There is no food more quintessentially Japanese than sushi. Despite the fact that it originally started in South East Asia as a process of fermenting fish with vinegar, salt, and rice -- sushi has become Japan’s most iconic cuisine and its popularity has spread so widely that the word sushi is recognized anywhere in the world today. A food that is performed with perfection, rather than simply made -- this cold, firm fish combined with rice, sauce, and other ingredients is not just a meal to be eaten, but a dish to be savored.
