Coconut Ice Cream recipe:
Ingredients:
_Base:_
- 1 1/2 cups coconut cream
- 1/2 cup coconut milk
- 1/4 cup granulated sugar
- 1/4 cup unsweetened shredded coconut
- 1/2 teaspoon vanilla extract
- Pinch of salt
_Optional Mix-ins:_
- Chopped nuts (walnuts, almonds)
- Shredded coconut
- Candy pieces (M&M's, chocolate chips)
- Fresh fruit (mango, pineapple)
Instructions:
1. Combine coconut cream, coconut milk, sugar, unsweetened shredded coconut, vanilla, and salt in a blender.
2. Blend until smooth and creamy.
3. Chill mixture in refrigerator for 2 hours.
4. Churn in an ice cream maker according to manufacturer's instructions.
5. Freeze for 2 hours before serving.
_No Ice Cream Maker?_
1. Pour mixture into a 9x13-inch baking dish.
2. Freeze for 2 hours.
3. Blend mixture in a blender or food processor.
4. Freeze again until set.
Tips and Variations:
- Use full-fat coconut cream for creamiest texture.
- Add a pinch of lime zest or juice for brightness.
- Mix in cocoa powder for chocolate coconut ice cream.
- Use coconut sugar for a hint of caramel flavor.
