THREE BEAN & A BABY TOMATO SALAD ,

Beans beans they don’t have to make you fart 💨 TIP: Soak your dried beans overnight before you cook them then make this salad, say a prayer of gratitude, & enjoy!!

Ingredients

Salad

1 bell pepper
3 celery stalks
1⁄2 cup parsley
1 can red kidney beans
1 can great northern beans
1 can pinto beans
2 tomatoes

Dressing

1⁄2 cup evoo
1⁄2 cup lemon juice
2 tablespoons dijon mustard
1 teaspoon salt
1⁄2 teaspoon pepper
2 tablespoons maple syrup

Instructions
Cut pepper, celery, tomatoes, & parsley

Drain and rinse all 3 cans of beans

Add beans & chopped veggies into a bowl

Mix together the dressing

Drizzle dressing over the salad & mix

1 big dill pickle
1/2 cup plain yogurt
1/2 cup mayo
Juice of 1 lemon
1/3 cup/small bunch fresh dill
1/2 tsp salt
1/2 tsp pepper

Blend it, say a prayer of gratitude, and enjoy!! 💛

AVOCADO SMOOTHIE BOWL 🥣 🥑

Next time you make a smoothie or smoothie bowl, try swapping your banana for avocado 🥑 !! 1 avocado with plant milk a little cardamom or cinnamon - blend it up. Say a prayer. Drink it up.

BANG BANG TOFU 😋

If you find tofu boring, it’s not the tofu, it’s how you’re making it!! Try this Bang Bang Tofu & let me know what you think!

INGREDIENTS:
450g packet extra firm tofu
2 tbsp corn starch
2 tbsp oil
1/2 cup vegan mayo
2 tbsp sambal oelek
1/2 tbsp rice vinegar
Agave 2 tbsp
1 tbsp soy sauce
1/2 tsp salt
Sprinkle of pepper

METHOD:
- Cut tofu into cubes out into a bowl and sprinkle over the corn starch. Give it a goooood mix
- Heat oil on a large pan at medium heat and throw tofu in let one side crisp and then keep turning or flipping the tofu over till all sides are crisp
- Add all sauce ingredients into a bowl
- Once tofu is crispy add to sauce
- Garnish with Red chilli slices and coriander
- Say a prayer of gratitude and serve with love eat with joy 💛

ROASTED VEGGIE & QUINOA SALAD 🥗

Ingredients

Salad

1 can chickpea
10 mini bell pepper
1/2 cup cooked quinoa
2 cups kale (finely chopped)
1/4 cup vegan feta
1/2 avocado

Dressing

1/4 cup extra virgina olive oil
1/4 cup lemon juice
1 tablespoon mustard (Dijon or English)
1 tablespoon agave (or maple syrup)
3/4 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon Italian herbs

Instructions
Cook quinoa according to package

Chop up the mini bell peppers

Strain and rinse the chickpeas

Lay the cooked quinoa, chopped peppers, and rinsed chickpeas on a baking sheet

Bake at 450˚F for 20 minutes

times may vary - cook until all are crispy
Wash the kale and finely chop it

Add the kale to a bowl and layer with the cooked quinoa, chickpeas, and peppers

Add all the dressing ingredients to a jar and mix together

Drizzle dressing over the salad

Top with vegan feta cheese and avocado

♡Say a little prayer, do a little dance, sprinkle a little love, and serve with happiness ❤️

If you’re someone who finds raw salads difficult to digest, try a roasted salad! When you cook your veggies and have a salad filled with good fats, your stomach will be much happier 😁

NEW SERIES: LETS GET SAUCY- 1! Prob my favorite yet…if u know me at all you’ll know. It’s alllll about the for me!!! RECIPE

Hummus
1 cup basil
1/2 cup parsley
1/4 cup dill
1/4 cup fresh lemon juice
1 400g can butter beans
1/4 cup tahini
2 tbsp olive oil
1 tsp salt
1 fresh green jalapeño chopped

- add all ingredients into blender and blend till smooth

Crispy butter beans

1 400g can butter beans
1/2 tsp salt
1 tsp paprika
1 tbsp nutritional yeast
1/2 tbsp mixed dried herbs

- Drain beans and keep the liquid for the sesame pita
- Dry with paper towel
- Place onto baking tray with remaining ingredients and toss into spices
- Bake at 170c for 15 to 20 minutes till crispy

Sesame pitta
2 pitas
1/4 cup white sesame seeds
1/4 cup black sesame seeds ( for color but you can just do white if you don’t have black)
2 tbsp dried mixed herbs
2 tbsp nutritional yeast

- cut pitta into soldiers
- In one bowl have the aquafaba ( saved bean water)
- In another bowl mix the remaining ingredients.
- Dip into bean water aka aquafaba then dip into seed mix and pat till fully covered
- Bake at 200 c for 15 to 20 minutes turning half way till crispy

We are all creatures of habit we feel and by , our and all need regulation and consistency to feel settled. More than that, and regulated practices show our commitment to things that matter in our . I’ve had a hectic work schedule lately that got me eating at random hours sleeping at different times which ended up effecting the rest of my . RECIPE ⬇️ PERFECT AUTUMN SALAD 🍂

1 medium butternut squash
1 tsp cumin powder
1/2 tsp cinnamon powder
1/2 tsp paprika
1 tsp salt
1/2 cup chopped walnuts
1 cup cooked quinoa
1/2 cup mint
1/2 cup parsley
1 cup Cannelini beans
1 whole pomwgranate

Dressing
1/3 cup olive oil
1/3 cup lemon juice
1/8 cup agave syrup
1 tsp salt
1 tsp pepper
1 tbsp Dijon mustard

THE MAGIC
1. Preheat oven to 425 F
2. Peel and chop butternut into cubes
3. Place on baking tray and add oil, cumin, cinnamon, paprika and salt. Give it a good mix
4. Place in oven for 15 to 20 mins till cooked
5. Cook your quinoa, Peel your pomegranate, chop your walnuts, parsley and mint
6. Add all dressing ingredients into a jar and shake
7. Add all ingredients into a bowl pour on dressing (you may not need all of it) and give it a mix
8. Say a prayer of gratitude sprinkle some love and eat with joy 💛

Actually I could do with reading this every day...at every moment ! GRATITUDE can never be OVERDONE. there’s no such thing as ‘can you just stop being so grateful ITS TOO MUCH 😂😂’. No. The heart can be forever flowing with gratitude..it never needs to stop and there’s absolutely no limit. I know we hear the word GRATITUDE so much sometimes we can become so desensitized to it. Yes yes yes I need to be grateful I GET IT. But noo don’t just see it as a word. See it and embody what the word means to you. A word is simply just a word without feeling and meaning behind it...so yes there’s a whole lot of gratitude quotes and memes. But if we truly are trying to FEEL gratitude to build a life with deep rooted foundations of gratitude at every moment then our relationship with seeing the word in any way will simply spark that! 💛💛 I hope this helps in some way. I know I certainly needed this reminder.
