Easy Homemade Apple Fritters

Ingredients:
1 cup all purpose flour
1/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 egg
1 cup chopped apple

Glaze:
β€’2 cups powdered sugar
β€’1 1/2 tablespoons milk

Directions:
Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just combined. Fold in apple. Pour oil into skillet so that it is approximately 1 1/2 deep. Heat oil on high. Oil is ready when a little dough thrown in floats to top. Carefully add dough to oil in heaping teaspoons. Cook until brown, about 2 minutes, then flip. Cook another 1-2 minutes, until both sides are browned. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm.

Easy Fruitcake Recipe😍

Ingredients:

2 cups mixed dried fruits (such as raisins, currants, chopped dates, candied cherries, and candied citrus peel)
1 cup chopped nuts (such as walnuts or pecans)
1 cup all-purpose flour
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Instructions:

Preheat your oven to 325Β°F (165Β°C). Grease and flour a loaf pan or line it with parchment paper.
In a bowl, combine the dried fruits and nuts. Toss them with 2 tablespoons of flour to coat evenly. Set aside.
In a separate bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs, one at a time, until well combined. Stir in the vanilla extract.

GRANDMA'S HOMEMADE PANCAKES πŸ˜‹
Ingredients:
2 cups flour
1 cup of milk
3 spoonfuls of sugar
1 egg
1 teaspoon royal
2 butter spoons
1/2 teaspoon nutmeg
1 teaspoon ground cinnamon
Honey to taste
1 pinch of salt
Preparation:
1. We separate the white from the yolk and beat the white until stiff; Then we add the sugar and continue beating well, separate.
2. In a bowl, put flour, salt, royal and egg yolk, and add the milk little by little while continuing to beat; There should be a thin dough without lumps.
3. Then we add the egg white and mix with enveloping movements, and add the nutmeg and cinnamon.
4. Heat a frying pan over medium heat and grease with butter.
5. With the help of a spoon, pour the mixture into the pan and spread it so that they are as uniform as possible.
6. Cook on one side until golden brown and then on the other.
7. We continue doing the same until the entire mixture is complete
8. Then we serve with honey and butter.

Carrot Cake
2 cups All Purpose Flour
1 cup white sugar
1/2 cup brown sugar
3/4 cup vegetable oil
2 cups finely grated carrots
2 large eggs
1/2 cup buttermilk
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp vanilla
1 tsp ginger powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup raisins (optional)
3/4 cup chopped walnuts

Instructions
Preheat the oven to 170 Degrees Celsius.

1. In a large bowl add oil ,white and brown sugar . Beat until light .

2. Mix in the eggs one at a time .Add buttermilk and vanilla then mix well .

3. Sift in flour , baking powder, bicarbonate of soda , salt , cinnamon, nutmeg and ginger . Then gently mix .

4. Add the grated carrots, walnuts and raisins . Gently mix.

5. Line 2 baking pans with parchment paper. Divide the batter (mixture) equally in 2 baking pans .

6. Bake in a preheated oven for 30-35 minutes minutes or until well baked . Note: Baking time depends on your oven .

Let the cakes cool off completely before taking them out of the baking pan.

Palm oil rice.

Ingredients:
3 cups of rice
1 Big Red Bell Pepper (Tatashe)
2 big ball of onion
2-3 Scotch Bonnet (Rodo)
1/2 Cup dried pepper/ata ijosi (Optiona)
125ml palm oil
3 cups chicken/beef stock/water
2-3 medium size smoked fish
2-3 pieces cooked ponmo, diced/sliced (Optional)
1/2 Cup smoked prawns
3 tablespoons grounded crayfish
1 Cup spinach or pumpkin leaves/ugu or basil leaves (Optional)
2 Knorr, Maggi or your preferred cubes
Salt to Taste

Preparation:
-Parboil your rice and set aside…
-Blend the Bell Pepper (Tatashe), Scotch Bonnet (Rodo), dried pepper (Ata Ijosi), 1 Onion with little water and set aside….
-Get a fairly big pot, add the palm oil. Place on medium heat. When the oil is hot, add 1/2 sliced onion, fry till translucent, this should take around 6-8 minutes, add the crayfish, stir and fry for 2-3 minutes….
-Add 3 cooking spoons of the blended pepper, the Knorr, Maggi or preferred cubes, salt to taste, stir and fry for 5-6 minutes, stir occasionally. Try not to add too much salt if you’ll be using stock, remember stock contains a considerable amount of salt…
-Add 3 cups of stock or water if you haven’t got stock, stir and let it cook for 4 minutes to thoroughly combine, then add the Ponmo or any other tough protein you’re using,
-Gently add the parboiled rice…
-Stir and combine thoroughly, then add the shredded smoked fish and prawns, stir; make sure the liquid isn’t too much. Taste for salt and seasoning, adjust if necessary

Note: It’s better to start with a small quantity of water or stock, add more stock or water, preferably stock as you go to prevent overcooking.

-Cover tightly and cook till rice is very tender, stir occasionally to avoid burning.

If you’re using vegetables, add tough vegetables like Ugu 2 minutes before doneness, then switch the heat off and continue to simmer with the residual heat for a further 2-3 minutes. If you’re using Spinach, add after doneness and simmer with the residual heat for 3 minutes.

How to make Banana Bread

Banana Bread Ingredients
1 cup (150g) plain (all purpose) flour
2 over ripe bananas
125g (1 stick) butter
4 eggs
ΒΌ cup sugar
1 teaspoon baking soda
Β½ teaspoon yeast
Β½ teaspoon salt
1 tin Peak Filled Evaporated Milk
ΒΌ cup roasted groundnuts and cashew nuts.

Tools You'll Need to Bake the Banana Bread
The following are the minimal tools you'll need to bake the banana bread:
An oven with a top and down heating capability is best

Measuring cups or kitchen scale:
Sieve or Sifter
Egg Whisk.

Notes on the Banana Bread
Ingredients
Use very ripe but firm bananas.
Peak Milk works well with this recipe because it is super creamy.
The eggs should be at room temperature. Which means that before you make the banana bread, bring the eggs out of the fridge long before you will make the cake. If it is winter where you live, bring them out the night before.

Directions for making the Banana Bread
1. Pour the Peak Milk in a cup and warm it up a little bit, about 30 seconds in the microwave oven.
2. Add the yeast to the milk, stir and set the mixture aside.
3. In a dry bowl, mix the flour, sugar, salt and baking soda.
4. Crush the groundnuts and cashew nuts with a rolling pin.
5. Melt the butter.
6. Mash the banana either with a fork or with a potato masher till as smooth as possible.
7. Whisk the eggs.
8. Add the mashed bananas, the butter and the milk and yeast mixture. Stir.
9. Add the dry ingredients and stir till everything is well combined.
10. Add some of the crushed groundnuts and cashew nuts. Stir.
11. Pour into a bread pan and sprinkle the remaining groundnuts and cashew nuts on top.
12. Bake in a preheated oven at 170 deg Celsius (350F) for 1 hour.
13. The banana bread is done when a wooden skewer inserted into the bread comes out clean. The bread also springs back when you press it down.
14. Place it on a rack for about 5 minutes then bring it out of the pan.
15. Then lay on the rack till it has cooled down to a comfortable temperature.
16. Then slice and enjoy!

Enjoy it with a chocolate drink or any chilled soft drink
