NIGERIAN OKRA SOUP RECIPE SERVINGS - 4 PREP TIME - 15mins COOK TIME - 1 hour TOTAL TIME - 1hr 15mins INGREDIENTS 1 kilo beef ½ kilo kpomo ½ kilo fresh fish, or 2 dried fish 2 tied stock fish Salt to taste 2 seasoning cube ½ tsp rosemary leaves 1 tsp curry 1 tsp Thyme 2 tsp dried pepper or less 6 tsp ground crayfish or more 1 cup palm oil 2 cups grated okra 2 cups sliced okra 1 cup sliced pumpkin/ ugwu leaves DIRECTIONS 1. Add beef, stock fish Salt, peppers, curry, Thyme, rosemary leaves to a pot. Allow to cook for 6 to 8 mins on low to medium heat. 2. Add kpomo, dried fish and water enough to cook the beef till soft( 20- 25 mins) 3. Remove the dried fish, add in crayfish, peppers and palm oil. Cover and allow to cook for 5 mins. 4. Add in grated and sliced okra, cook for 2 mins before adding the fish back into the soup. 5. Cook for about 2 more mins. Remove and serve. 6. Enjoy with your favorite swallow. I served mine with semolina. So delicious NOTE. You can use any protein of choice. If you have already cooked protein, then total cook time is about 20mins. There are other beautiful ways to cook okra, I'll share them soon.

BAKED TWISTED DOUGHNUTS 🍩 Servings: 14 - 16 Time : 4 Hours INGREDIENTS 4 cups all purpose flour + more for dusting. ½ Cup sugar 3 teaspoons instant yeast 1 teaspoon salt ½ - 1 cup water. Butter or powdered sugar after baking DIRECTIONS 1. Combine all the dry ingredients in a bowl ( flour, salt, yeast and sugar) 2. Add in water gradually. Starting with half a cup, then add more using a tablespoon each time till it forms a soft dough. 3. Knead for about 8 to 10 minutes using a mixer or 30 minutes by hand on a slightly floured surface. 4. Rub a bowl with vegetable oil and rub the dough round the bowl, ensuring the surface of the dough is covered in oil. 5. Cover the dough with a kitchen towel and allow to rise in a warm place for 2 hours or till it doubles in size. 6. Punch the air out of the dough, turn on to a lightly floured surface and divide dough into 14-16 equal parts and roll out each dough to form a string and then form the twist. 7. Transfer each twisted doughnut to a parchment paper linked baking tray. 8. Turn on the oven at this point. 9. Cover tray with a kitchen towel and allow dough to rise for one hour. 10. Brush with egg wash 11. Bake for about 30 minutes. 12. Brush with melted butter as soon as they come out of the oven and dust with powdered sugar (both optional) 13. December Baking Series. Episode 2. MUFFINS MUFFINS Servings: 12-16 Time : 1 hour INGREDIENTS ½ Cup neutral oil or melted butter 2 large eggs 1 cup granulated sugar 1 teaspoon vanilla flavor 2 cups all purpose flour 2 teaspoons baking powder ⅛ teaspoon salt ½ Cup milk DIRECTIONS 1. Pre heat the oven( I use a gas oven, I usually bake at medium heat, expect recipe calls for high temperature) 2. Line/grease the cupcake pan 3. In a mixing bowl, mix together melted butter or neutral oil and sugar 4. Add in eggs and vanilla flavor, mix till well combined. 5. In a separate bowl, mix flour, baking powder and salt till combined 6. Add in half of the flour mix to the batter and mix till combined. Then add in the milk, mix it in before adding in the rest of the flour mix, mix till just combined. 7. Share the batter into the muffin tin filling up to ⅔rd of the muffin tin. 8. Bake for about 20minutes or till a toothpick inserted into the middle of the muffin comes out clean. 9. Allow to rest for about 5-10 minutes before turning it on to a cooling rack. 10. BASIC VANILLA CAKE Servings: 6 to 8 persons Total time : 2 hours INGREDIENTS 250grams room temperature butter 1 cup sugar 1 tablespoon vanilla flavor 4 medium sized room temperature eggs 1 cup full cream milk 2 cups all purpose flour 1 teaspoon baking powder ⅛ teaspoon salt. DIRECTIONS 1 pre-heat the oven( I use a gas oven that doesn't have temperature regulations, so I preheat at medium heat) 2. Prepare the baking pan by greasing with butter and dusting with flour. 3. In a mixing bowl, mix dry ingredients: flour, baking powder and salt and set aside. 4. In a separate mixing bowl, cream butter, sugar and vanilla flavor till light in colour and fluffy in texture. 5. Add in the eggs to the cream mixture, two at a time ensuring the eggs are well incorporated. 6. Alternate adding the flour mixture qnd milk, ensuring to start with flour mixture and end with the flour mixture( flour mix, milk, flour mix, milk, flour mix.) Note! Do not overmix, just mix till flour is just incorporated. 7. Pour batter into the prepared baking pan, batter should occupy ⅓rd of the pan to leave room to rise. Bake for 1 hour or till a toothpick or skewer inserted into the middle of the cake comes out clean. 8. Allow the cake to rest for 10 minutes in the baking pan before turning it onto a cooling rack. 9. Cool completely before icing 10.
