Recipe ⬇️
4 chicken thigh fillets cubed
1 brown onion diced
2 cloves minced garlic
1 tsp dried thyme
1.5 cups Arborio rice
1lt stock
Olive oil
2 cups butternut pumpkin cubes
Or 1 bunch asparagus chopped small
What to do:
1. Add the cubed pumpkin into the airfryer, toss with olive oil and bake for 15-20 minutes at 180degrees.
2. Heat a large frying pan or pot with lid over medium heat. Add a glug of olive oil. Once hot add the diced onion and cook for 3-5 minutes until softened.
3. Add the cubed chicken and cook for another 5 minutes.
4. Add the Arborio rice along with the minced garlic and cook for 1 minutes stiring to coat it and evenly heat.
5. Add in the stock and thyme. Bring to the boil, place onto low heat, put the lid on and cook for 20-25 minutes until the rice is cooked. Stir the pumpkin or chopped asparagus through for the last 5 minutes of cooking.

I like to explore different flavours and honestly I find that it helps to put them in a cup like this one that he can’t see through. If it tastes great but not a colour he is a fan off or just unsure he won’t drink it.
If you think smoothies would be handy to add in extra goodness for your little ones but they aren’t a fan of the colour - give this a go. It really helped me.
The bone broth recipe I make is a few posts back and I add it into my smoothies as well and you can’t taste it at all 💕

Greek style roast chicken recipe:
Follow along for more family dinner ideas.
Ingredients:
500g potatoes
2kg chicken
1 cup green pitted olives
Marinade:
1/4 cup olive oil
4 cloves minced garlic
1tbsp oregano
2 lemons- zest & juice
1/2 tsp sea salt
1/4 tsp cracked pepper
To serve:
Chopped parsley
What to do:
1. Preheat the oven to 180 degrees Celsius (fan forced).
2. Cut the potatoes into large wedges and place into the baking tray.
3. Combine the marinade ingredients together. Pour half over the potatoes and toss to coat.
4. Place the chicken on top of the potatoes and pour the remaining marinade over the top. Rub it across the chicken skin.
5. Bake for 30 minutes per 500g. When there is 20 minutes to go place the olives around the sides and continue baking.
6. Serve with fresh parsley, lemon zest, greens or just as is.

Lamb pasta recipe:
500g lamb mince
1 brown onion diced
4 cloves minced garlic
1 carrot grated
1 zucchini grated
1 tbsp bone broth
200ml water
400g tinned diced tomatoes
150g tomato paste
2 tsp oregano
Sea salt & pepper to taste
300g pasta
To serve optional:
Spinach, olives, cheese
What to do:
1. Bring a large pot of water to boil. Add the pasta and cook as per the packet instructions.
2. In a large frying pan heat a small amount of oil. Add the diced onion and cook for a few minutes before adding the lamb mince. Cook until browned.
3. Into the pan add the minced garlic, grated carrot, grated zucchini, bone broth, water, tinned tomatoes, tomato paste and oregano. Stir to combine then cook on low heat for 10 minutes.
4. Strain the cooked pasta, stir through the sauce and serve.

Banana slab cake 🍌
5 mashed bananas
4 eggs
1/3 cup olive oil
1/3 cup sugar
2 tsp vanilla
2 cups self raising flour
1/2 cup milk
Garnish:
1 tbsp brown sugar
2 bananas sliced
- Preheat oven to 170degree Celsius, fan forced.
- Combine all ingredients in a large mixing bowl.
- Pour cake batter into a lined baking tray. I used a tray 42.5 x 24.5cm
- Place the sliced bananas on top and sprinkle over brown sugar
- Bake for 30 minutes or until a skewer inserted into the centre comes out clean.
- Allow to cool before slicing.
