Back at it again with the cooking!

Backed chicken breast with grilled asparagus and white rice/corn

Seasoned chicken with salt, pepper, garlic, cumin, oregano, onion powder, and chili powder

Baked chicken for 15 minutes each side.

I first want to start off and apologize for not posting as often as we have wanted to!

Let’s just say we have been given blessing on top of blessing on top of blessing and with blessings come change! Well we have been trying to adjust to our new norm but anyway..... I made dinner last night but we didn’t get to eat as a family. My mom had a last minute thing and Daniel and I had our weekly meeting with God 🤟🏽 and we ended up having coffee for dinner 🤣

So when we got home we just put up the food I had already made and said I would eat it for lunch.

Man oh MAN! These supreme nachos are sooooo good! TOOT TOOT! 🎺

I have so much queso and ground beef left over I need help eating eat! Lol
My mom bailed on me for lunch again 🙄 and Daniel has limited restrictions on heating up food since he is not home so it’s just me and all this queso..... 🥺

Ingredients:
- chips
- eazy melt queso from H‑E‑B
- jalapeños
- ground beef with grilled onions and tomatoes (seasoned with onion powder, salt, garlic, pepper, cumin, oregano, and paprika)
- shredded lettuce
- tomatoes
- sour cream
- guac
- olives (not pictured because I don’t like them 😅)

With Fall 🍂🍁 starting and a cold front coming in, we decided tonight we would have chicken tortilla soup 😍

Let me tell you... it was good for the soul!

Have you ever had the tortilla soup from Saltgrass? Well I swear I just made it lol! This soup was full of flavor and veggies 🤣

I will say this took forever to make lol really it was the prep. The prep took forever but to cook was easy.

Ingredients:
- unsalted butter
- olive oil
- bacon drippings 🤤
- green bell pepper
- yellow onion
- celery
- carrots
- cilantro
- corn
- tomatoes
- white pepper
- black pepper
- chili powder
- cumin
- seasoned salt
- minced garlic
- chicken stock
- chicken breast (I cooked this first in the oven. Seasoned the breast with salt, pepper, garlic, cumin, and parsley. I baked in the oven for 15 minutes each side at 350. Let cool and diced.)

To make my soup a lil thicc 😂🤣 I did a roux in a separate pan with butter and flour and then added to soup and let simmer for 15 minutes 🙃

Also you can use cilantro lime rice but I had some leftover Mexican rice from yesterday so I used that 😁

I topped with fried wontons and fresh avocado 🤤😍

Tonight’s dinner consisted of Queso con Chile, frijoles, and arroz!

This reminded me so much of my grandfather 👴🏽 as he used to make this meal often 🥰

I made my salsa with jalapeños, pablano peppers, red tomato, cilantro, salt, garlic, and a little bit of water.

I used Oaxaca cheese for the main dish. So once the salsa is blended in the blender I sauté it in a pan and then add the cheese. I little melt and mix it all together.

My beans: I “cleaned” them, added two garlic cloves, added half of an onion, and salt. I added water and brought to a boil. I watched it for about a couple hours and added water as needed until my beans were nice and soft.

My rice: I used mahatma rice and I bring my rice to fry in a non skillet cast iron (seems to always be on point in a cast iron 😍). Once almost all the way browned I add onion. I then keep browning until I am satisfied with both the rice color and translucent onions. I add water and tomato bouillon (yes I know most people add tomato sauce and you can with but I don’t 👀 this is just how I do it... like me... LUCY...😁) I also don’t measure the bouillon... I literally feel it in me when to stop 😂 and then I add cilantro and let the thing boil and cook under a lid. Then I also know when to check to see if the water has evaporated and check the consistency of the rice. I also add a little more water depending on the texture and then boom I’m done. 😅

Oh and I also made tortillas 😳 I know .... shocker 🤣

This morning breakfast was amazing! Especially for a Monday! It’s a great start to the week.
I slow cooked a chuck roast over night and made tortillas in the morning. Daniel made the eggs! 💕

Chuck roast was seasoned with salt, pepper and garlic powder. I also added 2-3 Bay leaves! Put some water about halfway from the chuck roast. So this depends on the thickness of the roast. I slow cook it for 6 hours on low!
The aroma when it’s done is so good lol! I woke up to the smell and was so ready for breakfast 🤣

And then I also made a banana milkshake for the “now I need something sweet” 🤣

Is this how y’all feel? 🤣😅💀 Maybe we should write our ingredients in our post now 🤣🤣🤣

How we became US

Whew Chile! lol

We have known each other and dated since 2009, we graduated from Midwestern State University in 2016 and we married in 2018. We continue to do life together and well I (Lucy) decided “Let’s make a Youtube channel [more so for self love, inspiration and my hobby for make-up] and put of content of our journey and life”. So here we are... sharing our experiences with people who we may or may not know.
