•grain free @thrivemarket vanilla cake base (replaced water with with tangerine zest & juice, subbed unsweetened applesauce for the oil)
•glazed layers with maple simple syrup (1 tbsp maple syrup, 1/2 tbsp lemon juice, 1/2 tbsp water)
•combined layers with a tangerine jam
•iced with a 2-ingredient icing (3/4 cup organic coconut cream sweetened to taste with maple syrup, chilled and whisked until smooth)

6 gf/df appetizers you should make this Thanksgiving:
•Sweet Potato Bites— slice your sweet potato and use a cookie cutter to stamp out circles. Coat lightly in maple syrup, olive oil, and sea salt. Bake at 375° until fork tender, flipping halfway through total bake time. Top with marshmallows and broil until golden brown. Optionally, add a candied pecan or almond to each (@mydandies marshmallows are a must)
•Parmesan Pigs in a Blanket— wrap mini-sized or small slices of gf grass fed hot dogs in puff pastry or pizza dough. Brush with df butter and top with Parmesan before baking. (use @scharglutenfree puff pastry or @wholly_gf pizza dough and @miyokoscreamery vegan parm)
•Crispy Balsamic Brussels Sprouts— trim and halve your sprouts, and toss in olive oil, salt, pepper, and garlic. Roast until they start to brown, then mix them around the pan with some balsamic glaze. Continue roasting until crispy and fully cooked.
•Spinach + Ricotta Stuffed Mushrooms— trim and clean baby bella mushrooms. Sauté a couple of the stems, diced, with 1/2 an onion, also diced, until they start to caramelize. Mix that with 2 cups chopped spinach, 1/3 cup ricotta and season with salt and pepper. Fill the mushrooms with the mixture and top with breadcrumbs. Bake until mushrooms are tender and top is golden brown. (Use @iansfoods or @aleiasgf gf breadcrumbs and @kitehillfoods whipped ricotta)
•Ricotta-Stuffed, Bacon-Wrapped Dates— wrap 1/2 piece thinly sliced bacon around a pitted date stuffed with ricotta. Bake them until crispy, flipping over half way through total bake time. (I like @kitehillfoods whipped ricotta and @jooliesdates )
•A charcuterie board with @miyokoscreamery herbed cheese, Melon + Prosciutto, and @marysgonecrackers

Chocolate Pumpkin Pop Tarts

How to make ‘em:
•grab some gluten-free, dairy free pie crust (I used @wholly_gf ) and roll it out to 1/8” thick
•score even rectangles into the dough—on half of them spread pumpkin butter and @oat.haus chocolate granola butter
•with the remaining rectangles of dough, cover the ones with the filling and press the edges together to create a tight seal
•bake at 350° in the oven until golden brown (anywhere from 10-20 min)
•once cooked and still slightly warm, drizzle on an icing of choice (I combined 2 TBSP of powdered sugar with 1 TSP pumpkin butter and 1/4 TSP of non dairy milk)
•top with cinnamon or pumpkin pie spice

Prepared gluten and dairy free from the recipe by @theloopywhisk
I made the following modifications:
•sub coffee for the milk in the chocolate batter recipe
•add the chocolate batter to 2/3 of the pumpkin base rather than 1/3
•add 1 tsp of vanilla extract to the main pumpkin batter base
•expect to add an extra 15-20 minute to the total bake time, checking frequently with a cake tester until cooked

🍕 PSA for my plain-pizza people …I used to hate toppings on my pizza until I stopped eating dairy. Back in the day the vegan cheese options were limited, so I forced myself to try adding one thing at a time … and the rest is history. Here’s what I loaded up this homemade gluten-free crust with: •almond milk ricotta •vegan mozzarella •pizza sauce •pepperoni •black olives •bell pepper •basil •tomatoes •hot honey •micro greens •chili flakes Here’s my QUICK Gluten-free pizza dough recipe:•combine 2 cups 1:1 gf flour (I used half @bobsredmill cup4cup and half @scharglutenfree all purpose) with 1/4 tsp baking soda and 1 tsp salt•1 packet of dry active yeast (stir this into 1 cup of 115°F warm water with 1 tsp of honey and let sit for 5 minutes until foamy)•combine wet into dry and add 1 tbsp of olive oil •mix until dough forms, roll into a ball and let it rise in an oiled-bowl under a towel in a warm, dark place for 30-40 minutes •shape the dough and pre-bake for 8-10 minutes at 450°F before adding toppings and cooking for 5-7 more minutes at 400°F (This dough also makes perfect gluten-free focaccia so keep it in your back pocket) What are your go-to toppings? #glutenfree #glutenfreepizza #hothoney #pepperoni #pizzatoppings #dairyfree #dairyfreepizza #glutenfreerecipes #pizza #pizzarecipe #pizzadough #celiac #allergyfriendly #nycpizza
