Vegan sushi rolls with Thai peanut sauce

I made quite a few vegan sushi rolls with my daughters over the weekend. Had a few tonight with this delicious Thai peanut sauce thanks to . This sauce is amazing and I've made it a few times with both peanut butter and almond butter and it is so tasty and addictive. Perfect as a dip for any veggies, spring rolls, summer rolls, sushi.

Stuffed acorn squash

I had three squash to use, so I made the vegan stuffed squash with quinoa, walnut and cranberry filling, thanks to . Simple, delicious, nutritious, and very filling. Done in 40 minutes with very little work.

Sunday evening cooking with my daughters: a hearty vegan stew.

Nothing like a hot bowl of delicious vegan stew on a cold winter's day.

A great recipe done in my pressure cooker. I didn't have kale on hand but I did add a cup of red lentils for even more substance and to help thicken. A couple of bowls each with crusty bread and still enough left over for another meal.

Endless apple crumbles!

Since arriving home after my trip, I found my two apple trees were loaded with apples. So after picking them, I've been making apple crumble after apple crumble! I'm slowly adapting the recipes to make a gluten free option for my daughter; and they are tasting pretty damn good.

A late thanksgiving's meal with my youngest daughter.

I had a tofurky in the freezer, so we made a delicious vegan late Canadian thanksgiving meal complete with roast potatoes and carrots, cabbage, peas, stuffing and gravy. Let's just say it went down very quickly!

Views at the Mammoth terraces in Yellowstone.

I wasn't sure if I was going to have time to get here before my trip ended, but I made it and I'm so glad I did. This park has some unbelievable scenery!

Trying to find a parking spot at the upper terraces proved unsuccessful so I made my way down to the lower terraces and spent a few hours exploring on the extensive boardwalk trails viewing these amazing sights.

A day of wildlife viewing.

I was walking on one of the trails in Yellowstone, when all of a sudden I heard this splash over to my left. To my surprise it was an eagle that dropped quickly into the stream looking for fish. I quickly got my camera and caught the eagle flying away.

Later, as driving through the park, a lone bison was busy grazing on the grass verge.

And finally, I spotted an elk also wondering along the roadway.

It's so fantastic to be able to enjoy the beauty of this place with these incredible animals.

The Grand Prismatic Spring site in Yellowstone National Park.

A short stroll once I finally found a parking spot, led to these incredible views of the grand prismatic spring, the colourful bacterial mats, and the excelsior geyser crater with its beautiful blue hot pool.

This park is non-stop with incredible scenery and experiences.

I spotted this vegan Thai Curry in the freezer section at Whole Foods while on my travels going through Portland, Oregon. It was on sale for a couple of dollars, and I thought, well, why not...it will come in handy somewhere when I need a quick meal in my camping trailer.

So, I got two of the curries, as well as some other vegan goodies for the trip. Well, the curries made it until I reached Wyoming, at which point I needed an easy and quick meal. It hit the spot nicely. I do love a good tasty curry.

Hot pools, bacterial mat pools, and a few geysers of West thumb and Old Faithful areas of Yellowstone National Park.

The first three photos are in West thumb, and this site is right next to Yellowstone Lake.

The remainder are from the few hours of walking around the Old Faithful area, with its numerous pools and geysers.

Such an amazing place to explore, witnessing these geological features first hand.

Mount Washburn in Yellowstone National Park.

What a hike! The views started just after leaving the trailhead, and kept getting better and better. I started this 10km hike later than I planned, and I didn't know if I would have time to get to the peak and back down before dark. Once I got moving, I couldn't stop! The scenery was breathtaking.

So grateful I had the opportunity to take this switchback trail up to the peak of Mount Washburn. This is another highly recommended trail, located just north of Canyon Village in Yellowstone National Park.

Welcome to the Grand Canyon of Yellowstone.

Just south of Canyon Village is this absolutely incredible canyon. I took both the north and south rim access roads and trails to explore this area, viewing the upper and lower falls, and then the amazing sights and colours of the river canyon.

It was another one of those places where with every step forward on the trail and around every corner there is another incredible viewpoint. An absolute not-to-miss experience if you are visiting Yellowstone National Park.

A little late posting but this was my final leg of my trip: Yellowstone National Park!

I've wanted to visit this park since I was a teenager; and finally some 30 years later, I eventually got here!

My first day I was greeted with the views of a herd of wild bison enjoying the river valley and the hot steam vents. Right across the road, I went on a small hike to view the mud volcano area.

What a great start to my final days of my trip here in Yellowstone.

Vegan pizza treat.

I cannot remember the last time I bought a pizza, as I have been in the habit of making my own at home when I fancy one. But I was grocery shopping on my travels and this popped out at me in the frozen section and I couldn't resist.

It fit in my smaller oven in the camping trailer, thank goodness, so I cooked it up and had it with fries and a salad. Enough here for a few meals.

String Lake loop trail.

I took the 6 km loop trail around String Lake, my only hike here in Grand Teton National Park. I chose this hike as it was a good length, had spectacular views, and it was less busy than nearby Jenny Lake so I had the best chance of finding a parking spot with my camper trailer. Fortunately there was one RV parking spot left when I arrived so I was able to do this beautiful hike before heading further north.

A perfect spot for lunch!

I bought some vegan chicken pieces and had them left over in the fridge; so I put together a quick, healthy salad.

I couldn't ask for a better spot for lunch: admiring the Teton range from the comfort of my camper dinette.
