Chicken Stoup recipe 🥕

This soup was everything I needed this evening. I had a little bit of a headache and needed a big bowl of comfort.

This served 4 and took around 35 minutes to make.

Ingredients:
4 chicken thigh fillets
1 brown onion diced
1 carrot diced
2 cloves minced garlic
1 zucchini diced
1 cup pumpkin diced
1 head broccoli chopped
1 tsp fresh thyme
1 handful spinach
700ml bone broth
Olive oil
Sea salt & pepper to taste

What to do:
- Heat a large pot over medium heat with olive oil. Add the onion and cook for 5 minutes before adding in the carrot and minced garlic.
- Into the pot add the pumpkin, zucchini, broccoli, chicken thighs, thyme and chicken thighs. Top with broth and place the lid on. Cook on low for 30 minutes.
- After 30 minutes remove the chicken thighs and use two forks to shred the meat apart. Add the shredded chicken back into the pot with the spinach. Stir through and serve!

Saturday 💕
Going for a drive, walk and coffee is our favourite way to spend one of the days on the weekend.

We started at the Kallista market then headed to the for a coffee ☕️

Then adventured around the Alfred Nicholas Memorial Garden and had a picnic with 2 gorgeous Kookaburras 🥰

A little stop in at Savers on the way home now it’s hot tea on the couch 🙌🏼

We went to yesterday and I haven’t been in probably 20 years! It was so much fun 🤩 we didn’t get to go on many rides as Jas was a bit scared ( I’m also pretty nervous when it comes to rides ) I put myself out there though and has an absolute ball!

I really want to go back with Oskar (he was sick yesterday) and spend hours on all the rides. Some times you forget to have fun in between adulting life and going to places like Luna park make you let your hair down.

After we went to Oki 2 Go on Acland street for Japanese, it was our first time there and the food was super fresh, service was amazing and the overall feel of the restaurant was really relaxing. We loved it!

After we had icecream at I have been there before with Chris and was really looking forward to it. I’m a big fan of dark chocolate gelato at the moment in a waffle cone and it hit the spot 🙌🏼

Simple creamy bolognese sauce 🌿

This dinner was so beautiful and simple to make. I served the sauce on top of torn up lasagne sheets that I boiled with steamed zucchini on the side.

Ingredients:
500g beef mince
1 brown onion diced
3 cloves garlic minced
700ml Passata
200ml coconut cream or cream
1/3 cup chopped sun-dried tomatoes
Torn fresh basil

What to do:
In a large pan heat olive oil, add the diced onion and cook until just golden- Around 5 minutes.
Add the beef mince and cooked until browned. Add the garlic, chopped sun-dried tomatoes, passata, and coconut cream. Season to taste.
Serve on top of cooked pasta with fresh torn basil leaves.

This little guy (Archie) has fit right into our family over the last month 🐶 Keeda our older staffy who has arthritis has a new lease on life and plays like she’s a puppy again herself.

He’s always up for a play or cuddle and the kids are beyond in love. Jasper our 3yr old refers to him as his baby 😂

I’m so glad we just went for it after hesitating on when would be the right time 🙌🏼

This weeks family dinner meal plan is now live and features:
Sweet and sticky pork tacos
Prawn BLAT salad
Ginger and garlic Turkey bowls
Greek hulk pasta
Burgers with the lot and wedges

My meal plan includes
-5 easy family dinner recipes with Individual recipe cards featuring step by step instructions and photos for each step.
-Complete grocery shopping list so you don’t buy anything unnecessary.
-The meal plan costs $2 per week and the total grocery shopping comes in between $80-$120 with each meal feeding 4 people.
