Need a quick snack or a starter idea? We've got the one - Caprese Puff pastries! Tastes just like a pizza between a melt in your mouth flaky pastry! 😋 Try the recipe below ⬇️

Caprese Puff Pastry Recipe
Ingredients
• 1 sheet of frozen puff pastry
• 1/2 - 3/4 cup pesto
• 2-3 Tomatoes sliced
• 2 x 125g Fresh mozzarella sliced
• 9 small basil leaves roughly chopped
• 1 egg
• 2 tablespoons water

Instructions
1. Preheat the oven to 180 degrees C. Line a baking sheet with parchment paper.
2. Whisk together the egg and splash of water. Set aside.
3. Roll the pastry sheet out on a floured surface and cut into 9 squares.
4. Dollop a spoonful of pesto onto each square.
5. top with a slice of Roma tomato and fresh mozzarella.
6. Take 2 opposite corners of the pastry and fold over halfway so both corners overlap slightly and pinch to enclose
7. Transfer to the prepared baking sheet.
8. Repeat with remaining squares.
9. Once all of the pastries are made, brush each pastry with the egg wash.
10. Place it in the oven for 20-25 minutes or until golden brown.
11. Allow to cool slightly.
12. You can then drizzle with balsamic glaze, top with fresh basil and sprinkle with parmesan.
13. Serve and enjoy!

🤤😉 Impress your guests with this easy to make yet delicious creamy mushroom soup! This is ultimate comfort in a bowl! Grab the recipe below ⬇️

Creamy Mushroom Soup
Ingredients:
• 50 g butter
• Vegetable oil
• 1 onion, diced
• 3 cloves garlic, minced
• 450g brown mushrooms fresh, sliced
• 5-6 sprigs thyme
• 80ml balsamic vinegar
• 40 g all-purpose flour
• 650ml low sodium chicken or vegetable stock
• 165ml heavy cream
• Parsley and thyme to garnish
• Salt and pepper, to taste

Instructions
1. Heat butter and a dash of oil in a large pot over medium-high heat until melted. Sauté onion for 2 to 3 minutes until softened. Add garlic and cook until fragrant, about 1 minute.
2. Add mushrooms and 3 sprigs of thyme, cook for 5 minutes. Pour in balsamic vinegar and allow to cook for 3 minutes.
3. Sprinkle mushrooms with flour, mix well and cook for 2 minutes. Add stock, mix again and bring to a boil. Reduce heat to low-medium heat, season with salt, pepper.
4. Cover and allow to simmer for 10-15 minutes, while occasionally stirring, until thickened.
5. Reduce heat to low, stir in heavy cream. Allow to gently simmer (do not boil). Adjust salt and pepper to your taste.
6. Mix in parsley and remaining thyme. Serve warm.

🥄 Enjoying the last few days of winter with this freshly baked Shepherd’s Pie! 😋 Tasty and comforting, try out the recipe below!

SHEPHERD’S PIE RECIPE

INGREDIENTS
Meat Filling:
* 2 tablespoons olive oil
* 1 cup chopped onion
* 500g ground beef
* 2 teaspoons dried parsley leaves
* 1 teaspoon dried rosemary leaves
* 1 teaspoon dried thyme leaves
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1 tablespoon Worcestershire sauce
* 2 garlic cloves minced
* 2 tablespoons all purpose flour
* 2 tablespoons tomato paste
* 1 cup beef or chicken stock
* 1 cup frozen mixed peas & carrots (optional)
* 1/2 cup canned corn kernels

Potato Topping:
* 3-4 potatoes peeled and cut into 1 inch cubes
* 8 tablespoons unsalted butter -1 stick
* 1/3 cup Milk
* 4 garlic cloves minced
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 cup parmesan cheese

INSTRUCTIONS:
Make the meat filling.
* Add the oil to a large skillet and place it over medium-high heat for 2 minutes. Add the onions. Cook 5 minutes, stirring occasionally.
* Add the ground beef to the skillet and break it apart with a wooden spoon. Add the parsley, rosemary, thyme, salt and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally.
* Add the Worcestershire sauce and garlic. Stir to combine. Cook for 1 minute.
* Add the flour and tomato paste. Stir until well incorporated and no clumps of tomato paste remain.
* Add the broth, frozen peas and carrots if adding, and corn. Bring the liquid to a boil then reduce to simmer. Simmer for 5 minutes, stirring occasionally.
* Set the meat mixture aside. Preheat oven to 200C

Make the potato topping
* Place the potatoes in a large pot. Cover the potatoes with water. Bring the water to a boil. Reduce to a simmer. Cook until potatoes are fork tender, 10-15 minutes.
* Drain the potatoes in a colander. Return the potatoes to the hot pot. Let the potatoes rest in the hot pot for 1 minute to evaporate any remaining liquid.
* Add butter, milk, garlic, salt, and pepper. Mash the potatoes and stir until all the ingredients are mixed together.
* Add the parmesan cheese to the potatoes. Stir until well combined.

Assemble the casserole
* Pour the meat mixture into 1 big baking dish or several smaller ones. Spread it out into an even layer. Spoon the mashed potatoes on top of the meat. Carefully spread into an even layer.
* If the baking dish looks very full, place it on a rimmed baking sheet so that the filling doesn’t bubble over into your oven. Bake uncovered for 25-30 minutes. Cool for 15 minutes before serving.

Indulge in this decadent treat, the sticky toffee pudding, the ultimate comfort dessert right at home! Perfect for this gloomy weather 🤤

Sticky Toffee Pudding Recipe

Ingredients
For the Pudding:
- 280g pitted dates , roughly chopped
- 1 tsp baking soda
- 250ml boiling water
- 40g brown sugar , loosely packed
- 80g unsalted butter , softened
- 2 eggs , at room temperature
- 18 g plain flour (all purpose flour)
- 1.5 tsp baking powder

For the Butterscotch Sauce:
- 200g brown sugar, tightly packed
- 375 ml thickened cream (heavy cream)
- 0.5 tsp vanilla extract
- 70g unsalted butter

Instructions:
For the Pudding
1. Preheat oven to 180°C
2. Grease 7 pudding moulds
3. Mash the dates: Place dates in a bowl, sprinkle over baking soda. Pour over boiling water. Stand 10 minutes, then roughly blend until it resembles sloppy porridge and set aside
4. Place butter and sugar in a bowl. Beat until combined and smooth.
5. Add eggs, beat until incorporated.
6. Add flour then sprinkle baking powder across the surface. Mix until flour is incorporated.
7. Add dates, mix quickly until dates are well incorporated into the batter.
8. Pour batter into pudding moulds, only fill 2/3 of the way up.
9. Bake for 25 minutes, or until skewer inserted into the centre comes out clean.
10. While still hot, poke about 10 holes on the surface of the pudding using a toothpick. Spoon over 1 tbsp of Butterscotch Sauce per Pudding. Leave to soak 10 minutes.
11. Turn pudding moulds upside down on serving plate. Serve warm with remaining warm sauce and ice cream or cream.

For the Butterscotch Sauce:
1. Place ingredients in a saucepan over medium heat. Once butter is melted, stir, then bring to simmer.
2. Simmer for 2 minutes, stirring once, then remove from heat. Serve warm.
