Todays dinner was spaghetti and homemade tomatosauce ... sooo cosy to cook with the kids ...
Todays dinner is white bean and beef stew with rice and vermicelli
Season inspired pasta
Autumn is sneaking upon us and we will soon see colours chamge ,This was basicly the same process
As the other pasta dishes i made .. it had protein veggies and a creamy sauce .
i used coriander red onions, cut very finely garlic (mashed )and some orange/ yellow tomatoes ..cut into small squares And last but not least some small squares of ox beef & fried them in butter ..
For the sauce I meltet down some more butter and flour(rue) and added water some maggi chicken cubes ,salt and then milk powder and cream ... some more salt and black pepper Let it thicken up ,then i added the pasta whick in dish was fettuchini) i believe its best with cream based sauces ..
And then i added veggie and beef mixture
Stirred it around covered all the pasta with the sauce
And it was nothing left within two hours ..
Todays dinner was white fish filets in curry sauce with poatoes carrots and green peas ...
And oh man was it good ..

So i did something ive never tried before
I added eggplant( deep fried it first ) to my pasta w tomatosauce i made it by hand and garlic and let me just say this i dont always need protein it was perfectly fine .. i added a maggi beef cube though just to give it a deeper flavour but i was perfectly happy w the eggplant ive discovered a new recipie by myself i was just hoping it turn out ok but wow it was great i added a drop of cream at the end and twirled it tinto the sauce and that was it really .. simple but heavinly delicious ....and it was all in just one pot..
The tomato sauce is just based on fresh plum tomatoes 🍅 diced 1*1 inch garlic (mashed) i let them melt together added the eggplant and then tomato paste and the maggi cube (lamb beef )some pasta water and salt .. let it cook on low heat and then i stirred in about 60 ml of cream ... the sauce became pink which my daughter loved ...some dry mint again for refreshment ... thats it ...

This is litterly the poor mans budget dinner
Making this recipe i i was severly critisized. For the main ingredient i was asked :are u seriously feeding ure kids this ? ? Noodles??
I don't see where the problem is to eat noodles u just need to think out of the box and u can make this into a proper dinner ...
In itself its bland and boring but if u add some veggies and protein ure good to go
For this ne i added whatever greens i see fit for each kind of spices or taste it had in the bag..
For the shrimp taste in added
Shredded green red bell pepper s green and red onions finely chopped chives
Mini corn (canned)or jar
Bean sprouts bamboo shot s (canned)or jarred
Pasta dish for those tight budget days
With time ive leerned that living outisde my own coumtry things doesnt always go my way ,that being said ive managed to accomodate my lifestyle and budget and ive come up with recipies that makes things more simple.
Like this one not having cream to make my sauces is a bummer but ive found a replacement to make it as creamy as possible u want to know the secret ..its dry milk powder it works amazingly good .. and even if i dont have money for the protein (which in this case is ham )wanted for this dish imanaged to make it taste like i did anyway. I added 2 pieces maggi lamb beef cubes ..let them melt in the sauce
And i also Added some veggies to create some colour and texture 1 red and
Green onions 1-2 and 1 green bell pepper and chopped them into small dices
And for the pasta i used penne regatte because i love how the sauce floated inside of it ..
For the sauce its pretty simple i started with as we all know a rue that contains of flour and butter and then u add the water or stock well in this case i used cubes ....crush them in your hands to melt faster then we add them powdered milk about a cup and half to two cups and stir it with a visk when it starts to thicken up add some water and the cheeze stir a couple of times until the cheeze melts then and the veggies( that i sauted before (red onions green onions and green bell pepper or red if u have .. ) pour all into a form and add some cheeze on top put into preheated oven at 150 c degrees until then cheeze gets golden brown ......
