INGREDIENTS:

* 1 medium beetroot, peeled and chopped
* 1 cup (165 g) frozen pineapple chunks
* 1 medium ripe banana
* 1 cup (240 ml) almond milk or milk of choice
* 1/2 cup (120 g) Greek yogurt
* 1 tablespoon (15 ml) honey or maple syrup (optional)

DIRECTIONS:

1.
In a blender, combine the chopped beetroot, frozen pineapple chunks, banana, almond milk, Greek yogurt, and honey or maple syrup, if using.

Blend until smooth and creamy, stopping to scrape down the sides of the blender as needed. If the smoothie is too thick, add a bit more almond milk and blend again until desired consistency is reached.

Pour the smoothie into two glasses and serve immediately.

INGREDIENTS:

* 1 pound (450 g) thinly sliced beef sirloin or ribeye
* 1/4 cup (60 ml) soy sauce
* 2 tablespoons (30 ml) mirin
* 2 tablespoons (30 ml) honey
* 1 tablespoon (15 ml) sesame oil
* 3 cloves garlic, minced
* 1/2 teaspoon (1 g) black pepper
* 1 medium onion, sliced
* 1 cup (75 g) mushrooms, sliced
* 3 cups (600 g) cooked steamed rice
* 2 green onions, chopped
* 1 tablespoon (10 g) sesame seeds

DIRECTIONS:

In a medium bowl, combine soy sauce, mirin, honey, sesame oil, garlic, and black pepper. Add the thinly sliced beef to the marinade, ensuring each piece is well coated. Let marinate for at least 15 minutes, or up to 2 hours for more intense flavor.

Heat a large skillet or wok over medium-high heat. Add the marinated beef and cook, stirring occasionally, until browned and cooked through, about 4-5 minutes.

Add the sliced onions and mushrooms to the skillet with the beef. Cook for an additional 3-4 minutes, or until the vegetables are tender.

* 1/2 medium ripe banana, sliced
* 1/2 cup (120 ml) unsweetened almond milk or coconut milk
* 1 tablespoon (15 g) chia seeds
* 1 tablespoon (15 g) honey or maple syrup (optional)
* 1/2 cup (120 g) ice cubes
* Garnish: mango slice and mint sprig (optional)

DIRECTIONS:

1.
In a blender, combine mango, kale, banana, almond milk or coconut milk, chia seeds, honey or maple syrup (if desired), and ice cubes.

2.
Blend until smooth and creamy. Adjust sweetness as needed.
