Carrot Cake
2 cups All Purpose Flour
1 cup white sugar
1/2 cup brown sugar
3/4 cup vegetable oil
2 cups finely grated carrots
2 large eggs
1/2 cup buttermilk
2 tsp baking powder
1/2 tsp bicarbonate of soda
2 tsp vanilla
1 tsp ginger powder
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/2 cup raisins (optional)
3/4 cup chopped walnuts

Instructions
Preheat the oven to 170 Degrees Celsius.

1. In a large bowl add oil ,white and brown sugar . Beat until light .

2. Mix in the eggs one at a time .Add buttermilk and vanilla then mix well .

3. Sift in flour , baking powder, bicarbonate of soda , salt , cinnamon, nutmeg and ginger . Then gently mix .

4. Add the grated carrots, walnuts and raisins . Gently mix.

5. Line 2 baking pans with parchment paper. Divide the batter (mixture) equally in 2 baking pans .

6. Bake in a preheated oven for 30-35 minutes minutes or until well baked . Note: Baking time depends on your oven .

Let the cakes cool off completely before taking them out of the baking pan.

Chocolate loaf
Ingredients
1 cup cake flour
1 cup white sugar
1/2 cup milk (125ml)
1/2 cup melted butter
2 eggs
5 Tbsp cocoa powder
1 tsp baking powder
1 tsp vanilla essence
2 tsp coffee powder
1/4 tsp salt
Note : You can use all purpose flour instead of cake flour .

Instructions
1. In a large bowl add the melted butter and sugar . Mix well .

2. Add vanilla and mix in one egg at a time . Then add milk , gently mix .

3. Sift in flour, cocoa powder, coffee powder, salt , baking powder.
Mix gently until the wet and dry ingredients are well combined.

4. Pour the batter ( mixture) in a prepared loaf tin.

5. Bake in a preheated oven at 180 Degrees for 30 minutes.

OPTIONAL: Chocolate glaze
1/2 cup chopped chocolate
2 Tbsp milk
Add the chocolate and milk in a small bowl . Let it melt over boiling water or in a microwave. Mix until you get a smooth and thick consistency.

Marble Pound Loaf

Ingredients
2 cups plain or cake flour
1/2 cup unsalted butter
1 & 1/2 cups white sugar
3/4 cup milk
3 eggs
1/4 cup cocoa powder
2 tsp baking powder
1 tsp vanilla essence
1/4 tsp salt

* All ingredients should be at room temperature.

Instructions
1. In a large bowl beat the sugar and butter until light and fluffy.

2. Mix in one egg at a time , then add vanilla and mix . Add milk and mix again.

3. Sift in flour, baking powder and salt . Mix just to combine the wet and dry ingredients.

4. Take another bowl then divide the batter (mixture) equally into two .

5. Add cocoa powder in one batter and mix but donโ€™t over mix.

6. Grease and line a loaf pan with parchment paper.

7. Scoop out the batter using a tablespoon. Scoop out the two batters interchangeably.
* Scoop chocolate batter first add in the loaf pan then scoop the vanilla batter and add it on top of the chocolate batter .

Repeat this process until there is no batter left in both bowls .

8. Bake in a preheated oven at 180 Degrees Celsius for 45-50 minutes or until well baked .

1. Preheat oven to 160C. Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring.
2. Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl. Whisk through to combine.
3. Add buttermilk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.
4. Divide cake batter evenly between the two prepared cake pans.
5. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center of the chocolate cake comes out clean.
6. Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
7. Frost and decorate as desired.

MENU: CAKE

RECIPE:
2 cups All-purpose flour
2 tablespoons baking powder
4 eggs
1 cup sugar or less
โ…” cup liquid milk
1 tablespoon vanilla extract
1 cup vegetable oil
ยผ teaspoon salt

PROCEDURE:
* Start by placing a sieve over a mixing bowl, pour in all the all-purpose flour, baking powder, salt and sift then use a spatula to mix everything together to combine & set aside.

* In another mixing bowl, crack in the eggs & set aside.

* Next, in a blender, pour in the oil, eggs, sugar, milk, vanilla extract then cover & blend for just 2 minutes. (NOTE: All ingredients should be at room temperature).

* Next up, pour the blended wet ingredients inside the dry ingredients then gently mix everything together to combine. (NOTE: Do not over mix the cake batter).

* Afterwards, brush the cake pan with oil, dust with some flour & remove any excess then transfer the cake batter into the pan, tap the button of the cake pan on a surface to remove the air bubbles.

THE OVEN
* Pre-heat the oven at 355โฐF then transfer in the cake and bake for 30-35minutes or depending on the type of oven you using.

THE POT AND GAS METHOD
* Place a pot on gas top, add salt and spread it out at the button of the pot, place a rack inside the pot, cover & heat it up for 10minutes. After 10minutes, open the pot, place in the cake pan & cover the pot tightly with the lid then bake for 50-60minutes. (NOTE: First, you must make sure that the colour of the gas flame is BLUE. Secondly, the lid of the pot must be tight because it helps to trap in the heat & avoid it from escaping out).

* Check on the cake with toothpick. It's ready when toothpick comes out clean then turn off the oven or gas. Take it out, leave it to cool down a bit & remove it from the cake pan.

* Serve and Enjoy with any chilled soft drink of choice or hot tea & coffee.

Easiest No-Bake Cherry Cheesecake
Ingredients
1 graham cracker pie crust
1 pkg softened cream cheese, 8 oz.
1 tsp vanilla
1 can eagle brand sweetened condensed milk
1/3 c lemon juice
1 can favorite pie filling (cherry, strawberry or blueberry)
How To Make:
Beat cream cheese in mixing bowl until light and fluffy.
Add sweetened condensed milk; blend thoroughly.
Stir in lemon juice and vanilla.
Turn into the pie crust.
Cover and refrigerate 2-3 hours or until firm (can do overnight); do not freeze. Chill pie filling when chilling the cheesecake.
Top with chilled pie filling before serving.

Healthy chocolate cake
We've given classic chocolate cake a healthy twist by using sweet potatoes, sticky dates and almond milk. Using dark chocolate and cacao powder gives it a wonderful richness

Ingredients
300g sweet potatoes
250g dates, (after stones removed)
75ml cold-pressed rapeseed oil
350ml almond milk
1ยฝ tbsp cider vinegar
350g wholemeal self-raising flour
50g cacao powder
1 tsp bicarbonate of soda
1 tsp vanilla extract
150g dark chocolate, roughly chopped, plus 10g, grated
1 orange, zested, juiced to make 1 tbsp

How to make it:
STEP 1
Heat the oven to 190C/fan 170C/gas 5. Pierce the sweet potatoes in several places, then put on a small tray. Bake for 1 hour or until soft throughout, then remove from the oven and leave until cool enough to handle.
STEP 2
Put the dates in a medium bowl and cover with just-boiled water. Leave to soak for 30 minutes. Drain, reserving 2 tbsp of the soaking water, and put the dates and reserved water in a mini food processor. Blitz until smooth.
STEP 3
Oil the bases and sides of two 20cm loose-bottomed sandwich tins using ยฝ tsp of the oil, then line the bases with baking paper. Put the almond milk in a jug, add the vinegar and leave to sit. Sift the dry ingredients into a large bowl. Make a well in the centre and add the purรฉed dates, almond milk, oil and vanilla. Beat well until smooth. Divide the mixture between the prepared tins and bake for 25-30 minutes or until a skewer inserted into the middle of the cakes comes out cleanly. Leave to cool in the tins for 10 minutes, then turn out onto wire racks to cool completely.
STEP 4
Scrape the insides of the sweet potatoes into a medium pan. Add the chocolate and, on a low heat, continuously mix until the chocolate is melted and the mixture is mostly smooth. Transfer the mixture to a food processor while still warm, along with the orange zest and juice. Blitz for 2 minutes until completely smooth. If the mixture looks too thick, add 1-2 tbsp of just-boiled water and continue to beat until smooth. Leave to cool, then spread all over the cake. Decorate with the grated chocolate.

CHOCOLATE SWISS ROLL
INGREDIENTS
75g golden caster sugar, plus extra for scattering
200ml double cream
60g self-raising flour
3 tbsp cocoa powder
3 eggs
ยฝ tsp vanilla extract
50g icing sugar, sifted, plus extra to serve
METHOD
1. Heat the oven to 220C/200C fan/gas 7. Line a 22 x 32cm swiss roll tin (if itโ€™s 20 x 30cm thatโ€™s still fine) with baking parchment. Sift the flour and cocoa powder together into a bowl and set aside.
2. Crack the eggs into another bowl or the bowl of a stand mixer and tip in the sugar. Use an electric whisk or the whisk attachment to beat the eggs and sugar together for 5 mins until pale and very thick. Use a spoon or spatula to gently fold in the flour mixture until completely incorporated and everythingโ€™s the same colour with no streaks.
3. Gently scrape the mix into the tin and spread to the corners. Bake for 9-10 mins until puffed up and springy to touch. While the cake is baking, get another piece of parchment a little larger than the tin and scatter it with sugar. When the sponge is cooked, use oven gloves to carefully invert it onto the sugar-coated paper. Lift off the tin and peel away the top layer of parchment. Score a line 2cm from one of the shorter edges, then use the parchment to roll the sponge into a spiral with the parchment running through it. Leave the rolled sponge to cool completely.
4. While the cake is cooling, make the filling by whisking all the ingredients together until the cream stiffens. Unroll the sponge and spread over the filling, leaving the scored edge clear. Starting from the scored edge, use the parchment to roll the sponge up around the filling. Lift onto a board or serving platter and dust with icing sugar. Can be served straight away or chilled for up to 24 hrs. Serve in slices.

Ingredients:

โ€ข 2 oranges

โ€ข 150 g of butter

โ€ข 6 eggs

โ€ข 1 teaspoon of yeast

โ€ข 250 g of sugar

โ€ข 250 g of flour

โ€ข 100ml of milk

Syrup:

โ€ข 200ml of water

โ€ข 150 g of sugar

โ€ข 100ml of orange juice

How To Make:

Wash and cut the oranges into slices. In a pan, boil the syrup ingredients and place the orange slices to cook. Once cooked, drain on absorbent paper and set aside. also reserve the syrup.

Grease a mold with margarine and sprinkle with sugar. Cover with the orange slices. turn the oven to 180 degrees and set aside.

In a bowl, combine the butter with the sugar and beat well. Add the milk and eggs one by one, beating well. Finally add the yeast and flour. hit everything very well. back into the pan and bake in the oven for approximately 45 minutes until cooked through. Check if the cake is cooked by inserting a toothpick and remove from the oven. Unmold, drizzle with the syrup, let it cool and serve decorated to taste.

Apple Bread made from scratch with butter, sugar & plenty of fresh apples. Topped with a cinnamon Streusel & drizzled with warm vanilla glaze, itโ€™s amazing.

Ingredients:
1/2 cup softened butter
1 cup granulated sugar
2 eggs
1/2 cup milk
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 1/2 cups diced peeled a green apple
1/2 cup chopped walnuts or pecans

Topping:
5 TBSP cold butter
1/3 cup flour
2 TBSP granulated sugar
2 TBSP brown sugar
2 tsp ground cinnamon

Vanilla Glaze: Whisk all ingredients together until smooth. Set aside.
1 TBSP melted butter
1/2 cup powdered sugar
1 TBSP milk
1/4 tsp vanilla extract

Instructions:
Preheat oven to 350 degrees F. Line a bread pan with parchment paper or spray with non-stick cooking spray.
Cream butter and sugar in a mixing bowl. Add in eggs, milk, and vanilla and stir to incorporate. Mix in flour, salt, and baking powder. Fold in apples and nuts. Transfer mixture to prepared baking pan.

For topping, combine all ingredients and mix with a fork or pastry mixer until crumbly. Sprinkle over batter in pan.

Bake for 55-60 minutes, until toothpick inserted in bread, comes out clean. (Internal temperature of bread will be 200 degrees F when fully cooked.) Let cool. Remove from pan and drizzle top with vanilla glaze. Slice and serve. Store leftovers in an airtight container.

RED VELVET CAKE RECIPE

Ingredients:

Flour 2 1/2 cups (310g) all purpose flour.
1/4 cup Cocoa powder
1 1/2 teaspoons of Baking soda
Butter (125g)
Sugar 2 cups (400g)
1 cup of buttermilk (250ml)
4 large Eggs
150ml of Vegetable oil
1/2 cup Milk (Liquid)
2 teaspoons of Vanilla extract
1 teaspoon of Vinegar
2 Tablespoons Red food coloring
1 teaspoon of salt.

Preparation for Red Velvet Cake.

1) Mix flour, cocoa powder, baking and salt in a bowl, stir well and set it aside.

2) Add butter and suger in another large bowl, stir together until it's smooth.

3) Add two eggs into the mixture and stir one at a time, beat until combined.

4) Add vegetable oil into the mixture and beat until combined and add the liquid milk and the vinegar and buttermilk then beat until combined.

5) Gradually add the flour, cocoa powder, baking soda and salt into the mixture and mix until well combined, then add vanilla extract and red food coloring to your taste.

6) Divide the mixture into two 8-inch baking pan.
Bake at (175c) for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
Take it out from the oven and let it cool before taking it out of the pan. Enjoy....

Chocolate cake recipe

Flour -2ยฝ cups
Sugar -2 cups
G.nut oil - 1 cup
Buttermilk -1cup
Salt -1tsp
Baking powder- 1tsp
Baking soda -ยฝ tsp
Coco powder ยฝcup
Chocolate & vanilla Flavor - ยฝ tsp each(all together makes 1 tsp)
Egg -2
Hot water - 1 cup
Dark coffee (unsweetened) - 1 tsp
NB: To make your buttermilk, you will add 1 tbsp of white vinegar or lemon juice to 1 cup of milk, this will give you your buttermilk)

Procedure

Sieve your flour,coco powder in a sizeable bowl
Add baking powder, baking soda and salt, use your hand whisk to mix everything together very well and set aside

Now add your oil, eggs, buttermilk and sugar in another sizeable bowl, mix everything together very well, start adding the dry ingredients to the wet ingredients gradually and be mixing with your whisk till your exhaust all the dry ingredients,

Add your 1tsp of coffee into your cup, add 1 cup of boiling water to the coffee, stir together and then pour it into your batter ( flour and wet ingredients mixture) mix everything together very well, add your flavors.

pour into your already lined pan, if your have some chocolate chips or chocolate bar available cut the chocolate bar into chunks and add to the batter, push the cake batter into your already preheated oven, bake for 40 mins or until skewer comes out clean when inserted into the cake. Coconut Rock Buns

Ingredients
2 cups plain flour
1/2 cup desiccated coconut
1/4 cup white sugar
1/2 cup butter/margarine(room temp)
2 eggs
1/2 cup milk
1/2 cup raisins
1 tsp vanilla essence
2 tsp baking powder
1/4 tsp salt
1/2 tsp cinnamon

Instructions
Preheat the oven to 180 Degrees Celsius.

1. In a large bowl add flour ,coconut, sugar , baking powder, cinnamon and salt . Then whisk well.

2. Add butter then rub it with your fingers until you get a crumbly mixture. Then add the raisins and mix .

3. Add vanilla, eggs and milk then mix until a dough is formed.

4. Use a tablespoon to scoop out the dough. Place the dough balls in a prepared baking tray.

DO NOT SHAPE THE DOUGH BALLS. THEY SHOULD LOOK MESSY LIKE ROCKS .

5. Bake in a preheated oven for 30 minutes or until golden brown.

3 ripe bananas (mashed)
3/4 cup white sugar

Ingredients
1 & 1/2 cups flour ( all purpose or cake )
1/2 cup white sugar
1/2 cup unsalted butter (softened)
1/2 cup buttermilk
2 eggs
1 tsp vanilla essence
1 & 1/2 tsp baking powder
1/4 tsp salt

Instructions
1. In a large bowl cream butter and sugar until light and fluffy.

2. Add vanilla then mix in one egg at a time. Then add buttermilk and gently mix.

3. Sift in flour, salt and baking powder. Mix gently. DO NOT OVER MIX .

4. Pour the batter ( mixture) in a prepared baking pan.

5. Bake in a preheated oven at 180 Degrees Celsius for 35 minutes or until well baked.

Ingredients
2 cups flour (cake or all purpose)
1 cup plain yoghurt
1 & 1/2 cups white sugar
1/2 cup vegetable oil
3/4 cup cocoa powder
2 eggs
1 tsp vanilla essence
1 tsp coffee powder
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
1/3 cup choc chips or chocolate chunks (optional)

Instructions
1. In a large bowl add flour , cocoa powder, coffee powder, salt , baking powder, bicarbonate of soda then whisk well .

2. In another large bowl add oil and sugar then mix . Add vanilla then mix in one egg at a time . Finally add yoghurt then mix.

3. Sift in the dry ingredients to the wet mixture . Mix until all the ingredients are well combined. Please DO NOT over mix .

4. Scoop in the dough into a prepared muffin tray . This is a thick mixture, so make sure the muffin tray is fully filled.

*Add chocolate chips or chocolate chunks on top .

5. Bake in a preheated oven at 180 Degrees Celsius for 18-20 minutes.

Tips : If you want them to puff up on top bake them at 200 Degrees Celsius for exactly 5 minutes. Then reduce the oven temperature to 180 Degrees Celsius and bake for 15 minutes.
*Donโ€™t open the oven during this process .

* In order to keep the muffins moist for a long time , let them cool off for a little bit . While still warm keep them in an airtight container.

Ingredients

1/2 cup unsalted butter (room temp)
1/3 cup icing sugar
1/4 cup cornflour
3 Tbsp unsalted caramel sauce
1 tsp caramel essence
1 tsp baking powder
1/4 tsp salt

Instructions
1. In a large bowl add butter and icing sugar then mix until light and pale .
Then add caramel sauce and caramel essence and mix .

2. Add flour , cornflour , baking powder and salt . Mix until the dough is formed.

3. Cover the bowl and let the dough chill in the refrigerator for 30 minutes.

4. Use a tablespoon or an ice cream scoop to scoop out the dough . Roll each dough piece into a ball .

5. Place the dough pieces in a lined baking tray. Use a fork to make patterns on each dough piece .

6. Bake in a preheated oven at 180 Degrees for for 18 minutes or until slightly golden brown .

Note : If your dough is too sticky add a little bit of flour and if itโ€™s too crumbly add a little bit of caramel sauce.

7 Up Pound Cake
Ingredients:
1 1/2 C Butter, softened
3 C Sugar
5 Eggs
1 t Vanilla Extract
2 t Almond (or Lemon) Extract
3 C All-purpose Flour
1 C Sprite, 7-UP, Or Sierra Mist

Instructions:
Preheat oven to 350 degrees.
Cream butter. Add sugar, 1 cup at a time, beating for a minute before adding and scraping the sides of the bowl after each addition.
Once all the sugar is added, continue to beat for an additional 4 minutes. Add eggs, 1 at a time, mixing after each addition.
Add the extracts and mix well.
Add the flour and soda alternately, starting and ending with the flour, mixing well after each addition and continuing to scrape the sides of the bowl.
Pour into a greased Bundt pan and bake for 1 hour to 1 hour 10 minutes, until the cake is firm.
If using a loaf pan, this will fill two pans, bake for 50-60 minutes, until the cake is firm

Ingredients you need:

2 large eggs
125 grams of flour
125 grams of sugar
ยฝ cup of vegetable oil
ยฝ cup of milk
1 tablespoon vanilla or orange essence
1 tablespoon baking powder

Preparation:

Once you have all the ingredients, try to separate them according to the

measurements you will need to prepare this recipe. When this is ready, you must begin to follow each step in depth to have the perfect Mexican mantecadas


Preheat the oven to 180 degrees and place the paper cups in the shortbread mold.

In a cup place the flour, baking powder and yeast, then reserve it.

While, in another cup you must place the sugar and the eggs, in this case you must beat until all the sugar has completely dissolved.

Proceed to add the milk, the essence of either vanilla or orange, and the orange zest. You must mix again.

Go adding the oil gradually and slowly, while you mix until you achieve a uniform and homogeneous mixture.

To this mixture you will have to add the one you reserved in the first step along with a tablespoon of salt. You should keep mixing, but not as much. Then let it rest for about 15 minutes.

Add the mixture to the mold that you already have ready. You must cook it for 20 minutes in the oven, then let them cool for a couple of minutes and they are ready to be eaten.

2 cups milk
1 Cup Vegetable oil(Cooking oil)

Method

Pre-heat your oven at 180 degrees.
Cream(Mix) sugar, eggs and oil, add essence and milk and continue to mix.

From another bowl mix the flour and baking powder together and add to the wet ingredients one cup at the time, mix till smooth

Pour the mixture into greased muffin pan and bake till golden brown( you can also use paper cups)

Method

preheat the oven to 180ยฐC.

Sift the flour together with the baking powder and the pinch of salt in a bowl, mix well and set aside.

In another bowl place the eggs and beat them at low speed for 5 minutes.

Add the cup of sugar and continue beating for another minute, once the time has passed add the oil and the vanilla essence, continue beating until well incorporated.

Gradually add the flour mixture, each time you incorporate this mixture add a little milk, continue beating at low speed until the rest is incorporated.

1 (6oz) pre-made graham cracker crust
1 (8oz) tub of Cool Whip (thawed in fridge)
6 regular sized Hershey's Chocolate Bars (about 9 ounces)

Directions

-Break apart your Hershey's Bars and place them in a microwave safe bowl (set a few squares aside for garnish later). Heat for 20-30 second increments until the chocolate is melted.
-Add the Cool Whip to the melted chocolate and mix until well combined.

LEMON CAKE WITH LEMON FILLING AND LEMON BUTTER FROSTING

Ingredients:

2 c all purpose flour
2 t. baking powder
1 t. salt
1/2 c butter
1 1/4 c sugar
3 eggs
1 t.vanilla
1/4 c fresh lemon juice & 1 t. grated lemon zest
3/4 c milk
(add a couple drops of yellow good coloring,if desired)

FILLING

1 tablespoon grated lemon zest
1/2 c fresh lemon juice
1 t. cornstarch
6 t. butter
3/4 c sugar
4 egg yolks,beaten

FROSTING

4 c confectioners sugar
1 t. grated lemon zest
1/2 c butter,softened
2 tablespoons fresh lemon juice
1 t. grated lemon zest
(add a couple drops of yellow food coloring if desired)
2 tablespoons milk (f needed to thin frosting)
chopped nuts,optional

Directions

1. Preheat oven to 350 degrees. Grease and flour two 8 inch round pans. Mix together the dry ingredientsSet aside. In a large bowl, cream together the butter and sugar until light and fluffy. Add lemon juice & zest to the milk.

Beat in the eggs one at a time,stir in vanilla. Beat in the flour mixture alternately with milk, mixing just until incorporated. Pour batter into pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.
2. To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth.

Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth.

Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).

Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.

3. To make frosting: In large bowl, beat confectionersโ€™ sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth, and increase speed and continue to beat until light and fluffy.((add milk 1 tablespoon at a time to thin frosting if needed))

4. To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting.

Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting Decorate sides of cake with nuts if desired. Refrigerate cake until serving time.
