How to Make Pineapple Jollof Rice.

Ingredients
2 cups of parboiled basmatic rice
1 cup of chopped pineapples
1/2 cup of blended tomatoes, fresh pepper
1 small onion (chopped)
1 teaspoon of curry
1/4 teaspoon of thyme
Seasoning cubes
1/2 cup of chopped vegetables/ sausage (optional)
2 garlic cloves
1 teaspoon of grated ginger
1.5 cooking spoons of vegetable oil
2 fresh eggs
1/2 cup of stock juice

Method
Heat up your oil, stir fry your pineapples and chopped vegetables for 30 seconds and take out of the oil.
Fry the two eggs and take out.
In the same oil, toss in your chopped onions, garlic and ginger and fry about a minute or two on medium heat.
Pour in your blended tomato, pepper and stir.
Season with seasoning cubes, curry, thyme and any other seasoning of your choice.
Stir in your rice and reduce the heat to the lowest and allow to steam. Pour in your stock juice so it would cook the rice for the next 20-25 minutes on low heat. Constantly check to make sure the rice is soft and when it is, increase the heat and stir.
Toss in the already sautéed pineapple,fried eggs and chopped vegetables/sausage and stir in.
Serve with any protein of your choice.

CUSTARD POWDER RECIPE

INGREDIENTS.
* 1 kg of cornflour powder

*2 sachets of milk powder flavour

*1 teaspoon of egg yellow powder( you could add more for a deeper colour, or less for a lighter colour)

*1 tablespoon of banana flavour powder ( you may use any flavour of your choice)

*10 tablets of vitamin C for added vitamins( it's optional)

N.B, all ingredients must be in powder form.

METHOD

* get a big bowl, sieve in your cornflour, to remove any particles.

* sieve into it your sachet milk powder flavour

* mix together to combine.

* sieve in your egg yellow powder

* mix together

*grind or crush your Vit C to powder form, and sieve into the bowl, mix together.

* Add the banana flavour, or any flavour of your choice.

*Mix all together till its very well combined.
Your custard is ready, pour into an airtight container and use as desired.

2. Rinse in clean water.

3. Put in a clean pot with clean water.

4. Boil for 10mins.

😋MEAT PIE RECIPE😋

You’ll Need :
Meat Pie Filling:
•(8 cups) plain flour (All Purpose Flour)
•2 medium-sized Irish potatoes
•2 medium-sized carrots
•500g of minced meat
•1 medium-sized onion
•1 cooking spoon of Vegetable Oil
•Seasoning – 2 Maggi / Knorr cubes and 1 teaspoon of thyme
•2 tablespoons of plain flour
•Cold water — 1 cup
•Salt — to taste
•1 egg (for glazing the pies)

Preparation :
A-Making the Filling:

Step 1: Heat the oil and lightly brown the onions

Step 2: Add the minced meat and fry until brown, season the meat with the thyme, curry powder and the bouillon cube. Then add a cup of water and let it cook for 5 min.

Step 3: Add the carrots and potatoes with 1 cup of water and salt to your taste.

Cover the pot and let it cook till everything is tender (around 15 min) .

Step 4: Dissolve the flour in some water and add in the filling. This will thicken the filling.
Stop the heat and let the filling completely cool down.

B-Making the dough:

Step 1: Add the flour in a bowl with the baking powder and a pinch of salt. Then mix well.

Step 2: Add the margarine and mix thoroughly until the mixture looks more like bread crumbs.

Step 3: Gradually add water while mixing until you get Smooth dough

Step 4: Roll out on a flat surface with rolling pin and cut into desired size wth a round cutter

Step 5: Add the filling, fold & brush eggs on the inner side of the pastry to bind

Step 6: Use fork to press the edges together or use a meat pie cutter if you have

Step7: Brush egg on it to achieve a golden color when baked

Once you’re done set on greased baking tray and put in the preheat oven.
Once the meatpie is light brown, it is ready.
