Need a super easy Fall dessert that only uses 3 main ingredients? This Cinnamon Apple Skillet can be in the oven in 5 mins! It’s super rich so a little goes along way. We like to serve it with ice cream to cut the richness. 😉. *1 box of cake mix (we used Cinnamon but yellow or even spice would be great). *1 & 1/2 sticks of butter. *2 cans of apple pie filling * 1 cup pecans (optional). *1 cup cinnamon cereal (optional). Preheat oven to 350. Melt 1 stick of butter in cast iron skillet. When melted add both cans of pie filling and mix well. Top the butter/apple mixture with DRY cake mix. Do not mix! Add pecans and cereal on top of if desired. Melt the remaining 1/2 stick of butter and pour evenly on top. Bake for 40-45 mins or until it’s golden and bubbly. This can also be baked in a 9x13 pan. Feel free to make your own apple pie filling or even use reduced sugar.
Strawberry Salad dressing! So delicious and super easy to whip up!
8 Strawberries (or more according to taste)
2 tablespoons Honey
2 tablespoons Apple cider vinegar
2 tablespoons olive oil
Salt & Pepper to taste
Place all the ingredients in a blender and blend well. Store in fridge 4-5 days.

Overnight Strawberry Oats
1/2 cup whole grain oats
1/2 cup milk of choice
1/2 cup chopped strawberries
1/4 cup greek vanilla yogurt
Splash of vanilla
Mix all together and place in the refrigerator over night.
Stuffed Baked Apples
4 whole apples
1/4 cup brown sugar
1/2 teaspoon cinnamon
2 tablespoons of chopped pecans
Pinch of nutmeg
4 “pats” of butter
Core the apples and dig out a “well” for the apples stuffing. In a bowl mix together brown sugar, cinnamon, pecans and nutmeg.
Stuff the mixture in the apples.Top each apple with a pat of butter.
Bake at 375 for 45 minutes in a baking pan with 1/2 cup of warm water in the bottom. Once baked to your liking top with whipped cream.
This recipe is adaptable to you! Try it with brown sugar substitute, blend oats and the butter to your brown sugar mixture before stuffing, top with ice cream, etc. Get creative!
The BEST bruschetta is also SUPER easy to make. Just toss fresh diced tomatoes, red onion and fresh Italian parsley in a bowl. Use amounts to fit your tastebuds! Drizzle with extra virgin olive oil and season with salt and pepper. DELICIOUS! You can also add garlic or balsamic vinegar if you choose. Make it ahead of time so the flavors have time to marry. We love this served with bread toasted in the oven with olive oil. Enjoy!
