Ingredients:
- 2 oz Bacon fat-washed bourbon
- 1/2 oz Pure maple syrup
- 2 dashes Angostura bitters
- 2 dashes Orange bitters
- Cinnamon stick for garnish
- Orange peel for garnish
**Fat Washing Bourbon:**
1. Cook slices of high-quality bacon, reserving the fat after cooking.
2. While the bourbon is at room temperature, combine 1 cup of bourbon with 1 tablespoon of the warm, melted bacon fat in a clean, sealable container.
3. Allow the mixture to infuse at room temperature for 4-6 hours, then place it in the freezer. The fat will solidify on the top.
4. Remove the solidified fat and fine strain the bourbon to remove any remaining particles.
**Instructions:**
1. In a mixing glass, combine the bacon fat-washed bourbon, maple syrup, Angostura bitters, and orange bitters.
2. Fill the mixing glass with ice and stir with a bar spoon until well chilled, about 30 seconds.
3. Strain the mixture into a rocks glass over a large ice cube.
4. Express an orange peel over the drink by twisting it to release its oils, then rub the peel around the rim of the glass and drop it into the drink.
5. Garnish with a cinnamon stick for a touch of aromatic spice.
