Method
In a bowl add all the ingredients,add the water Knead until everything is mixed together, leave in a warm place for 45min.put water in your big pot let it boil , add bricks( to support your muffin pan) , put your muffin pan (grease with butter)add your dough and cook for 15min or until done

Ingredients:
For the pastry:

4 cups (500g) all-purpose flour
200g cold Butter, cubed
2 Eggs
1 teaspoon Salt
1 tablespoon sugar
1 teaspoon baking powder
1/4 cup (60ml) cold water

For the filling:
•3/4 pound (350g) Ground beef
1 Potato, peeled and diced into small cubes
1 Large Onion, chopped
1 Large Carrot, peeled and diced
1 cup (240ml) Water/beef broth
Salt to taste
Pepper to taste
1 teaspoon Thyme
2 tablespoons flour
2 tablespoons Oil
1 egg for brushing

How to prepare:

-Make the pastry: in a large bowl mix together flour, sugar, salt and baking powder.
-Add cubed butter and rub it with the flour until you get a crumbly texture.
-Beat 2 eggs with cold water and add it to the flour mixture, mix until dough is formed. Cover for 30mins.
-Make the filling: in a large pan heat oil. Add onion and sauté for 5-6 mins.
-Add diced carrots and cook for 3-4 mins.
-Add the meat, breaking it apart, for 4-5 mins; Season with salt, pepper, thyme and flour.
-Divide the dough into 4 pieces. Roll out the dough into 1/8-inch thickness. Cut out a round shape with your desired sized.
-8. Place about 1-2 tablespoons of the meat mixture in the center and fold over the dough. Seal it with your fingers or with a fork. Poke the pies with a fork to create a steam outlet.
-Bake for 25-30 minutes, until golden. Cool slightly before serving.

HOW TO COOK BEEF STIR FRY SAUCE

INGREDIENT
* Beef
* Onion (sliced)
* Red bell pepper (diced)
* Green bell pepper (diced)
* Yellow bell pepper (diced)
* Onion (sliced)
* Carrot (diced)
* Scotch bonnet (blended)
* Soy sauce
* Corn starch (thickener)
* Black pepper
* Onion powder
* Grated garlic & Ginger
* Salt
* Seasoning cubes
* Vegetable oil
* Dark soy sauce
*Sesame Oil

PREPARATIONS

* Slice the beef, wash and season with some black pepper, seasoning cubes, ginger & garlic, onion powder, soy sauce and mix until it's combine. Cover and allow to marinade for 30mins.

* Place the pan on heat, add some vegetable oil, add the onion, grated garlic and ginger and stir. Add the marinaded beef and stir fry on medium heat until it's golden brown.

* Add the vegetables, pepper and stir.

* Drizzle sesame oil

* In a bowl, combine the cornstarch, soy sauce together, add some water, mix and pour the liquid into the pot, stir and allow to simmer for 1min.

Taste for salt and seasoning cubes and add if necessary.
Enjoy with some white rice

Fall off the bone oxtail stew.

You'll need

1kgOxtail
1 tbsp flour to dust oxtail
1 large chopped carrot
1 large onion
Half finely chopped green pepper
1 sachet of tomato paste
1 can of chopped and peeled tomatoes
1 glass of red wine
1/4 cup of sunflower oil
A sprig of curry leaves
1 chicken and 1 oxtail cube(soak the cubes in two cups of water and stir) (or you can use homemade beef stock)
1 tbsp paprika
2 tap aromat
1 tsp mother inlaw masala
1 tsp garlic powder
1 tbsp oxtail spice

Method

1. Start off by dusting the oxtail with flower and place aside. Heat your stove and in a large pan fry oxtails until they are brown on the outside and set aside( don't skip this step)

2. Fry the onions and green peppers in the same pan you used to fry the oxtails until they are soft. Add garlic, curry leaves and stir. Reduce your stove to medium. Add all your spices and stir.

3. Add in your meat together with the carrots and stir. Add tomato paste and a can of tomato. At this point have a taste and add salt and pepper (your desired amount). Leave to simmer for ten minutes and add your stock. After 10min add a glass of red wine of half. Leave to simmer on low heat for 3 hours until the oxtails fall off the bone.

4. You can add half a packet of knorr oxtail soup and stir. Leave it for another 10min to cook and enjoy.

In your open pot put in cooking oil

Put in your seasoned(with salt and pepper) beef and brown each side until golden brown

Remove from the pot and keep aside

In the same pot saute your onions and after put in back your browned beef

Pour in hot water and cook on medium heat u til almost ready

Put in your curry stir and allow to cook on medium head until your meat is ready and the soup has thicken up

♦️Ingredients

1 lb cherry tomatoes, halved or quartered

3 ears of corn, cooked, shucked and cut off the cob

2 avocados, peeled, pitted and sliced

1/2 red onion (medium), thinly sliced

1/4 cup cilantro, chopped (1/2 small bunch)

2 Tbsp extra virgin olive oil

2 to 3 Tbsp lime juice, from 1 to 2 limes

2 garlic cloves, pressed or finely minced

1 tsp sea salt , or 3/4 tsp table salt

1/8 tsp black pepper

♦️Instructions

In a large salad bowl, combine sliced tomatoes, corn kernels, sliced avocado, thinly sliced red onion, 1/4 cup chopped cilantro and press in 2 garlic cloves.

Drizzle the top with 2 Tbsp extra virgin olive oil, 2-3 Tbsp lime juice (adding it to taste). Add 1 tsp sea salt and 1/8 tsp black pepper, or season to taste. Toss the salad gently just until combined and serve.

Ingredients:
1 large Cauliflower head
1 Tbsp Olive oil
½ Onion, chopped
1 tsp Seven Colours Grill Seasoning™️
1 tsp Turmeric powder
1 tsp Mixed herbs
⅓ cup chopped Red pepper
¼ cup diced Carrot
¼ cup Peas
Salt and pepper, to taste

Method:
Grate the cauliflower or blitz the florets in a food processor until small rice pieces form. Heat the oil in a large non-stick pan on medium to high heat, then add the onion, Seven Colours Grill Seasoning™️, turmeric powder, mixed herbs, red pepper, carrot and peas, and cook for 5 minutes, stirring occasionally. Add the grated cauliflower to the pan and stir-fry to cook the cauliflower to a soft but not mushy texture. Season with salt and pepper and serve warm.

AVOCADO SALAD 🍅🥑🥒

Made with an abundance of rich and creamy avocados, vibrant tomatoes, crisp cucumbers, bright red onions and a fresh herb dressing. A healthy side that's perfect for a summer lunch or dinner!
Servings: 6

INGREDIENTS
1 medium (12 oz) English cucumber, cut into quarters through the length then sliced
16 oz. grape tomatoes*
1/2 small red onion,** sliced into small pieces
2 medium avocados (firm but ripe), sliced into bite size pieces

DRESSING
1 1/2 Tbsp fresh lemon juice***
1 1/2 Tbsp red wine vinegar
3 1/2 Tbsp extra virgin olive oil
1 tsp honey
1 1/2 tsp minced garlic
1/4 cup chopped cilantro
1/4 cup chopped parsley
1/2 tsp dried oregano
Salt and freshly ground black pepper

INSTRUCTIONS
For the dressing: In a small mixing bowl whisk together lemon juice, red wine vinegar, extra virgin oil oil, honey, garlic, cilantro, parsley, oregano, and season with salt and pepper to taste.
In a large bowl gently toss together cucumbers, tomatoes, red onion, and avocado with dressing.
Serve shortly after preparing.
Recipe Notes
*I like to use a multicolor blend of tomatoes for a more visually appealing salad but all red tomatoes work just fine too.
**For a slightly milder flavor red onions can be rinsed under water and drained well to help remove harsh bite.
***Lime juice can be substituted.
For a more refreshing salad you can use chilled ingredients and a chilled dressing (don't chill tomatoes longer than a few hours though, and wait to cut the avocado until ready to serve).

Nothing says ‘home’ like this amazing beef curry!

Ingredients:
• 1 kg stewing beef
• 2 tbsp Amapelepele Curry Powder Supreme
• 1 tbsp Amapelepele Paprika Powder
• Salt and pepper, to taste
• 2 tbsp curry paste
• 4 tbsp olive/cooking oil
• 1 large onion, finely chopped
• 1 tsp minced garlic
• 2 tbsp tomato paste
• 2 cups boiling water

Method:
Season the beef cubes with salt and pepper. Add curry paste to the meat and toss to coat. Cover with cling wrap and marinate.
Heat oil. Add the onions, garlic and a little seasoning (salt and pepper) followed by paprika and curry powder and stir; then cover and cook for 6-8 minutes or until onions are soft.
Add the beef to the onions along with water; season and stir over a medium-high heat for a few minutes. Cover the pot with a lid and stirring occasionally cook on medium-low heat until the meat is tender. Add tomato paste, stir and cook for a few more minutes before serving.

500 g sausages ( cut into pieces)
2 cups Penne ( cooked) keep pasta water
1/2 cup pasta water
430g pepperdews chutney

2 tbsp paprika

Method
*In a pan heat oil and brown the sauges
*Add onion, garlic, paprika,cumin and cook till soft

*Ingredients*
1. Chicken drumsticks
2. Paprika
3. Chicken Spice
4. Tomato paste
5. Onion
6. Chicken stock
7. Crushed garlic
8. Cooking Oil
9. Green pepper
10. Carrot

Method

1. Put your pan on a medium heat stove (level 5) and add three table spoons of cooking oil.
2. Add one diced onion, one medium carrot cut into a size of cherry tomato, one teaspoon of crushed garlic, one chicken stock, one teaspoon of paprika, eight pieces of chicken, one teaspoon of salt and one tablespoon of chicken spice.
3. Fry for about ten to 15 minutes and add 2 spoon of tomato paste.
4. Fry and Add half diced green pepper.
5. In a bowl, Mix one and half table spoon of chicken soup in one and half cup of water and add it into the pan.
6. Mix well and Let it simmer until the relish thickens and serve.

Butter-chicken served with Tastic Rice]
Ingredients for the marinade
400g chicken breast cut into cubes
2 garlic cloves minced
5ml chill powder
500ml plain yoghurt
5 ml masala
5 ml turmeric

For the sauce
1x 410g canned tomatoes from (Anything goes with tomatoes mix)
1 tbsp butter
1ml ground cloves
1tsp minced garlic
1tsp ginger paste
15ml butterchicken spice
125ml chicken stock
5 ml sugar
1/2 tsp salt
30 g tomato paste
1 medium onion chopped
15 ml olive oil
4 cardamom pods lightly crushed
5 ml ground coriander
150ml fresh cream
Method
Mix the yoghurt with the chill powder,garlic cloves masala and turmeric add the chicken into the spiced yoghurt until completely covered. Return to the fridge and leave to marinade for at least 3 hours.

Preheat the oven to 180°C. Set a large metal cooling rack on top of a large baking tray.
Place the pieces of chicken onto the rack and bake for 20 minutes.

Curry sauce
Place a large casserole dish over medium heat. Add the olive oil, onion, tomato paste, butter-chicken spice, garlic, ginger, cardamom pods, cloves, coriander, garam masala, turmeric, chilli powder and sugar, and cook until fragrant.

Add tomatoes and simmer until the tomato begins to thicken and is well combined with all of the spices, add the chicken stock and simmer for 5 minuets more, Using a stick blender blend the sauce. Add the chicken pieces and its juices then mix well into the sauce add the cream stir it well
Serve with any Tastic Rice] of your choice

Season your meat with paprika,salt and pepper

INGREDIENTS:
1 box of penne pasta
1/2 pound ground beef
1 onion 🧅
1 handful mushrooms 🍄
1 can Rotel crushed tomatoes 🍅
1 block velveeta cheese 🧀
Salt
Pepper
Granulated garlic
Onion powder
Chili powder

PROCESS:

Place cast iron pan on medium heat and large pot of water with oil and water on high heat.
Add ground beef to pan with listed seasonings and cook till almost done and drain grease. Add your pasta to the boiling water. Place meat back in pan with the chopped onions and mushrooms add desired seasonings and sauté your onions and mushrooms. Once sautéd add your crushed tomatoes and lower heat. Add half a block of velveeta cheese and let melt. Once melted add your pasta to the cast iron pan and mix well. Then serve!

Recipe
500g green beans (blanched)
¼ cup mushrooms
¼ Red, yellow and green peppers chopped
1 Tbsp olive oil
1 Tbsp Seven Colours Grill Seasoning
1 tin Tuna
½ cup mayonnaise or any dressing of your choice
1 tbsp fresh parsley

Method

Blanch green beans
In a saucepan, bring water to a boil and salt it.
Prepare an ice bath by combining cold water and ice cubes in a large bowl, and set aside
Add the prepped green beans to the boiling water, and set your timer to 2-3 minutes. The green beans should be bright in color, crisp but tender at the same time.
Remove from the saucepan, and plunge into the ice bath. Leave for 5 minutes, then drain...
On another sauce pan add olive oil, mushrooms, peppers, Seven colours grill seasoning, blanched green beans, mix everything together and remove it from the stove.
Let it cool... Then add tuna, dressing and fresh parsley.

Tip:you can add cherry tomatoes

White rice and egg stew.

Ingredients:
– 3-4 Large eggs
– 5 large tomatoes or 200ml fresh tomato puree
– Scotch bonnet/habanero pepper(atarodo) or ground dried pepper(to taste)
– 1 medium sized onion bulb
– 1/4 teaspoon Garlic powder (optional)
– 1/4 teaspoon Curry powder
– 1/4 teaspoon dried Thyme or Oregano(optional)
– A pinch of ground Nutmeg(optional but gives the sauce a taste boost)
– 1 large Seasoning cube
– 75ml Vegetable oil
– Salt to taste.

Cooking directions:
Please note:
-If you’ll be using fresh tomatoes and peppers, blend or chop them into bits; Also chop the onions and set aside.
-Break the eggs, beat well and set aside.

Now to prepare the Egg sauce;

-Place a pot or frying pan/skillet on medium heat, pour in the vegetable oil and heat up until hot, but not smoking hot.

-Add the chopped onion and garlic powder(if using), stir fry for 2 minutes and add the blended/chopped tomatoes and peppers. Stir-fry for about 10 minutes until the oil start to form bubbles at the top of the sauce.

Tip: The oil will separate from the tomato-pepper and the sauce will not have a raw tomato taste anymore.

-Now add the curry, thyme, nutmeg , seasoning cube, adjust for salt and stir until well combined.

-Reduce the heat and gently pour in the beaten eggs and don’t stir so that the eggs will set, but if you don’t want too see so much lumps in the sauce, you can go ahead and stir the sauce.

-Stir continuously for 3-5 minutes on low heat and as soon as the egg mixture is fully cooked, put of the heat and serve.

Serve egg stew with Boiled rice, boiled, fried or roasted plantains, yams, potatoes, bread , moi moi etc; You can also plate your meal with fried chicken, meat or fish...🤗

3 eggs
1/4 cup of milk
Procedure:
1,Measure all the dry ingredients in a bowl, flour, sugar, baking powder, nutmeg and salt then mix together. then add butter and mix it together again then add your beat eggs and milk and continue to mix until makes a dough.
2, Sprinkle flour in a work surface and transfer the dough and knead for 2 minutes then cut the dough into 2 pieces then use a rolling strip to flat the dough and cut with knife or a cutter into pieces in a chin chin shape.
3, put oil into a dry pot and bring it to heat then pour in the dough pieces and fry with medium heat until gives you golden brown then yummy chin chin is ready.

•Margarine or butter or half butter and half margerine— 500g

•Salt — 1/4 tsp
•Cold Water – ½ cup or milk

Meat Pie Filling:
•2 medium-sized soft cooking potatoes
•2 medium-sized carrots
•500g of finely chopped steak or minced meat
•1 medium-sized onion
•1 cooking spoon of Vegetable Oil
•Seasoning – 2 Maggi / Knorr cubes and 1 teaspoon of thyme
•1/2 tsp Allspice
•2 tablespoons of plain flour
•Cold water — 1 cup
•Salt — to taste
•1 egg (for glazing the pies)

Preparation :
Filling:
Step 1: Heat the oil and lightly brown the onions
Step 2: Add the minced meat and fry until brown, season the meat with the thyme, allspice, add some curry powder if you like and the bouillon cube. Then add a cup of water and let it cook for 5 min.
Step 3: Add the carrots and potatoes with 1 cup of water and salt to your taste.
Cover the pot and let it cook till everything is tender (around 15 min) .
Step 4: Dissolve the flour in some water and add in the filling. This will thicken the filling.
Stop the heat and let the filling completely cool down.
B-Making the dough:
Step 1: Add the flour in a bowl with the baking powder and a pinch of salt. Then mix well.
Step 2: Add the margarine and mix thoroughly until the mixture looks more like bread crumbs.
Step 3: Gradually add water while mixing until you get
Smooth dough
Step 4: Roll out on a flat surface with rolling pin and cut into desired size wth a round cutter
Step 5: Add the filling, fold & brush eggs on the inner side of the pastry to bind
Step 6: Use fork to press the edges together or use a meat pie cutter if you have
Step7: Brush egg on it to achieve a golden color when baked
Once you’re done set on greased baking tray and put in the preheat oven.
Once the meatpie is light brown, it is ready.
