On this week's Side Dish episode of Chocolate Therapy, we'll be talking about the legacy of New Orleans icon Leah Chase and cooking up her Red Beans and Rice recipe as published in The Dooky Chase Cookbook. She was a great lover of art, food, and people. It didn't matter if you were famous or homeless, Miss Leah and her husband Edgar "Dooky" Chase fed everybody and treated them as equals. New episode drops today with Jordan Scruggs own Cheese Grits recipe! You can find the recipe below and the new episode on Spotify, Stitcher, iTunes, or wherever you listen to podcasts.

1 Cup Grits
4 Cups Whole Milk
1 1/2 cup of Smoked Gouda.
1/2 of green onion/scallions
Enough Butter
Little bit of salt
Lot of freshly ground pepper

All of this should take about 30-40 mins, depending on how hot you have your eye.
Heat milk on medium, season with salt and a little bit of butter, about 1 tbs. Keep your eye on it and stir it occasionally so your milk doesn't scorch.
Once you see steam and one bubble of milk, add grits into the heated milk.
Now stir and keep stirring. Don't stop until they start to thiccin' up. (Seriously, this takes about 20 mins. Keep stirring.)
As they start to get a little thicc add 1/2 a cup of cheese at a time.
Season with salt and pepp as you go.
Add the rest of your butter as it gets to final level of thiccness.
Once all of the cheese has been added, add your green onion.
Stir for about another 5 minutes and you're done. Eat hot.

Ps. I like my grits to be a hybrid. Aka no sugar, but honey with sausage bits broken up into them.

(For leftovers, add a splash or so of milk to a pan to loosen them up when you add the grits.)

We started this podcast because both of us have been involved in organizing in Black Southern communities for years. And we know that our Southern culture of Black liberation and joy is rarely represented in the public eye. Behind the hashtags, campaigns, protests, meetings, and hard work; there are many wonderful and loving folks who are deeply connected to the work and their people. They come from diverse backgrounds and hold a wide range of experiences, beliefs, and ideas. We want you to get to know some of those folks a little better. And any organizer will tell you that there is no better way to connect with others than over good food and deep conversations.

In each episode our guests share recipes, laughter, love, and celebrations of Black Southern culture. Along the way we may hit on pop culture, politics, and current events as our conversations expand from one simple question: What is your favorite home cooked food?

We look forward to sharing all of this with you AND we encourage you to let us know who’s doing great work in your community. We’re always looking to make new friends and learn more about the various facets of Black Southern culture from the sandy beaches of Florida to the rolling green Kentucky hills.
