Our historical highlight today is Annie Cohen Kopchovsky, better known as Annie Londonderry - the first woman to bicycle around the world! 🚴‍♀️

She is also the favorite episode of Susan Vollenweider of The History Chicks! As Susan recalls:

"She was a woman that few have heard of that did one really remarkable thing in her life: she was the right woman at the right stage of her life at the right moment in time to solo ride a bike around the world. It was one of the most fun conversations we’ve had."

The story behind Londonderry's cycle around the world is as exciting as the achievement itself! 🌎 Through the journey, she proved to be a professional cyclist and a genius marketer and businesswoman with a knack for selling her story.

In episode 123, The History Chicks dive into the story of Londonderry's incredible feat and her life while unraveling some of the tall tales about her.

🎉 Today we are celebrating Josephine Baker! 💃🏾

This historical shoutout comes from Beckett Graham from The History Chicks. Out of the dozens of women that they have covered, Josephine Baker is Beckett's favorite.

"Her story really blindsided me, I was very surprised by a lot of it that I didn’t know because I just knew her on the surface."

You may know Josephine Baker for her banana skirt dance performances, but what also surprised us was that Baker was the first black woman to start in a major motion picture, she was a French Resistance spy during WWWII, and she adopted children from around the world creating a rainbow family. Not to mention, she reinvented herself numerous times. 🤩

So much more to this incredible woman!

To learn more about Josephine Baker, we recommend that you check out The History Chick's coverage of her. There's so much about Baker's history they cover her life over two episodes, episode 34 and 35. 🎧

If you want to find out The History Chick's other favorite episodes, you can find their recommendations in Issue 2 of Toastee Mag!

"There is a cost to strength." 💪

We spoke with Dr. Akilah Reynolds about mental health and particularly on the mental health of Black women. What we learned is that strength has helped so many women succeed in life, but it also comes with its own costs. 😲

Dr. Akilah Reynolds is a psychologist The Black Girl Doctor, mental health and wellbeing expert, co-founder of the SBW Wellness Collaborative, and more! She is a rising star that you will definitely be hearing more of in the future. 🤩

You can check out our interview with her covering her journey into psychology, her research on the Strong Black Woman, and mental health tips in Issue 2!

Dr. Akilah is certainly a herstory maker making waves!🌟

They’re also seeing the underbelly of strength comes at a cost. Your humanity is wrapped up in being open and honest and honoring your emotions, setting boundaries, not taking on too much, and managing stress. When you deny yourself your humanity, you aren’t allowed to do those normal human thin...

✨ Today we are saluting psychologist and civil rights activist Dr. Mamie Phipps Clark! 🎉

She is a pioneering psychologist who is best known for the doll study she conducted with her husband that was used in the Brown vs Board of Education court case. ⚖️

Dr. Clark and her husband were the first African Americans to obtain doctoral degrees in psychology from Columbia University. In 1946, they opened the Northside Center for Child Development, the first full-time child guidance center offering psychological and casework services to families in the Harlem area.

Much of Dr. Mamie Clark's work focused on the self-consciousness of black children in Arkansas. Her famous doll study originated from her Master's Thesis, "The Development of Consciousness of Self in Negro Pre-School Children."

Her research showed the effects of segregation on children's attitudes towards race and racial self-identification. Children who attended segregated schools tended to choose white dolls over black dolls.

Yuyao LI is an amazing Scotland-based artist we are excited to feature in Issue 2! 👩‍🎨

Going from being an accountant to focusing on her art passion is something so many of our contributors have gone through.

What is unique about Yuyao is how she uses her environment as her canvas. 🖼️

Meaning she creates her pieces on the walls of her Scottish flat, creating her own artist retreat. 🎨

🎉 Today we honor Hollywood actress and inventor, Heddy Lamarr. 🎭🔬

Her work on frequency hopping made our modern world of wireless communication possible! 🤳 By the way, this invention and her work improving aircraft aerodynamics were done during the middle of her career in the middle of WWII!

🎥 She got her start in Hollywood in 1937 after fleeing her husband in Austria, who had ties to the Mussolini and N**i regimes. 🏃‍♀️

Though known at the time as "the most beautiful woman in the world," Lamarr didn't want to be constantly typecasted. So she set off and co-founded her own production studio and starred in her own films. 🎬

Some of her biggest films were made in her studios like Samson and Deliah in 1949 and The Strange Woman in 1946.🎞️

🚀 In 1977, she answered an ad from NASA who was looking for mission specialists for future space programs. Ride was one of the 5 women selected for NASA's 1978 program. 📣 Olive Morris, a community activist, feminist, member of the British Black Panther Party, survivor, and our historical shoutout of the day! 🎊

Originally from Jamaica, Morris became an active community, a grassroots activist in London and specifically in the Brixton community. 💂‍♀️

Her fire for activism was since she was a teenager. At 17 she intervened in the arrest of a Nigerian national for a parking offense. She was beaten, fined, and taken into custody where she was r***d by the London police. She used her experience to expose the racism, sexism, and police brutality of the London Police. 📣

In 1973, Morris went on to form the Brixton Black Women’s Group (BBWG) focusing on women's experience in the Black Panthers. She also played a significant role in the squatters' rights campaigns in Brixton. In 1978, she became a founding member of the Organisation for Women of African and Asian Descent (OWAAD) and edited the organization’s magazine FOWAD! 🧾 before passing away in 1979 at 27 years old.

I think it is safe to say that Michelle Obama is probably our favorite Obama! Sorry, Barrack. 🙌 👑

Michelle hit the international stage as the wife of the first Black president of the US. She showed grace, poise, and relatability as the First Lady. 🥰

Not to mention, her Let's Move campaign and other initiatives supporting healthy families, education, and the families of service members. She has accomplished so much in public service before and after the White House. 📣

Before the White House, Michelle Obama was assistant commissioner of planning and development in Chicago’s City Hall. She was the executive founding director of the Chicago chapter of Public Allies, an AmeriCorps. In 1996, she started working in higher education as the associate dean of student services, where she developed the university’s first community service program. In 2002, she went to work for the University of Chicago Medical Center, where in 2005 she became the vice president of community and external affairs.

Since leaving the White House, she continues to be a force of nature. She continues her advocacy for the federal improvement of nutrition standards and nutrition support for families. She advocates for gender equality in tech and education while continuing to supporting voter registration. 📣

If you haven't heard yet, she published her hugely successful book "Becoming" in 2018. During the pandemic when we perhaps needed it most, Netflix launched its documentary on Michelle Obama, Becoming, and in July, she launched The Michelle Obama Podcast on Spotify. You can also catch her as the executive producer and presenter of the Netflix children cooking show Waffles + Mochi.

This tasty recipe for Vegan Poptarts is brought to you by Jenna Graham. 😋 🍩

Jenna Graham and I (Emer) met almost a decade ago in a bakery in Rhode Island. Jenna started as my manager, running a staff of over 10 in a busy tourist town with a heavy footfall of hungry customers and display cabinets full of meticulously decorated baked goods. 😋

I was always impressed by Jenna’s work ethic. The place ran seamlessly, even with the line out the front door, amongst the chaos of children dropping cupcakes and frosting all over the floor. 🧁

I still don’t understand how people managed to get frosting under the seats. Under the seats? But, it was fun to go to work with Jenna. In my opinion, it’s the best way to be a manager. 🎂

As a shout-out to exceptional women past and present, I wanted to give a short out to Jenna, and she kindly provided a recipe contribution to the ‘Herstory’ edition.

There are two options for this recipe: Apple Cinnamon 🍎 and Blueberry 🫐. You can get both in our Issue 2!

Vegan pop tart recipes by Jenna Graham. Make a blueberry or perhaps try an apple cinnamon.
