FOR THE BEEF BASE
2 tablespoons corn oil
2 small (6 ounces each) yellow onions, finely chopped
1 1/2 pounds ground beef
1/3 cup all-purpose flour
1 to 2 teaspoons dried thyme, according to your taste
2 cups water
1 tablespoon Kitchen Bouquet browning and seasoning sauce
2 beef bouillon cubes
1 tablespoon Worcestershire sauce
FOR THE POTATO TOPPING
2 tablespoons corn oil
2 small (6 ounces each) yellow onions, finely chopped
1 1/2 pounds ground beef
1/3 cup all-purpose flour
1 to 2 teaspoons dried thyme, according to your taste
2 cups water
1 tablespoon Kitchen Bouquet browning and seasoning sauce
2 beef bouillon cubes
1 tablespoon Worcestershire sauce
2 pounds (peeled weight) red potatoes, about 8, medium
2 ounces (1/2 stick) butter
2 teaspoons salt
1/8 teaspoon ground white pepper (about 5 grinds with the pepper mill)
1/8 teaspoon grated nutmeg
1/4 cup heavy cream
1 egg yolk
1 cup grated Cheddar cheese
In a large saucepan over a high flame, heat the oil and add the finely chopped onion. Saute until the onion becomes soft and translucent. Add the ground beef and break it up using a wooden spoon. Saute until the beef has lost all its pink color.
Gradually stir in the flour, thyme, water, Kitchen Bouquet, bouillon cubes and Worcestershire sauce. Reduce the heat to low and simmer the meat (so it is just bubbling) for about 30 to 45 minutes, until the sauce has thickened and the meat is fork-tender.
Remove the pan from the stove and use a slotted spoon to transfer the beef to the earthenware dish. The slotted spoon will lift just the beef so it will not be too wet to hold the potatoes.
If there is any sauce left after taking out the meat, cool and refrigerate it. Then reheat it in a small saucepan to serve alongside the finished pie.

Stuffed Bell Peppers
Makes four servings.
Ingredients:
4 medium red bell peppers
1/4 cup olive oil
1/2 cup roughly chopped onion
1 cup finely sliced button mushrooms
1 zucchini, diced
1/2 teaspoon dried oregano
salt and freshly ground pepper
2 tomatoes, roughly chopped
1 cup rice, cooked until al dente and cooled
1/2 cup water
1/2 chicken or vegetable bouillon cube
4 slices smoked bacon, broiled crispy and chopped
1 teaspoon fresh basil, shredded
4 ounces mozzarella cheese, diced
2 tablespoons grated Parmesan cheese
Method:
1. Preheat oven to 350 degrees. Cut the tops off the peppers, and clean out the seeds and membranes. If the peppers won’t stand up, cut a little piece off the bottom to level them. Place the peppers on a baking sheet, and drizzle with the oil. Bake for 25 minutes, or until they start to soften. Remove from the oven and allow to cool.
2. Pour the oil from the peppers into a frying pan, and add the onions, mushrooms, zucchini and oregano. Season the vegetables with the salt and pepper to taste, and sauté over high heat until they start to soften. Add the tomatoes, rice, water and bouillon cube, and simmer for about five minutes. Adjust the seasoning.
3. Fold in the bacon, basil and mozzarella, and divide among the peppers. Sprinkle the Parmesan on top of the peppers, and bake in the middle of the oven for 15 minutes, or until the cheese has melted and the filling is hot.

For the Sauce
1 ½ Packed cups dark brown sugar (Muscovado sugar is best)
1 cup unsalted butter
½ cup + 1 tablespoon heavy cream
For the Pudding
1 Cup + 2 tablespoons chopped dates
1 tsp. baking soda
½ pint boiling water
4 Tbsp. butter
1 cup granulated sugar
1 tsp. vanilla paste or extract
1 egg
2 cups + 2 tablespoons all purpose flour
1 tsp. baking powder
1 quart capacity English pudding basin or casserole dish, greased
• For the Sauce
Prepare the sauce first by adding all of the ingredients to a heavy bottomed pan. Stir over high heat until everything is combined. Bring to a boil and simmer for 4 minutes. Pour about 1 ½ cups of the sauce into the greased pudding basin or casserole dish and allow to cool. Save the remaining sauce to pour over the finished pudding.
• For the Pudding
Place the dried dates in a bowl with the baking soda and the boiling water. Stir until the soda dissolves and leave to cool. This can be done a day ahead.
Cream the butter and sugar until light and fluffy, add the egg and vanilla and keep beating. Fold in the flour and baking powder followed by the date mix. Spoon the mix into the basin or casserole dish on top of the cold sauce.
• To steam the pudding in a double boiler
Place the pudding in a double boiler for about 1 ½ hours and until a skewer inserted into the pudding comes out clean. Don’t forget to check the double boiler from time to time making sure there is water in the bottom. When the pudding is ready, reheat the remaining sauce. Invert the pudding onto a warm plate and pour over the sauce. Serve with clotted cream, whipped cream or ice cream.
