Celebrating with the Hispanic Heritage Month!
Sopita Aguada
Ingredients:
3 tbsp of cooking oil
1 pack of fideo
2 roma tomatoes
2 garlic cloves
1/4 of an onion
1 tbsp of tomato and chicken bouillon
10 to 12 cups of water
Salt to taste
Preparation:
In a blender add all the veggies and 2 cups of the water. In a pot on medium heat add the oil and fry the fideo until golden brown, add the blender mix and the rest of the water, here will depend on you how soupy or dry you want it, just remember the fideo grows two times the size. Add the tomato and chicken bouillon and salt to taste. Bring it to boil and cook until fideo gets tender, add more water and seasoning if needed.
Taquitos Dorados
Ingredients:
1 lb of ground beef
2 tbsp of cooking oil
1/4 of an onion
3 garlic cloves
Salt
Black pepper
1/2 tsp cumin powder
10 corn tortillas
Diced tomato
Shredded lettuce
Mexican crema
-for the avocado salsa
1 avocado
3 tomatillos
5 jalapeños
1/4 of an onion
2 garlic cloves
1 tsp of salt
1/4 cup of cilantro
Preparation:
In a pan on medium heat with the oil, add the meat and break it out until it changes color, add the onion thin sliced and minced garlic, season with salt and black pepper and add the cumin. Push the meat to one side of the pan and let the grease go to the other side, dip the tortillas in it and fry them on a griddle until slightly crispy but fold them before they get too crispy. For the salsa boil the tomatillo, jalapeños, onion, and garlic for 10 minutes, add them in a blender with the avocado and cilantro, season with salt and blend very well. Build the tacos and add salsa, cream, lettuce and tomato. Serve with lime wedges.
