Cranberry & Spinach Stuffed Chicken Breasts with Brie
Ingredients:
4 large chicken breasts (boneless, skinless)
1/2 cup fresh spinach (chopped)
1/2 cup fresh cranberries (chopped)
4 oz brie cheese (cut into small cubes)
2 garlic cloves (minced)
1/4 cup chopped walnuts (optional)
1/4 cup cream cheese (softened)
1/2 tsp dried thyme
1/2 tsp garlic powder
Salt & black pepper (to taste)
2 tbsp olive oil
Instructions:
Preheat Oven: Preheat the oven to 375°F (190°C). Grease a baking dish.
Prepare the Chicken: Using a sharp knife, cut a pocket in the side of each chicken breast, being careful not to cut all the way through.
Make the Filling: In a medium bowl, combine chopped spinach, cranberries, brie, minced garlic, cream cheese, walnuts (if using), thyme, garlic powder, salt, and black pepper. Mix until combined.
Stuff the Chicken: Stuff each chicken breast with the prepared filling and secure with toothpicks to keep the filling inside.
Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.
Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Serve: Remove the toothpicks and serve warm. Pair with a side of roasted vegetables or a fresh salad.
