The Ice Explorer onto the Athabasca Glacier!

I've viewed quite a few glaciers in my time here in Western Canada, and have seen this one a number of times, even taking the hike to the toe of the glacier earlier in the day.

I treated myself to a ride on the Ice explorer, which is an experience in itself, down onto the Athabasca glacier.

My very first time standing on a glacier that has been here for thousands of years. And what an experience!

I even got to bottle up glacier water from one stream and taste pure, fresh water. Definitely take a bottle if you decide to go!

An amazing view and a delicious vegan meal - what more can I ask for!

Made it to the Icefields Centre, camping opposite to the Athabasca Glacier and the other 4 smaller glaciers from the Columbia Icefields.

This was another meal I prepared and brought with me camping. It was my first time ever using Jerk seasoning and I have to admit, I was a little apprehensive as to whether I would like the combination of ingredients, but omg, this was absolutely delicious and pretty addictive.

I have the recipe at home and will have to credit the original creator once I return to get that information. But this is a definite keeper: shredded jackfruit, red and green pepper, with jerk seasoning, in a creamy coconut milk and vegan cream cheese sauce, over pasta.

Heading south on the Icefields Parkway and just before the road climbs up towards the Athabasca Glacier I spotted this beautiful hike in aptly named beauty creek.

What starts as a flat stroll for just under a kilometer quickly becomes a steep trail following beauty creek as it winds its way down the mountain.

I passed a couple of smaller falls, some canyons, and then made it to the largest falls on the hike, Stanley falls.

A great short hike that attracts far fewer people than the other canyon hikes here in Banff and Jasper National Parks. So, there's plenty of time to enjoy, unrushed and very peacefully,

On another early evening drive to a nearby waterfall here in Jasper National Park, I stumbled across this majestic Elk. He was wondering through the foliage on the side of the road, nibbling on whatever he fancied.

I finally did it! After many times visiting the Canadian Rockies, I decided to take the Maligne Lake Cruise down to the world famous Spirit Island.

Words cannot describe the beauty of this hidden gem. The pictures look like paintings and I can tell you the scenery will take your breath away!

Although the water looks incredibly inviting, and even though the day had temperatures in the mid thirties Celsius, this lake is glacier fed and remains about 4 degrees Celsius. It is a fairly deep lake reaching almost 100 meters (over 300 feet) at its deepest point.

It was an absolutely amazing experience to see this lake and the incredible Spirit Island and the mountainous backdrop first hand. I highly encourage a visit if you're in the area!

Grateful to be able to experience these beautiful lakes in the Canadian Rockies.

Medicine lake, stunning from every direction, and otherwise known as the disappearing lake. In summer, glacial melt causes the lake to fill faster than its underground sinkholes can drain it. However, in fall and winter, drainage exceeds the inflow and the lake disappears! Fortunately I got to see it during this time to capture the beautiful colours.

I was lucky enough to quickly see this black bear pop out of the trees and cross the road just in front of me in Jasper National Park. The bear quickly headed up the bank and into the trees. Like me the bear was travelling solo and enjoying the beautiful scenery!

Another evening exploring adventure!

This time, I took the winding, narrow road up to the base of Mount Edith Cavell in Jasper National Park. After a short, steep climb, I was rewarded with views of the mountain, the Angel glacier and Cavell pond.

I couldn't help myself, and had to take the rocky trail higher up towards the meadows for some better views. I spotted a few wildflowers on the route. The trail was closed going further into the meadows as it is still under snow and to protect the environment until later in July.

A great evening out and my first adventure this year back in Jasper National Park.

Before camping this time I premade quite a few meal options to make my trip easier. This vegan sunflower seed based cheeze is delicious, is so quick and easy to make, and it stores very well in the fridge. Shout out to for this great recipe. I've had it on wraps and sandwiches and it slices well. This time I added it to my burgers for an added flavour burst!

Out and about in William A. Switzer Provincial Park near Hinton, Alberta

First three pics: A hike up Athabasca Lookout Viewpoint. A short, steep hike well worth it for some incredible solitary scenery. It was 35 C outside during the day so I waited until the evening and fortunately the hike up was also shaded in the trees.

Last two pics: A drive this time to Solomon lookout, just south of the provincial park. A beautiful setting for a picnic and to admire the views of the Athabasca river and valley.

Nothing like a homemade vegan spicy soup when feeling a bit under the weather!

I got run down recently and had an urge for soup. With nothing in the cupboard, I threw together this quick and delicious soup and made enough for several servings. It definitely is quite addictive, my girls couldn't stop eating it!

I don't recall whether I adapted the recipe from something I saw in the past and if so I will happily acknowledge the creator but this is what I threw in. I used my large instapot to make the soup.

Spicy tomato chickpea soup

I large onion, diced. Sauteed in 1tbsp olive oil in a large pan.
Add 1 tbsp cumin, 1 tbsp coriander and 1 tsp crushed red pepper, mix for 30 seconds until fragrant.
Add 1 tbsp ginger and garlic paste
Add 2 tbsp tomato paste. Mix for 30 seconds.
Add 796 ml can of diced tomatoes. Cook for 10 minutes.
Blend everything with an immersion blender.
Add 490 ml can of full fat coconut milk.
Add 4 cups of vegetable stock.
Stir and mix well and continue to cook.
Add 540 ml can of cooked chickpeas
Add 1 to 2 tbsp sriracha or to your taste preference.
Add 1 tbsp maple syrup.
Salt and pepper to taste.

My daughters fancied a curry for dinner this evening, so we made the vegan old school British chicken curry thanks to the recipe from traditional plant based cooking.

Haven't made this for a while and had to sub some ingredients but what a fantastic dish. Absolutely delicious!

A lovely weekend walk with my daughters strolling on the snowy and sometimes slippery trails near Lesser Slave Lake.

Started off with silhouettes in the sunshine and ended with the clouds rolling in and snow showers.

Last night's concoction: fridge scraps of cabbage, carrot, a block of tofu that needed using, left over curry sauce, with some onion, mushrooms, peas and rice.

The result: a tasty curried rice tofu veggie dish.

And as usual, enough for at least two more meals!

Deep freezer finds!!

Oh I love it when I come across a tub in the freezer. This one I had forgotten to label so it was a surprise! What I found was a vegan chili I had made sometime this year.

Fantastic when I have ran out of food in the fridge and no ideas for supper - this came to my rescue!

I'm doing a little better so I made a vat of kale and tomato soup over the weekend. This recipe did call for vegan tortellini but I had none; so it went without!

A little self-care reminder!

You may know that for the past 3 years I have suffered with chronic vestibular migraines amongst some other health issues. You may also know that through most of my life self-care was a very distant philosophy for me.

I've had to really implement many changes including prioritizing, pacing myself (that's still a difficult one as you can probably tell from my trips!), and allowing time for self-care. I still struggle & having these little positive reminders is helpful.

In Leduc after getting back from the UK, I thought I'd give Red Swan Pizza a try. I got a large mushroom, olive & vegan cheese option. I have never had a pizza with sesame seeds on the crust before but it was really delicious.

I was a little hungrier this time than usual and so I only managed to save 2/3 of it for a couple more meals!!

Family reunion: With my mum & brother.

Although I saw my mum in 2020 when she visited Canada, this is the first time all 3 of us have been together in 20 years.

A quick stop in Wales again!

Well, my brother made me another vegan meal: this time a bean "meatloaf" style main with potatoes & vegetables. A great homecooked meal!

I got caught up once again with online work now that I had some reliable WIFI at his home.

I finally found myself a vegan cooked breakfast!

It was good to have a bit of variation to what I usually cook at home: the plant-based "black-pudding" was a novelty; and the hummus with chili sauce went well with everything.

Unfortunately, despite me searching over and over, I cannot find the restaurant to give credit. It was a lovely place on Dale Street & so grateful for the vegan option!!
