For Chakli, you need a special flour (we call it Bhajani in Marathi). It is easily available in Indian supermarket. I usually use home-made Bhajani. Here is how we make it:
Ingredients for Chakli Bhajani (yields ~2 kg):
- Rice (4 cups)
- Chana dal (2 cups)
- Urad dal (1 cup)
- Moong dal (1/2 cup)
- Roasted Jeera/Cumin seeds (2 tbsp)
- Poha or Sabudana (1/2 cup)
Method:
1. Thoroughly rinse rice and lentils and air dry.
2. Individually roast rice and lentils but don't let their color change much.
3. Once cooled, grind everything together to very fine flour.
Chakli Ingredients (yields ~20 chaklis):
- Chakli Bhajani (1 1/2 cups)
- Butter/Ghee (3 tbsp)
- Water (1 cup)
- Ajwain/Carom seeds powder (1 tsp)
- Red Chili powder (1/2 tsp)
- Cumin-Coriander powder (1 tsp)
- Sesame seeds (1 1/2 tsp)
- Salt (to taste)
