🌰 Pecan Pie Balls 🥧
If you’ve ever wished you could just eat the middle out of a pecan pie, you’re going to love my super easy, super delicious pecan pie balls!
And you’ll never guess how speedy and fun they are to make… Or that they’re sugar-free, keto-friendly, and junk-free all thanks to my dessert secret weapon… Simply Desserts salted caramel pudding mix!
The Simply Desserts difference is that it’s made with all-natural ingredients and sweeteners, so no weird aftertaste..and it’s so versatile you can use it as the an all-in-one flavor, sweetness, and texture bump in all of your dessert creations! 🙌🏼
In a saucepan, combine one stick butter + 1 cup heavy whipping cream. Mix in one box Simply Desserts salted caramel pudding mix and cook over medium low, whisking occasionally, until you get a texture thicker than a caramel sauce but a bit softer than a soft caramel candy.
Remove from heat, stir in 2 cups chopped pecans + 1 cup pecan flour (or pecans you’ve powdered in the blender) -you can also use almond flour instead if you like. Roll the mixture into balls, line on parchment, and stick in the freezer about an hour or until firm.
Melt one bag sugar-free chocolate chips (I used white chocolate but you could use white, dark, butterscotch etc.) in the microwave in 30 second increments, stirring in between until just melted. Dip your balls into the chocolate, use two forks to drain and remove, set back on parchment and sprinkle with chopped pecans while still wet. Pop in the freezer a couple minutes for the final set and enjoy.
