Throwback to issue no. 6! Digest senior contributor, Suzi Schiffer Parrasch invites us into her kitchen which, during fall, is filled to the brim with apples. Suzi convinces us that the American apple pie is somewhat overrated and instead puts us on to an imperfectly perfect apple galette and a French apple cake. 🍎🍏🍎

“The simplicity of the recipe, the ease with which it comes together every time, no matter the humidity or air temperature, crust flat or gently nudged, pulled, and pleated up and over to cradle the fruit, slicked with an egg wash and dotted with thick sugar crystals, or not, any kind of apple, sliced thick or thin, peeled or not. It’s the imprecision that I love – the forgiveness, the rugged beauty of the creases and crags of the crust, the way the apple shines through, aromatic, unembellished, always recognizable, no need to dress it up.”

Throwback to our Fall 2021 issue where Digest contributor, Kyle Hughes stopped by one of the oldest institutions in the historic city of Albany to see how the sausage is made. 🍖

“Rolf's Pork Store is in a brick building occupying a corner lot on Lexington Avenue, originally Snipe Street, first settled by the Dutch in 1614, it is one of the oldest public thoroughfares in one of the oldest places in America. The store has been doing business as a German market and specialties shop since 1868—chopping, grinding, and smoking meats, making hams, chops, bacon, steaks, sausages and more. The meat arrives, mostly from Nebraska nowadays, and is turned into delicious food products by Glen Eggelhoefer and his staff, all of whom are related.”

Now more than ever, we love sunset park.
There is no other neighborhood on the planet like sunset, being in the park this morning you would have never know there was a mass shooting yesterday, sunset is a quite family driven immigrant neighborhood. The sadness and anger that emerges from yesterday is hard to put in words.

Either way if you ever have the chance to eat a few things, watch a sunset, and feel the community that exists in this massive always changing blob of a neighborhood, you won’t regret it.
