tsp vanilla extract
2 cups flour
2 tsp baking powder
1/4 tsp salt
For the chocolate batter
3 tbsp cocoa powder
1/4 cup milk
1 tbsp sugar (optional)
Procedure
1. Grease or line your baking pan with parchment paper, 8" round cake pan. Preheat oven at 180 (350 F).
2. Sift together in a large bowl the dry ingredients, flour salt and baking powder. Set aside.
3. In another bowl mix the cocoa powder with 1/4 cup milk and 1 tbsp of sugar.
4. Mix vegetable oil with sugar until creamy. Add eggs and mix until well incorporated. Add vanilla extract.
With the mixer on low, alternate adding gradually milk and flour mixture until all is well incorporated.
5. Remove two cups of the batter and mix them with the chocolate mixture.
Use one tablespoon for each batter to create the layers of batter on the prepared pan. Begin from the middle of the pan, take one spoon of white batter then over it add a spoon of chocolate batter and repeat this steps until all batter has been used.
Once you're done with the steps, put the pan in the oven and bake for 45 minutes to 1 hour depending on your oven.
Your Zebra cake is ready.

𝘾𝙝𝙤𝙘𝙤𝙡𝙖𝙩𝙚 𝘾𝙝𝙞𝙥 𝙈𝙪𝙛𝙛𝙞𝙣𝙨
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
• ½ cup butter softened
• 1 cup granulated sugar
• 2 large eggs
• 2 teaspoons baking powder
• ½ teaspoon salt
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• ½ cup milk
• 1 cup semi-sweet chocolate chips
𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨
1. Line a muffin tin with paper liners. Lightly grease paper liners with nonstick cooking spray.
2. In a large mixing bowl, use a hand mixer to cream together butter and sugar, about two minutes.
3. Beat in eggs until combined. Add in the baking powder, salt, and vanilla and mix briefly.
4. Add in half of the flour, mix with a hand mixer until just combined, then add in the milk, stirring to combine.
5. Scrape the bottom and sides of the bowl and add in the remaining flour until just combined.
6. Add the chocolate chips to the batter and use a rubber spatula to gently fold them in.
7. Divide the batter up amongst the 12 muffins. Preheat oven to 425 degrees. Let the batter rest while the oven preheats.
8. Bake in the preheated oven for 20 to 25 minutes, until a toothpick inserted into the center, comes out clean.
9. Reduce the heat in the oven to 350 degrees after 7 minutes. Watch the muffins closely as cooking times may vary depending on your oven.
10. Let muffins cool for 5 minutes in the pan before removing them and transferring to a wire rack to cool completely.

A sweet treat to make for your Valentine! 😍
In just five minutes, you can make this decadent, creamy, chocolatey dessert that will satisfy any chocolate craving without any nasty refined sugar or additives! I like to top mine with strawberries and cacao nibs, but you can use either or neither… whatever you prefer.

best food's 5-Minute Creamy Chocolate Mousse
(Serves: 4)
Ingredients:
2 cups coconut cream or 2 cups fresh coconut meat
¼ cup almond milk (alternative: coconut water )
¼ - ½ cup cacao powder, depending on how chocolatey you prefer
¼ cup pure maple syrup, more as desired
1 teaspoon vanilla extract
pinch sea salt
Optional toppings:
fresh berries
cacao nibs
coconut flakes
Instructions:
1. Place all of the ingredients in a blender along with a handful of ice cubes and blend on high until smooth and creamy.
2. Top with fresh berries or cacao nibs. Enjoy!

On the menu today: a delicious meatless meal of Greek baked orzo with chickpeas, and roasted broccoli and yellow squash. Outrageously good! And so pretty on the plate 🤩!
The orzo dish was based on this recipe
Sauté a chopped onion in olive oil, add some minced garlic, a pinch of red pepper flakes, 2 tsp dried oregano, a chopped red bell pepper, two cups of shredded kale. Cook until the kale is wilted, then add 3 tbsp tomato paste, 1 14 oz can fire roasted tomatoes, 8 oz whole wheat orzo, 1 14 oz can chickpeas drained and rinsed, 2-1/2 cups vegetable broth, salt and pepper to taste. Stir, bring to a boil, then finish cooking in a 400F oven for 15 minutes (uncovered). Garnish with crumbled feta and fresh dill. Easy and all made in one pot!
Vegetables were just tossed in olive oil and roasted at 400F for 20 minutes.
Since my husband hates chickpeas 🤦‍♀️, I actually split the dish in half before adding the chickpeas, and added canned tuna to his dish instead. He was a happy camper and loved the meal!

Had too much Valentine’s Day candy? Could your body use a little detox? This salad does the trick!
best food's Lentil Detox Salad
(Serves: 2-4)
Ingredients:
Dressing:
1 tbsp of olive oil
¼ tsp sea salt
fresh ground black pepper (to taste)
2 tsp of curry powder (or more if you like it spicy)
2 tsp of honey
juice of one lime
Salad:
2 red peppers diced
8 ounces of sprouted lentils cooked
1 bunch of cilantro chopped (about 3-4 cups)
2 tbsp of raisins or dried currants
1 avocado diced
Instructions:
1. Mix together dressing in a large bowl, add together the other ingredients (except avocado) and mix well.
2. Serve immediately or store in fridge up to 3 days.
3. Top with avocado before serving.
