I’m not great at celebrating big moments. This is an appreciation/mindfulness post.
1year & 9months ago I decided I wanted to revolutionise the drinks industry, tackling accessibility, diversity & the very foundations - not just through alcohol but through all mediums of the food & beverage industry. I am now realising how absolutely delusional I probably sounded at the time. Especially to haha. I have a lot in-store in the next year, keep your eyes glued. I appreciate everyone sticking around & being patient with me. I appreciate everyone, including all my past roommates, who have let me experiment my very weird + wild recipes on them while you all watched all my failures.
It’s more than just food🌳
When I was 23, the youngest regional manager in SG history & ward of training over 100 people, I jokingly earned the name “King Of The North”. After winning the first ever cocktail competition I ever entered, never even previously creating an original cocktail recipe, I was given the nickname “the dark horse”. The lack diversity in the industry made this a painfully fitting codename. So if you ever hear me in an interview saying “winter is coming” just know it’s a little Easter egg for things to come.

The best hotel experience I have ever had!!! I had the absolute pleasure of staying at for the very first time and I was speechless the entire time! Incredible interior, amazing drinks and food, awesome team, exceptional service and my new favourite rooftop bar in London! If you’ve followed me for a long time then you know I am very picky with hotels so this was honestly a lovely experience.
It has always been a dream of mine to stay at a Four Seasons Hotel so this was a really special moment. Inner child me is smiling ear to ear.
The flowing slides show a hotel room that had me lost for words!
I also got to try one of their very famous breakfast; Japanese Breakfast. Easy one of the best I’ve had in London, it felt like a refined home cooked meal away from home.
The second slide is from the rooftop Bloom bar, which is a pop up bar they have running to the public all summer until the 31st August! It has incredible views of London and the city, and the stone head is obviously the most jaw dropping part! A penthouse turn bar, it literally feels like you’re being hosted in someone’s house - incredibly intimate and the team are lovely and well skilled in cocktail!
The heated floor was cool, the heated mirror was insane but tv next to the bathrobe spun me in circles.
Massive thank you to them for hosting me and getting me flowers 🙌 how lovely!

Journeying through nyc and trying food over the month has been an incredible experience.
From finally experiencing Ivan’s ramen to trying a fish&chips at Dead Rabbit that reminded me instantly of home. From homemade Korean food to Michelin star takes on Korean classics.
A lot of standout spots but was the best food experience I have had in a very long time. The photo I took does not do the venue and food justice. I am truly excited to see their future journey and hope to return v soon. Highly recommend going to check them out!

2022 moments. Just of my favourite dishes I have made this year!
1.) Surf & turf by the campfire. Steak and lobster, edible candle with edible “coal” made from cassava, ‘water by the sea’ as a clarified broth, fish oil and blue butterfly pea tea
2.) Italian night. Spaghetti and meatballs
3.) Vegetarian Bangers&Mash
4.) Beef and Dumpling ale stew
5.) chilli and coffee seasoned steak
6.) garlic mushroom, poached egg, avocado and sour dough bread
7.) Garlic mint lamb and mashed potato, with a berry and vodka reduction.
8.) Smoked Salmon on sourdough
9.) Pho and Garlic shrimp
10.) oat and Greek yogurt, with berries and Red bush tea

did not disappoint with their breakfast dishes. All the food was incredible. Even though they had a queue that stretch around the block when I went, all the staff were incredibly attentive, friendly and patience.
Katz is everything you expect it to be, great for tourist vibe.
Bagel pub saved my life on my hungover occasions. Their scallion cream cheese is to die for.

I just uploaded a new TikTok. The dish is called “Tropical Egg on Toast”. Bread and butter pudding with rum raisins, soju and apple white cream and a Caribbean mango “egg yolk”.

My mum’s birthday♥️! I planned to surprise her and take her to the Four Seasons Hotel (a place she spoke to me about endlessly when I was a kid, as a dream of hers) and experience this special moment. At one point I noticed my mum repeatedly sitting on the edge of her seat and visibly didn’t look settled, I asked her if she was okay, and she said “I feel like someone is going to come to tell me to leave because I don’t belong here”and it literally broke my heart. A person who deserves the world but never given a ladder to see it. A very sentimental weekend🥹. We went to incredible restaurants and bars, and I got to show her my weird little Food&Beverages world. If you’ve followed me for a while then you know I don’t share any of my person life on social media but I think this was deserving to see the joy this moment brought. And I could not be here without all of you, so thank you from the bottom of my heart🫶 Also a massive thank you to the Ten Trinity Family @fstentrinity for making this weekend SOOOO special! Simple pancakes for breakfast, my roommate said she wanted something really quick this morning before work so I made her a really basic Crepe recipe to go 🎁 👔 from @ralphlauren Purple Label ⌚️ @cartier 🍾 @grandmarnierofficial
Super simple and quick lunch episode 4: I made my roommate a small fish dish for lunch. I got new crystal wine glasses 🖤 it sounded like a siren’s song and worked perfectly with @billieeilish angelic voice Black lemon I got from Bahrain, steamed fish. These are all leftovers used in my previous videos including the asparagus cooked in ex-dairy cow fat. Shirt from @ralphlauren
Quick and easy lunch I made for my roommate: Surf & Turf. Tuna ceviche (yellowtuna) and bone marrow on sour dough. I used a soy sauce reduction for the 🟤 and chive and panda oil for the 🟢 to make the tree🏝️. I used a lot of Aztec Sweet Herb in this recipe because I’m obsessed with fragrant, floral and delicate it is to cook with - I ordered online from @westlandsuk but you can find at some organic stores. It has kept in the fridge a longer/ better than all my other herbs. Jumper is from @tommyhilfiger
A quick and simple snack I made because my roommate said she was kinda hungry; Sweet potato, braised lamb and an asparagus purée. The sprinkled a dark chocolate over the asparagus purée which just WORKED, the earthiness plus the cocoa pulled it all together. The spinach was for extra colour. I deglazed the pan with Dry curaçao (a personal favourite to make cocktails with) because I wanted an aromatic citrusy stock with the lamb. Using the sparkling wine for volume and body, a Malbec I have had for months which has gone past it prime for punch and as a “vinegar” to bring down the sweetness from them the curaçao. And then finally adding in a small amount of Sweet Vermouth to add back what the red wine has lost in flavour profile without buying a new bottle. My favourite hack if I am cooking with a red wine, that is slight off, is adding a splash of sweet vermouth to balance it.
Extremely quick and simple breakfast I made for my roommate today: eggs on a nest. Poached egg, egg 2 ways and pesto pastry 🍁 on an arugula bed. Mimosa with fresh OJ and an orgeat latte. Hack: If you are trying to poach an egg and your there not very fresh, put it in the freeze for 10 mins before cooking. That will help get a great shape. Making myself a really simple breakfast in my hotel room. Limited equipment while I travel so I had to get a little creative. Spending the month in LA has been a fun experience but wow I miss being able to walk to places. I have a lot of interesting content coming up which I shot in LA so keep your eyes peeled👀 Do not consumer non organic banana peels which had pesticides doused on them!! The water bottle and peel is for a cocktail recipe, but some say it can make good flower and plant food
