I challenged myself to plan a week of dinners for under $100 for our family of 4. Swipe to replicate these dinners! Here's what you need to know:

1) I spent $90.45

2) I did use just a few items that I already had at home (onions, 1 can refried beans, 1 can diced tomatoes, carrots, and ANY Asian sauce), but even if you had to buy those items, you'd still be right at $100 with tax. I also did not purchase common seasonings and condiments (like mayo, ketchup, hot sauce, etc.) that we always keep at home. We also *usually* have things like salsa and parm cheese, which could make these meals even better, if needed.

3) I purposefully bought larger bulk items that I could reuse numerous times to help save $$. For ex: the 12-ounce pack of shredded cheddar was cheaper than the small bags, and I could use it for the tacos, the cheeseburgers, the KFC bowls, and on top of the fajita bowl if I wanted to-- WITH leftovers. Same with the ground turkey, the 8-pack of buns, and the big bag of potatoes. It was cheaper to buy the big package and split it up intentionally for meals, planning around those ingredients accordingly.

4) I bought everything at , which was my first time there! This Save A Lot is in the Lemay area, right next to a really nice Dollar Tree that we love ( ), and it's always busy, so I had to finally see what all the fuss was about.

5) A bulk of the savings of this week came from the 5 for $25 meat deal that they offer. I bought two packs of chicken breast, 1 pack of chicken tenderloins, and two packs of steak within that deal, and through it, I saved an additional $1.50-$3 PER PACK of meat. That helped A LOT. Meat is obvs the most expensive part of each meal, so I shopped meats first and then planned backwards from there.

Happy (belated) Halloween from the Pokémon crew!!

Unfortunately, we weren't able to get any good group pics this year. Kory works in TV, which means election season is always INSANE -- so he had to meet up with us after we already started trick-or-treating. Which meant we also didn't have an extra pair of hands to get me, Rashad, and the boys together.

AND! We were running late to meet up with our friends, so I promised the boys that I would take selfies with them when we got there-- annnnddddd then the chaos of arriving totally snowballed, we started trick-or-treating right away, and I got 0 pics with the boys 😭😭 All I got was these two crappy selfies of my outfit lol.

Either way, we had a great night, and locked in another core memory!! Thankful for our little blended family and for the wonderful friends who feel like family

Okay, so the other day on my stories, I posted throwback pics to myself in 11th grade in high school bc asked me to 🤣😁

That was the year that I dyed my naturally-blonde hair for the first time ever. Why? Because I had expressed interest in doing so on my 16th bday, and my mom straight up said: "NEVER dye your hair! People PAY for that color!!!!"

Obviously, I dyed it that day. With my best friend, , in tow. From a bow at Walgreens 🤣

And when I shared these pics on stories the other day, so many people said I should dye it back to black! Which shocked me!! I liked it back then, but today?? I feel like it would age me.

Icelandic hot dogs: everyone says they are a MUST, but are they really??? Here's my take 👇👇

First of all, I absolutely hate hot dogs. I *HATE* hot dogs. I hate their taste, I hate their smell, I hate hot dog burps. I think they are absolutely repulsive. Rashad, on the other hand, LOVES hot dogs.

Everyone online said that Icelandic hot dogs are drastically different from hot dogs in the USA. Plus, they're extremely common in Iceland, and famous hot dog stands like this one-- Bæjarins Beztu Pylsur-- is often seen with a sprawling line around it.

So, in the vain of "When in Rome," I tried one. We got them fully loaded, which is how they typically come, with onions and mustard and some sort of tan, sweet sauce that they called ketchup.

And I hated it 😂😅 What everyone else described as "drastically different" left me wondering if the "drastically different" was in the room with us because I was not getting it.

Did it taste higher quality than hot dogs from the USA? Sure, but all of the food in Iceland was clearly better than the crap we allow here.

Did it still very much taste like a hot dog? Yep. Barf.

Rashad housed his-- and then mine-- and I opted for some frozen steak fries and raw veggies with yogurt dip found at a nearby convenience store because that was all that was open 😂😂

If you like hot dogs, then definitely try one when in Iceland! If you absolutely hate hot dogs like me, then don't expect to suddenly love them, lol.

Would you believe me if I told you that this was soup? 😝Because we definitely ordered soup, but what we thought that we got.... was mashed potatoes 😂😂

Took a break off of posting about Iceland, but now that we are home, I have more to share!

When searching for food Reykjavik, you'll likely have "Icelandic Street Food" will pop up in your results. As a lover of street food, I had to dig deeper. What I found was a small, but incredibly popular and highly-rated cafe that serves a menu of 5-6 different soup flavors.

That's it. Icelandic street food = soup 😂

But wait, there's more.

Once we got inside, we learned that you can order ONE bowl of soup, but when you finish that bowl, you can receive UNLIMITED bowls of two different flavors of soup. We ordered two different seafood soups, and the free refill soups of the day were tomato (which also had corn in it?) and lamb stew.

Another plot twist: they also make fresh hot waffles that are 100% free. Yep. I don't get it, either.

HOW this place makes money is beyond me 😂😂

Regardless, trying some of the traditional soups whilst in Iceland is a must, and this place was a curious experience of all sorts, so I say add it to your list!

What's confusing you more: the seafood soup that looks like mashed potatoes? Unlimited refills on soup? Or the free waffles? 😂👇

📍Akureyi, Iceland -- where the traffic lights are hearts!!! ❤️

Spent the night here on our way driving through Northern Iceland, making our way to the Western Fjords. This is a cute, colorful little town that was way more lively than I thought it would be!

We went to grab a drink around midnight, and the bar was dead at first. As we sipped our drinks and the night grew later, more and more people filed in and went upstairs to what turned out to be a nightclub 😅

We also witnessed a couple having a very drunken, very public fight in the middle of the street where the woman was beating the man's car 🤣🤣

Very interesting and unexpected night with beautiful views. Also loved our hotel room. Breakfast was from Keltikaffi and was delicious! (Each plate was approx. $20.)

I have SO much more to share! Will do when I can! 🫶

Here's some things you need to know about the food scene in Iceland:

-The TRADITIONAL food scene in Iceland includes eating horse, whale, shark, puffin, and soup-- specifically, a meat soup or a creamy seafood soup. I most likely won't be able to show you 95% of that because I refuse to eat those animals. Unless Rashad tries it-- which I do not support, lol-- then I'll only be able to show you the soups.

-There is also now a large and growing MODERN food scene here that includes a lot of Gastropubs

-People in Iceland fu***ng LOVE burgers, and these gastropubs are cranking out amazing, unique burgers. Every burger is cooked medium unless you specifically ask them to cook it differently (which they will discourage you from doing.)

-People here also loooovvvveeeee blue cheese, and it is hands down the BEST blue cheese I've ever had in my life. It's so chunky and perfect. One of the most common burgers here is a blue cheese burger, and it's served with a garlic sauce + a THICK heap of blue cheese dressing on top.

-People here ALSO love chicken wings! We had to try them to see how they compare to wings in the USA, and omg, they were so good. The wings are smaller bc their chickens aren't pumped with antibiotics, and they're soo crispy and crunchy. We ordered 1 serving with our burger, and then had to immediately place a second order. They were called "Buffalo wings," but the sauce was more of a slightly spicy, slight sweet and sticky sauce. Nothing like our Buffalo wing sauce. You can see that super chunky blue cheese on the side.

-Beer is also a newer and growing scene here, as it was illegal in Iceland until 1989!

My Story

Hi! I’m Lauren Rose. I have a master’s degree in strategic communications management, which quite literally means I’m a pro at planning. I grew up with a single mom who went to school until the 8th grade, which means I’ve had to figure out most of life for myself. I’m the first in my family to graduate high school, receive a bachelor’s degree, and a graduate degree. I did it all by age 23!

After grad school, I worked in social marketing and relations development through community event planning and management. My events work resulted in several awards for my then-employer. I also created a charitable giving department, founded a scholarship for women, and planned numerous fundraisers for local causes.

But I still didn’t feel like my work was purposeful enough.

In 2015, I re-routed my career and made a last-moment decision to join Teach for America. More than 20,000 folks applied, but only two percent were chosen, including myself. My then-boyfriend (now-husband) and I moved from Florida to Texas and started new lives as full-time teachers.
