We had leftover salsa verde chicken in the fridge, some green onions and a couple peppers that needed to be used soon so I made some Mexican chicken salad.

My hubby and daughter have shooting club practice two evenings a week in preparation of competition next month, so I have to think of portable dinners.

Tonight's dinner was a hit!

I used the ingredients above plus chopped tomatoes, taco seasoning, kidney beans (hubby can't tolerate black beans), corn and mayo. They ate theirs on protein wraps. My other daughter and I are out on salad greens with Greek yogurt, pickled jalapenos and hot sauce.

Two months ago, my breathing issues were so extensive my Dr sent me to pulmonary rehab. I worked really hard to rebuild my endurance and stamina. Last week I graduated and joined a local gym.

I'm someone who is motivated by checking off boxes and tracking progress and earning rewards, so I signed up for the Conqueror Challenge. They have over fifty famous places you can walk virtually - you exercise and enter your mileage and it moves you along the map. It's connected to Google Maps so you can move around the area and see some pretty cool things along the trail. Then when you complete the trail, they send you a medal to commemorate your challenge.

I chose the Jesus Trail because I wanted to walk where Jesus walked during his ministry - from Nazareth to Capernaum. I learned a lot about the area and got to "see" the Sea of Galilee. Today I finished my challenge and my medal is on the way!

I'm so thankful for how the Lord has met me in this health journey. It's just one of so many things I see Him beginning to restore after a long season of suffering.

Two months ago, my breathing issues were so extensive my Dr sent me to pulmonary rehab. I worked really hard to rebuild my endurance and stamina. Last week I graduated and joined a local gym.

A dozen years or so ago, my Grandma Maggie gave me her picture of the praying man. At the time, it wasn't a popular print but I loved it because of its story. Her brother Clifford worked in a furniture store and gave her this picture as an anniversary gift. Now she was passing it down to me.

My grandma isn't with me anymore, but the praying man picture is. I've learned the picture is called Daily Bread, or Grace, and there was a praying woman picture called Gratitude that was considered its match, even though they are done by different artists. Five years ago I began my search for her.

This week I finally found her, tucked away in a pile of frames in a crowded little corner of a thrift store. I eagerly paid a whole $4.50 for her and brought her home.

Her frame was scratched and banged up and she was hidden under glass. So I stained the frame, removed the glass, and gave her a coat of Mod Podge to protect the print.

Now Grace and Gratitude adorn the walls of The Funky Farm House. And this farm girl couldn't be happier.

Hey y'all! It's not just another Make it Happen Monday, it's Memorial Day.

Today isn't just a day of work or a cookout in the backyard. It's a day to remember those who have given their lives in service to our country. Those who willingly died so that we could live free.

So what's my Make it Happen this week?

I have a tradition of watching the movie Taking Chance every Memorial Day. It's the story of an es**rt bringing home the body of a service member who died in combat. It details all the care and traditions that are bestowed on every fallen service member on their journey home. It helps me remember and honor those families who grieve today.

Happy Monday y'all!! It's time for Make it Happen Monday.

We had a wonderful weekend with Gracie and Caleb and Aloyse. We caught up with old friends, went to the strawberry farm, and even got a little work done in the garden. It was a great weekend!

Today my focus is catching up on all the things I let go over the weekend so I could be present with my family. It's a true Make it Happen Monday!

My big project outside this week is finishing the garden. I'm finally buying plant starts today and Michael will help me get them in the ground.

My big project inside is hanging artwork throughout the house. I started working on this last month and got derailed by other more urgent tasks, but I need to finish this project in order to finish the declutter in my bedroom (since that's where all the artwork currently lives).

I'm coming for you Monday! You're not gonna beat me!!

Hey y'all! I hope you had a wonderful Mother's Day weekend. Now it's time to jump back in to Make it Happen Monday.

Today I'm playing catch up all over the house. I spent Friday taking care of my two patients and Saturday doing a ton of freezer meal prep. Then Sunday I had the day off to spend with Aloyse and the rest of the family.

Now there's dishes and laundry and clean up to do!

Whenever everything is in chaos, I start by putting my servant girls (dishwasher and washing machine) to work, then I set a timer and spend 15 minutes in each room tidying and cleaning. In just an hour, the whole house feels much improved and it's easier to make a game plan from there to tackle any remaining work.

It's Monday already?!

Hey y'all! Ready or not, it's time for another Make it Happen Monday.

This week I'm focusing on surgery prep.

Amber's second foot surgery is this Friday, so I need to get everything prepped and ready for a few slow weeks at home. I'm going to do my monthly grocery shopping, prep some food and get the house clean. That way Amber can rest and recuperate and I can focus on helping her and doing little house projects while she sleeps.

We have a chance of pop-up rain showers every day this week. As the weather allows, I want to spend time outside spiffing up the front porch and the backyard and puttering in the garden. We are late to getting the garden started this year, but I'm not going to stress about it. This year's garden is purely for enjoyment not production so I'm not worried about being behind. We will get starter plants from a nearby farm and get everything in the ground this weekend.

Hey y'all! Once again another week is upon us and it's time for Make it Happen Monday. Are you ready?

This week my focus is in the kitchen. I desperately need to clean out my fridge. And then I need a meal plan to use up the bits and bobs we have left at the end of the month. And finally I'll make a few things ahead to help get a leg up on all those plans.

I particularly enjoy meal prepping breakfast items. For me, breakfast is the hardest meal to make from scratch because I want to ease into my day rather than start with cooking right away. Premade breakfast items gives me the ease I crave without compromising nutrition and the food choices we are trying to make. This week I'll be making protein pancake bites, some smoothie bags and breakfast burritos.

Hey y'all! It's time for another Make it Happen Monday! Are you ready for it?

This week I'm focusing on food prep. I bought a box of onions that desperately needs my attention so I'll be chopping and slicing them today to store in the freezer. Having onions prepped and ready to go makes meal times so much easier!

I'm also still slowly working through decluttering my bedroom and putting art on the walls. I made some good progress last week and I plan to continue that into this week!

Lastly I will be in the kitchen baking lots of banana bread and pound cakes with Georgia. We've begun fundraising for the annual mission trip to Rancho 3M in Guadalupe Mexico and for us that means selling baked goods. We already have several orders to fill and we're just getting started. Hey y'all! It's time for another edition of Make it Happen Monday! Are you ready?? Let's do this!

I started off this morning focusing on two of my least favorite things: phone calls and paperwork. Now that I've gotten those dreaded tasks out of the way, I can move on to the fun stuff.

This week the focus is on wall art. I dream of walls full of eclectic art and photos and lots of colors here at The Funky Farm House. The reality though is that most of that art is sitting in my master bedroom waiting to be put on the walls.

I've mentioned before that I'm going through a decluttering/simplifying guide from my friend . It's been so helpful in getting our home simplified so that I can bring my colorful eclectic wall dreams into reality.

The next room in Taylor's guide is the master bedroom, so this is the perfect week to focus on getting all those boxes of art out of my bedroom and onto the walls.

Hey y'all! It's another new week so that means it's time for another Make it Happen Monday.

This week my focus is outside. I'm ready to clean up the backyard clutter from the winter, plant a few things in the garden, clean out the chicken coops, and freshen up the flowerbed off the back deck.

I'm beginning to make the shift off spending more and more time outdoors in the sunshine. And I love it!

Hey y'all! It's a new week in a new month at the start of a new season. It's time for Make it Happen Monday!!

This week I'm focusing on the next step in my decluttering guide - the hall bathroom. Since this is primarily the girls' space, I'll work with them to get things decluttered and organized in there. I'll also make a plan of how I want to spruce up the space.

I'm also starting to get the garden ready so planting and doing some tidying up around the chicken coop. Michael has been working hard on beautifying the front flowerbed and now it's time to turn our attention to the backyard.

Hey y'all! It's time for another Make it Happen Monday and this one has been twenty years in the making.

Twenty years ago, we started our homeschool journey with convictions to teach our kids about Jesus alongside reading, writing and arithmetic. We also recognized that each child learns in a different way and at a different pace and we wanted to give our kids room to grow and learn in the way that worked best for each of them.

For many years, Georgia (our youngest) has expressed a desire to attend a school for her high school years rather than be homeschooled. Her reasons are sound and we've agreed it would be a good path for her, as long as we were able to find a school we loved and felt would be a good fit for her.

This week, Georgia was offered a spot in a local charter school for the upcoming school year and we accepted. We are so excited for her!

Amber will continue to homeschool the next two years and follow the plans she's already worked to lay out. She's really happy for her sister but not at all interested in going with her. They are very different!

So today's Make it Happen Monday is focused on finishing Georgia's registration paperwork!

This will be a completely different season for us. But it's one we are embracing and we're excited to see how the Lord uses this to prepare Georgia for her future.
