We eat a lot of oats in my family. A few years ago I learned that they are one of many crops that are often sprayed with the herbicide glyphosate. I have just started giving oats to Elio so I have become even more concerned with the negative impacts of glyphosate.

Scientific evidence has linked glyphosate with cancer and has been labeled as a probable carcinogenic by The World Health Organization. Glyphosate, also known as RoundUp, is a major endocrine disruptor and poses serious risks to our health.  

High exposure people are especially vulnerable such as farmer workers; these groups have been proven to have a 41% increased risk in cancer from their exposure according to the EWG.  

When sourcing oats it is essential you look out for organically grown and glyphosate free labeling for the health of yourself, your families, the workers involved and this planet. Keep an eye out for the certification: BioChecked NON Glyphosate Certified ™.

I had a batch of vegetable broth I made from vegetable scraps I had been saving in the freezer throughout the week. I used it as the base for this colourful soup! You can find the broth recipe in my book, Go Gently. This is a great way to repurpose foods that would have otherwise been wasted. 🌀

Ingredients
3 cups of beans, choose your favourite! I used butter beans and pinto beans.
1 bunch of rainbow chard or any greens you have
4 cups of homemade vegetable broth
3-4 cloves of garlic
1 lemon
2 tbsp olive oil
Handful of fresh parsley
2 tsp dried Herbs
½ tsp red pepper flakes
Salt and pepper to taste

Instructions:
In a large pot add your olive oil and minced garlic, cook until fragrant. Next, add chopped rainbow chard and saute. Pour in the vegetable broth and add your cooked beans. Add the juice of 1 lemon and your seasonings. Bring to a heavy simmer and allow to cook for around 15 minutes. Turn off the heat and add chopped parsley or any fresh herbs. Enjoy!

I’ve been washing lots of baby bottles and pump parts! Which has made me think more about water usage in the kitchen. 🫧🍼💦

Here are some tips that have helped me be more mindful:

🚰Fill a bowl with water to wash dishes rather than letting the faucet run, use this same idea when washing fruits and vegetables
💧Use leftover water in cups or from cooking pasta to water your plants
☕️Tea that goes cold can also be used to water your plants instead of putting it down the drain
🌀Only run your dishwasher when it’s full
🔧Check your faucet is not dripping and that you don’t have any leaks

The Farm Bill governs much of the US food and agriculture system. Including the areas of nutrition, crop insurance, conservation, rural investment, land access and more. The bill greatly impacts the livelihoods of farmers, the environmental impacts of farming, food access for all, and the issue of national food security.

It is imperative that our Farm Bill supports regenerative agriculture to protect the lands, rebuilds soil health, brings nutrients back to our food system, and protects farming communities.

How do you see local climate issues in your area intersect with social justice issues?

For me something that really stands out in LA is the lack of public transportation that creates unfair abilities for people to access recreational activities. We know public transport drastically lowers emissions and the lack of it is perpetuating a problem of limited access for lower income communities. 🚌🚆

As the time of year comes around that we find ourselves more susceptible to illness, nature provides us with exactly what we need to protect ourselves! Citrus season is a great example of nature’s perfect timing. I was lucky enough to be gifted this big bowl of lemons from my friend’s farm This recipe is gluten and dairy free. Enjoy! 🍋

Ingredients:
4 large eggs or flax eggs
½ cup sugar
2 teaspoons lemon zest, or whatever citrus you have
¼ cup fresh citrus juice
¼ cup olive oil
1 ½ cup almond flour
1 tsp flax meal
¼ tsp sea salt
2 tbsp raw honey or maple syrup
2 tbsp citrus juice
Lemon for garnish

Instructions:
Preheat the oven to 350F. Grease an 8” cake pan, you could use butter, olive oil, or coconut oil. In a mixing bowl, mix your eggs and sugar together. Next, add in your citrus juice, zest, and olive oil. Add in the rest of your dry ingredients and stir. Bake the cake for 30 minutes or until it has a golden top. Place your honey and citrus juice in a saucepan over low heat until it becomes a syrup. Once the cake is out of the oven, drizzle this mix over the cake and garnish with citrus slices. 🍰🍋

Putting the finishing touches on my homemade Christmas gifts. This year I made baking mixes using my favourite flours and ground seeds with baking soda. Butternut Squash and Caramelized Shallot Galette 🧡

This dish is perfect for sharing with friends at holiday gatherings! It's versatile as you can make this with literally any vegetable or make it sweet by opting for fruit. For this recipe, I used red whole wheat which is a variety of wheat grown in the winter months. 🌾

Instructions:
In a mixing bowl mix together your flour and salt, then add cubed cold butter. Mix with your hands until you get a fine crumble. Then add 1 tbsp of ice cold water. If the dough already comes together with just 1 tbsp then it's good, if not add more water. You want the mixture to be moist, not wet. Set aside in the fridge for at least 1 hour.

Heat your oven to 375. Mix your thinly sliced squash with thyme, salt, pepper, and olive oil. Bake for 15-20 minutes. In a pan add your shallots and butter, along with a pinch of salt. Cook on low heat until caramelized, this takes about 20 minutes.

On a floured surface, roll the dough out into a 12-inch round. Transfer to an ungreased baking sheet and assemble your galette. Fold the border over the squash and shallot mixture. Bake at 400F for 30 to 40 minutes or until golden brown. Delicious!

Ingredients:
For the pastry
1 tsp salt
1 ½ sticks cold unsalted butter, cut into cubes
1 ¾ cups red whole wheat or whole wheat
¼ cup water

For the filling
1 butternut squash thinly sliced
1 large shallot thinly sliced
1 tsp thyme
Salt and pepper to taste
1 tbsp olive oil
1 tbsp butter
