Anyone else?! We dreamed of this life every day for years and it’s officially been one whole year since we ditched society and moved out to the country 🤠 we added 3 donkeys, 2 goats, 1 dog, and a bunch of chickens and quail! Every day brings a new adventure and we’ve learned more skills in one year than I even thought possible. It hasn’t always been easy but it’s been so worth it and I can’t wait to see what year two on our little farm brings 🌾

Learning the art of sourdough!

I’ve been gluten free for 13 years but have always been fine eating it in Europe. This is because wheat in the US has been modified, grown in depleted soil, doused in toxic pesticides such as glyphosate and typically higher in gluten than in Europe which makes it harder to digest. Glyphosate destroy gut biome and permeability increasing your chances for intolerances. After years of healing my gut, I can consume wheat in it’s natural state….the way it was always intended. The slow fermentation of sourdough breaks down some of the gluten in the flour making it easier for the body to digest. Making our own bread or sourcing quality is not always convenient, but it’s worth it!
