Yesterday, we used our season passes for opening day of Cedar Point. Whew, it was a busy day, but we definitely had a great time. So excited for this summer, we'll be there a lot, and getting to actually get in the lake.

Milk House Meats has great meats. I made a one pan meal using their kielbasa. I cleaned and cut up potatoes. I placed my kielbasa, potatoes, and green beans on a pan with some oil and some of my favorite seasonings. I cooked for about an hour (my pesky potatoes wouldn't cook) at 400 degrees. You can add the beans and kielbasa closer to when the potatoes are almost cooked through if you'd like.

I have a lot to catch up on!

First...meatloaf recipe:

2lbs of ground beef
1/2-1 box of preferred stuffing mix
1 white onion (diced)
1 packet of meatloaf mix
2 eggs
Mustard & ketchup (I don't measure these)

In a mixing bowl, I added all of the above ingredients. With my hands, I mixed everything together.

I preheated the oven to 350 degrees.

I formed mini loaves and places on two baking sheets (I sprayed with cooking spray). We like ketchup on our meatloaf, before I tossed them in the oven, I covered with ketchup.

Bake for 30 to 35 minutes. They cook fairly fast. 😁

In the photo, I made homemade mashed potatoes (wash and boiled about five big potatoes and used my mixer to whip them up with sour cream, milk, butter, salt and pepper). Also, I heated up some corn.

Made a knock off of Chicken Ala King. 🤣

I boiled about 5 chicken thighs (shredded off the bone when done).
Saved a little bit of the broth and cooked my carrots, onions, and corn in it. Maybe about a half of a cup. I added a family sized can of cream of chicken, added my shredded chicken and heated through. It's not authentic, but it was good. I served over fresh made biscuits. 😁

For dinner tonight, I marinated thinly cut chicken breast in teriyaki sauce. I wanted to try it in the airfryer so, I cooked it on 400 degrees for six minutes. Some, I cooked for ten if it was thicker, but it was cut extremely thin.

I sautéed green beans in butter and garlic, I also added a little bit of low sodium soy sauce.

Typically, I do my baked potatoes in the oven, but I just did them in the microwave for about 10 minutes. I topped them with butter, shredded cheese, and sour cream. I made myself a baked sweet potato! Yum.

Cooked up some pineapple kielbasa for dinner.

Two rings of hillshire farm smoked sausage cut up in bite size pieces. Cook until slightly brown. Dump in a can of pineapple (I usually do chunks but the store substituted it for crushed, I made it work) and about a half cup of brown sugar. I cook until caramelized and I served with cheddar broccoli rice. Took about 35 minutes or a little bit less to cook.

Made enchiladas, but they aren't authentic 🤣

Browned 2lbs of meat (beef), drained the grease, added taco seasoning with some water. The package will say the measurements.

After your meat is done, add some shredded cheddar or the mexican cheese and beef into a flour tortilla. Roll it up, I browned mine in the air fryer for three or four minutes to prevent sogginess.

Lay in a sprayed baking pan. I saw a recipe or something that said to try whipping cream, I couldn't find any so I used a little bit of half and half, and poured it on top of the enchiladas along with red chile sauce. I also added more cheese and baked for about 35 minutes at 350. Top with your favorite taco toppings.

Good Sunday Morning! I was planning on making basic, not authentic, enchiladas, but forgot I had gotten a pot roast out!

A friend shared a recipe they wanted me to make a they found on instagram. I'll post the link.(I have to give credit).

You'll need any pot roast, three cups of sliced carrots, an onion, a half stick of butter, oil, a 15 Oz can of tomato sauce, a 16oz jar of pepperocinis, a packet of ranch seasoning mix, a packet of aus jus, and a packet of beef stew mix.

In a hot skillet (with oil), brown both sides of your pot roast. Add (with the juice) into your crockpot.

In your skillet, add in your half stick of butter, onions, carrots, your pepperocinis juice and all, the three seasoning packets, tomato sauce (then fill with a half of a can of water) and let it all simmer for about five minutes. Dump on your pot roast, cook on high for eight hours.

I'll check back once it's done. I tried the gravy, it was a little bit acidic from the pepper juice. I'm hoping it'll cook down a bit.

Nothing fancy, but I made burgers we got from Milk House Meats ! And cooked some homemade fries in the airfryer. I wanted gravy so we have gravy fries. Easy peezy dinner. Also, i love this fine China. 😅🍔🍟

Recipe:

‐1 1/2 to 2 lbs ground beef
‐Instant (or homemade mashed potatoes), typically I do homemade, but used instant this go around
-A large can of corn (or green beans, I used green beans this time as I didn't have the corn) or a frozen bag of corn
-A packet of taco seasoning
-Shredded cheddar

Preheat your oven to 350 degrees. Spray your baking dish with cooking spray.

Brown your meat, add salt and pepper, garlic and onion powder! I usually cut up some onion and add some minced garlic, but didn't feel like burning my eyes, today. 🤣 After I break up my beef and it's fully cooked, I'd drain the meat if there's a lot of grease. Put the meat back in the pan you used to fry it up and follow the instructions on the packet of the taco seasonings. Cook.

Once cooked, put the meat on the bottom of the dish and add a can of drained corn, or whatever veggie you choose to use. Add a layer of shredded (as much as you'd like).

If you use instant mashed potatoes, follow the directions on the back! If you make them homemade, make them how you prefer. I rinse, peel, dice and boil my potatoes. Once done, drain, add milk, butter, sour cream, a little bit of cream cheese, salt and pepper. Add on top of your mixture!

Top everything with more cheese and bake for about 30 to 35 minutes. It's honestly very simple! I'll post the finished product. 😁

Breakfast burritos 🌯 for dinner! We love breakfast any time of the day.

I airfried some hashbrowns for 10 minutes at 400 degrees. While doing that, I fried up about a half pound of bacon and sausage. After that was done, I scrambled 10 eggs and poured on top of the eggs cooking at medium low until it was how we liked them. Once everything was done, I piled everything into the burritos (I made eight) and put em in the airfryer at 400 degrees for two minutes. Easy and delicious. Might not look like much, but my family enjoyed them. 😁

Oh boy! I forgot to post a finished product the other day of the cake I made for the boys.

I just used followed the directions on the back of the box (except I used two eggs and not three...my mistake).

I made my own "cheesecake" filling. I wanted to use the Philadelphia Cream Cheese Cheesecake filling but couldn't find one, so I made my own. I mixed a softened block of cream cheese with about a cup and a half of powdered sugar, about a tablespoon or two of sour cream, and some lemon juice.

For frosting, I just used icing from a container. I was going for simple. 😅

Pizza dip!

16 Oz of cream cheese (softened)
8 Oz bag of shredded mozzarella
Italian seasoning (as much as you'd like)
A can of tomato/pizza sauce. I actually used half of a 24 Oz jar.
Mini (or chopped up) pepperoni

Preheat oven to 350 degrees.
Bake about 35 to 40 minutes at 350 degrees.

*Spray a baking pan with cooking spray.
In a medium bowl, mix softened cream cheese, 4 Oz of mozzarella, some of the pepperoni and Italian seasonings.

*Put mixture in the baking pan, top with sauce, remaining cheese, and whatever is left of the pepperoni.

*serve with toasted baguette, crackers, garlic bread!

Making the boys a special cake for their birthday's. Today, Tyler turns a big 10! Michael turns 12 on Tuesday! They asked to celebrate their day together. 😁 I'll post the finished product later! I did however; accidentally only used two eggs rather than three because I clearly misread the directions. I went to poke a knife to make sure it was done and it messed one up a little. 😬 For now, I'm just waiting for the cakes to cool and my filling to thicken.

The finished product! Homemade Sloppy Joe's!

I had a bigger group so I basically tripled the recipe.

-Brown 1 lb of ground beef (break it up of course)
-Add in diced yellow onion and a diced bell pepper.
-Once cooked, drain the grease and throw back into a pan.
-Season with whatever your heart desires. I use salt, pepper, and garlic powder.
-2/3 c. Ketchup
-1 tablespoon (of less if desired) brown sugar
-1 tsp of mustard
-1/2 tsp of Worcestershire sauce
-Mix and I cooked on medium/low for about a half hour.
-Scoop on a bun, I add cheese.

To be honest, I don't measure, but if anyone wants to make it...I figured this would be easy to follow. Very kid friendly, we have extremely picky children and they devoured it!

Also, I love these. Making them in the air fryer for the first time. Cook at 375 degrees for 8 minutes. Give a shake and cook for two more minutes. Don't forget to spray your air fryer and dumplings very well.
