If you're gluten free and you happen to love mushrooms and noodles, this recipe is for YOU. I am a huge fan of hand-ripped Western Chinese biang biang style noodles so I knew i had to try these noods out. They're vegan, they're fairly easy, and you won't be feeling as heavy as you might normally with a heaping bowl of noodles.
