Kodiak Cakes makes an awesome protein muffin/pancake mix- I make muffins weekly and this weeks flavor is blueberry! I give my blueberries a few spins in the food processor and find that the texture is better! Recipe is on the back of the Kodiak cakes box!

I was traveling and skimped early in the week on my usual colorful lunch - I sent them with PB&J, apple, orange and a bag of cheese it’s I’m back at it today, One kiddo doesn’t like yolk or pepper on his hard boiled eggs, how do you like them? Turkey and spinach wrap in a protein tortilla for my youngest, Greek pasta salad for the other kiddo. Berries and cucumbers, power ball as usual for desert!

Lunchtime- teenage lunchbox edition! Greek pasta salad with spinach, roasted red peppers, bell peppers, cucumbers, capers, olives and feta! Protein muffin, I don’t do anything fancy, Kodiak Cakes has a recipe on the back of the box, these are blueberry! Energy ball, blueberries and Girl Scout cookies because .

Pasta salad is a staple in my house, pasta, veggies, cheese and a vinaigrette dressing are my “go to”.

A favorite snack in our house is protein/power balls, with an active family it’s easy to eat junk and these help us balance that.

3 cups old fashioned oats
1tbsp chia seeds
1/2 cup dark or semi sweet chocolate mini chips
1 cup finely chopped nuts (walnuts or almonds are our favorite)
16 oz container of real peanut butter
3/4 cup raw honey

Add everything to a large bowl, mix well- spoon (I use a cookie baller) onto wax paper in a airtight container. This recipe makes enough for two weeks- one container goes in the fridge and one into the freezer.

*add raisins, craisins or coconut if you like*
