Tortang Talong also known as Filipino Eggplant Omelet is a classic Filipino eggplant recipe that is very easy to make. The rest of the world has its take on cooking eggplant, but for Filipinos, nothing beats a good old Tortang Talong. This recipe is even more perfect when paired with Sinangag or Garlic Fried Rice.

This classic Filipino recipe is very simple and easy to make. For the main ingredients for Tortang Talong, you only need eggplants, eggs, onion, and garlic. The purist and fan of true " cremaet" likes the typical tricolor , the truly well prepared one, and does not want it mixed.

They say that the perfection of the " cremaet" is this, the tricolor :

- 1st top layer: Brown from the coffee cream .

- 2nd central layer: Black from intense coffee.

Paella valenciana is the traditional paella of the Valencia region, believed to be the original recipe,and consists of round-grain rice, bajoqueta and tavella (varieties of green beans), pear tomato, rabbit, chicken, sometimes duck, and garrofó (a variety of lima or butter bean), cooked in olive oil and chicken broth. The dish is sometimes seasoned with whole rosemary branches. Traditionally, the yellow color comes from saffron, but turmeric and Calendula can be used as substitutes. Artichoke hearts and stems may be used as seasonal ingredients. Most paella cooks use bomba rice, but a cultivar known as senia is also used in the Valencia region.

Sinalau Bakas is one of Sabah's most popular native dishes, an iconic food of Kadazandusun people, the largest ethnic group in North Borneo. 'Sinalau' which means 'Smoked' and 'Bakas' which means 'wild boar' is sold mostly from roadside stalls and 'Tamu' markets in west coast and interior districts such as Kota Belud, Ranau, Tambunan, Keningau and Telupid.

The most famous stretch of Sinalau Bakas stalls near KK is found along the highway stretch from Tamparuli to Kundasang in direction of Mount Kinabalu.

Who said u need to be rich to have the best of the best? : Michelin Bibs and Michelin recommended hawkers in Khon Kaen Thailand 🇹🇭- I was blown away at its taste and the price … these are the 5 that I had:

1. Pho Tha Bo
2. Pransit Phocana
3. Baam Heng
4. Leng Yentafo
5. See Na Nuan

Another Sandakan must eat place: century egg dumplings 🥟

Sim Sim Village is pretty well known among the locals and tourists alike. It’s a place where you can pick your favorite seafood like fish, and prawns, and then, pass it to the chef to fire them up. In the morning, there are a couple of restaurants that sell noodles and one of them is at Sim Sim No.84 – it sells very good century egg dumplings that are filled generously with meat and prawns. Pair them either with a bowl of curry noodles or a dry version. Seafood freshness is unbelievable - and the authentic oddness of the dumplings is appealing

The gem in the city’s line-up of culinary offerings is a confectionary known as UFO tarts, a name it earned because of its likeness to a flying saucer.

This addictive treat consists of a round base of buttery, eggy sponge cake with crisp, tapered edges that’s topped with a smooth, delicately sweet custard and crowned with swirls of fluffy, torched meringue.

But unlike many good eats in Sandakan that can be traced back to the influx of migrants from Hong Kong during British colonial times, the UFO tart is an accidental creation.

In 1955, Fu Ah On, a Hainanese baker in Sandakan, was going about his daily task of baking tarts when he stepped out of the kitchen to mingle.

Fu lost track of time and when he returned, the tarts were scorched. That didn’t stop him from serving up these overbaked goods and, much to his surprise, they were a hit.

Its appearance, complete with a coiled tip, first earned it a rather unsavoury nickname in Cantonese - ngau si dui or cow dung pile.

The name stuck for decades, before younger generations, proud of this local creation, started using the more appetising moniker of UFO tart.

For decades, people would brave long queues in the morning to buy these delectable tarts, which were then packed in old cigarette cartons.

Unfortunately, Fu passed away without handing down the original recipe to anyone, but the love for this unique tart never faded.

After his death, many who had savoured this cult dessert as children continued to recreate its flavours using the basic ingredients of flour, butter, eggs and castor sugar.

Today, the UFO tart remains just as popular and can be found beyond Sandakan’s shores in big cities like Kota Kinabalu, Kuala Lumpur and Singapore.

This creation is so iconic that 5 May has been declared UFO Tart Day in Sandakan, a homage to the accidental sweet treat crafted in a small kitchen more than 60 years ago.

Probably one of the most interesting noodle shops in Sandakan. They serve a mean portion of Wan Tan Noodles with fish paste, which is out-of-this-world! Well known for their "Fish Noodles", meaning oodles made out of fish paste. My first time here, and the experience was awesome. I found it ag*in here. Next time I visit Sandakan, I'm coming back for another round. Apparently, this place gets super crowded on weekends, where you need to line up. Therefore, best to come on weekdays or come early.

Luosifen (Chinese: 螺螄粉; pinyin: luósīfěn; lit. 'Snail rice noodle') is a Chinese noodle soup and specialty of Liuzhou, Guangxi. The dish consists of rice noodles boiled and served in a soup. The stock that forms the soup is made by stewing river snails and pork bones for several hours with black cardamom, fennel seed, dried tangerine peel, cassia bark, cloves, white pepper, bay leaf, licorice root, sand ginger, and star anise. It usually does not contain snail meat, but it is instead served with pickled bamboo shoot, pickled green beans, shredded wood ear, fu zhu, fresh green vegetables, peanuts, and chili oil added to the soup.

My weekend project today:

Hinava Tuna: A traditional Sabahan cuisine, originated from the Kadazan Dusun tribes. This dish consists of raw fish marinated with lime juice, which is mixed together with a variety of seasoning such as salt, red chilli, slice shallot and ginger. Think of it like eating sushi - but savoury !

This can best be described as a fish salad like ceviche or yee sang. Thin slices of fish, most often tenggiri or mackerel, are tossed in a variation or mixture of the following: chilli, ginger, shallots, bitter gourd, and most importantly, lime dressing.

The acidity in the lime “cooks the fish” and turns the flesh a beautiful milky white colour.

“Mayak Gyeran” (마약계란), which is the Korean name of this dish, translates to “drug eggs” to signify the incredibly delicious and addictive taste of these eggs, as its alluring flavor is guaranteed to have you craving for more.

Soy marinated eggs have always been my weakness. This recipe in particular is hands down one of my favorite banchan (Korean side dish) to make as it is suitable for any time of the day.

The beauty of these Korean marinated eggs lie in their versatility, as it can be used as an excellent garnish to heighten the flavors of any dish that you prefer. They also make for an incredible substitute for ramen eggs which contain similar flavor notes.

- The oldest live geoduck on record was 168 years.
- Geoduck’s value is so high, there is proof of gangsters trading them for narcotics.
- During the first year of life, the clams are smaller than a dime.

Needless to say, raw herring is an acquired taste and this silvery, slimy snack is definitely not for everyone. Nevertheless, it holds a special place in many Dutch people’s hearts and has been a staple dish of the Netherlands since the Middle Ages. This infamous fish can be bought throughout the country and in summer time herring season comes into full swing, with countless low-landers chowing down on this peculiarly Dutch delicacy.
