Tonight, I talk with the cats involved with Liquid Wood, LLC, a group who has patented a way to infuse water with tannins and flavors from wood products (staves, chips, cubes, etc..) for use in the fermentation process. The thought is that you can front load the must/wart with barrel characteristics that will carry through to the final product.
