Tried something new with my two page spread of mood trackers, habit trackers and my memories page. Visually this page makes me so dang happy. I attribute some of that to Feb’s 28 days. Also, let’s appreciate this Fairy Lights kit because absolutely gorgeous too!!!

Prepping for next week… I’m not ready. The hubby and I have been on vacation all week. We took a short 3 day trip to Grand Rapids and now it’s time to prep for the week. Menu Plan for the coming week:
Monday - Turkey Tacos
Tuesday - Crock Pot Beef and Barley Soup
Wednesday - Homemade Chicken Nuggets and Tater Tots
Thursday - Chicken Broccoli Alfredo Freezer Meal
Friday - Fend for Yourself
Saturday - Pierogis and Salad
Sunday - Dinner Out!!!

Super simple and easy meals that I don’t have to think too hard about. Dinner doesn’t have to be complicated! Using up somethings I have and making my own Chicken Nuggets in the air fryer for quick and easy dinners.

Cooking up another big batch of chili yesterday! My dad came over and enjoyed dinner with us and then the rest will go in the freezer once I get the jar a little emptier so it won’t break.

We had our wedding reception on Sunday, nearly 1 year to our 1st Wedding Anniversary. We got bbq catered for dinner and had leftovers!!! So now I have 15 sliders for the freezer and for future easy meals. I also still have extra left over brisket and pulled chicken going to the freezer as well. Yum! Waste nothing!!!

Made a super yummy and quick dessert tonight! These Apple Pie Crescent Bites were delicious. I used half a can of apple pie filling, one package of crescent rolls and mixed up some cinnamon sugar to sprinkle on top. Baked for about 7-8min in the airfryer at 375 degrees. Fast and great!

My morning routine! I try almost every morning to come and sit and fill in my bujo! I write a review of the day before, color in my mood for the previous day, and check my finance logs and update with transactions as needed. Today Sage was fixated on the ceiling watching light reflect off my ruler. This is a nice way to start the day. Materials:

He came to work early today, to snuggle up, you can’t hear it but he’s definitely purring up a storm. He’s also my own personal heater and we’re both very happy with this arrangement.

Creamy Chicken and Brown Rice Soup for dinner tonight. This was gonna have potatoes but they were not usable, so we did a quick pivot and used up the last of the brown rice on hand. We’ve got lots of rotisserie chicken, carrots, onions, celery, garlic, and some heavy cream to make it nice and luxurious!

Not pretty, but they smell divine!!! Pumpkin Walnut muffins from her Small Batch Baking where I subbed out walnuts for chocolate chips! Waiting 10min is so hard!!!

I used Small Batch Cookbook to make these Applesauce muffins!!!! I took her Pumpkin Walnut muffins and made plain applesauce muffins. I didn’t have any walnuts at home. So these were delicious. I cooked them in the airfryer at 350 for 13 minutes.
