Recipe:
‐1 1/2 to 2 lbs ground beef
‐Instant (or homemade mashed potatoes), typically I do homemade, but used instant this go around
-A large can of corn (or green beans, I used green beans this time as I didn't have the corn) or a frozen bag of corn
-A packet of taco seasoning
-Shredded cheddar
Preheat your oven to 350 degrees. Spray your baking dish with cooking spray.
Brown your meat, add salt and pepper, garlic and onion powder! I usually cut up some onion and add some minced garlic, but didn't feel like burning my eyes, today. 🤣 After I break up my beef and it's fully cooked, I'd drain the meat if there's a lot of grease. Put the meat back in the pan you used to fry it up and follow the instructions on the packet of the taco seasonings. Cook.
Once cooked, put the meat on the bottom of the dish and add a can of drained corn, or whatever veggie you choose to use. Add a layer of shredded (as much as you'd like).
If you use instant mashed potatoes, follow the directions on the back! If you make them homemade, make them how you prefer. I rinse, peel, dice and boil my potatoes. Once done, drain, add milk, butter, sour cream, a little bit of cream cheese, salt and pepper. Add on top of your mixture!
Top everything with more cheese and bake for about 30 to 35 minutes. It's honestly very simple! I'll post the finished product. 😁
