Friends! I was lucky enough to meet Rachel of BelleAmiss Photography a little over a year ago when she did this super fun photo shoot for me. We had the best time and I was lucky enough to make a new friend in the process. She has Load of Crock as her featured client and I wanted to share.

Friends! It is crazy to believe that we are in the last month of 2023! Generally this time of year, between Thanksgiving and the end of the year, given all the various holiday gatherings and events throughout the month, I try to really reign it in with food, maybe eat a little lighter for a week or two after Thanksgiving, but, you know what? Not this year. Nope. I am going all in this last month, and in support of that, I am super happy to share this simple and delicious comfort food, a 5 ingredient chicken rigatoni alfredo.

The perfect and most simple dish, especially for those that are with me and have no intentions of reigning it in between the holidays, and just letting our food and drink buffet roll right through the end of the year! Enjoy!

Friends! We are almost there, the day before Thanksgiving. Thanksgiving Eve, if you will. Hope everyone is ready to get into some sweatpants and eat and drink until your heart desires!

To assist with all of your food planning, whether for tomorrow or the many holidays and gatherings that follow in December, we have created a temporary and new home page on our website! Now through the end of the year, when you visit our website, you will be brought to this page where we have picked some of our most holiday-esque food so that it's all at your fingertips. Our hope is that this helps simplify some of the food and drink planning that often comes this time of year. And don't worry, all other recipes are still available by clicking the recipes link at the top of our page.

Ok, friends, I know we are lucky this week and are having a warm up in the midwest, but we are still in the midst of soup season! Here is one of my faves, a baked potato soup that is simple and topped with bacon, so how could you go wrong? Full recipe below. Enjoy! Happy Monday!

Ingredients/Recipe:
• 1 box (32 oz) chicken broth
• 1 can cream of chicken soup
• 1 can cheddar cheese soup
• 1, 28 oz bag of cubed, frozen potatoes
• 1 cup of diced carrots
• 1 cup of cubed ham
• 8 oz cube of cream cheese
• 1 cup of cheddar cheese, shredded (garnish)
• 6-8 pieces of bacon, cooked, crushed (garnish)

Putting it Together:
Place the chicken broth through the ham (in list above) into the crock pot, and place on low for three hours. After this, add the 8 oz of cubed up cream cheese, and mix all together. Place it back on low, for 1 additional hour. After this hour, the cream cheese should be melted- give it a good mix, getting all of the melted cream cheese nicely mixed in. Put on low for another 30 minutes, and then let sit (either warm or off) for 15-20 minutes.

Serving:
Serve hot and garnish with shredded cheddar cheese and the crushed up bacon. Or any other toppings you may use on a baked potato.

And this soup freezes great for up to 3 months, so feel free to make a lot, and freeze what you don't eat, because let's be honest, it will probably come in handy again, yet this winter!

Friends! It's Friday, it's fall, so let's do this! A super easy and really delicious chili recipe to add to your rotation this weekend or next week. I grew up with my mom making this exact recipe, and to this day, always look forward to it. Full recipe below. Happy weekend, enjoy!

Slow Cooker Chili

Ingredients/Recipe:
1-2 lbs. of hamburger
1 medium can of tomato sauce
1-2 cans of mild chili beans (depending on how thick you like your chili)
1 can of crushed tomatoes
1/2-1 cup of brown sugar
1-2 cups of tomato juice
2 tsp of cinnamon (or more, to your liking, measure it with your heart)

Putting it Together:
Brown the hamburger and place in crock pot. Add the tomato sauce through the brown sugar from above, and then stir together. Add tomato juice, the amount based on how thick or soupy you like your chili. Then, sprinkle cinnamon on top and stir one last time, and place on low for 2-3 hours.

Serving:
Like with most chilis, this is fantastic with saltine crackers, or a side of cornbread, or topped with shredded cheese. Or, and this is better…all of them! Enjoy!

Friends! Another start to a beautiful fall week, so why not share another great soup recipe? Full recipe and tips all included here for this easy, creamy tomato tortellini soup. Have a great week!

Ingredients/Recipe:
10 oz bag of cheese tortellini
15 oz can of crushed tomatoes
10 oz can of diced tomatoes with green chiles
2 1/2 C of chicken broth
1/2 C of spinach
3/4 C of shredded parmesan cheese
1/2 C of heavy whipping cream

Putting it Together:
Put the tortellini through spinach (I also added some salt and pepper to taste) in the crockpot, mix up, and place on low for 1 hour. After the hour is up, add in the heavy whipping cream and the shredded parm, give it a good mix, and then place it back on low for 30 minutes.

Serving:
I served right when it was done, with more shredded parmesan on top of the soup, and with some crusty bread for dipping.

Load of Crock Tips:
☀️You can really bulk this soup up if you want by adding things like corn, peppers, mushrooms, or make it a chicken tortellini soup and add shredded chicken. Whatever you add, put it in the first hour with the other ingredients, leaving only the dairy ingredients for the last 30 minutes.

☀️If you are not a big cream fan, or in my case, cream is not a big fan of me…just do the first step, skip the cream and cheese, and you will have a really great tomato tortellini soup, cream-free!

☀️Leftover alert. SO GREAT the next day. So great.

The fall temperatures have arrived, which means...soup! Below is the full recipe for our chicken and wild rice soup, a perfect addition to your upcoming meals.

Happy fall, friends!

Ingredients/Recipe:
1 C cut up carrots
3 1/2 C chicken broth
1/3 C of wild rice
1/4 tsp thyme
1 tsp celery salt
1 tsp of onion flakes
Salt and pepper to taste
1 1/2 cup of shredded chicken
1 C of heavy whipping cream
3 tbsp flour
2 tbsp butter

Putting it Together:
Place the carrots through the salt and pepper in the list above, in the crockpot, and place on high for 2.5 hours. While this is cooking, cook the chicken breast in the oven, and shred up 1 1/2 cups and set aside in the fridge until the 2.5 hours are done.

Once the 2.5 hours have ended, add in the chicken through the butter in the list above, and then place on low for 1 hour.

As we celebrate the last part of summer, I wanted to come up with a dish that would be perfect for a gathering with fun serving options, as well as for a low-key Friday night for a gal, on her couch, in sweatpants. Enter the crockpot loaded totchos. That's right. It's like tater tot casserole on spicy, delicious steroids. Some may even say it’s TOT notch.

So, whether for a gathering, or for a woman, on her couch, in her favorite sweats, with a glass of red wine, watching Ted Lasso (I’m just spit balling here) this is a perfect and simple dish, no matter the season or reason, and always good with a glass of red. I've heard.

I decided to step away from the slow cooker, just for today, don’t worry, and try my hand at the infamous air fryer!

I have had one for years, and use it quite often, and recently have been wanting to try eggs in it. With Easter being this Sunday, I thought it was a great time to give it a try and, if I could figure out, potentially have an easy option for our holiday meal. Not shockingly to anyone who has been a part of this community for awhile, I opted for a caprese frittata, because, well, basil. And it turned out SO good!

The big game is upon us, friends! And even if you are not a football fan, or, let's just say, I'm just spit balling here, your favorite team since you were 8 got beat in the NFC Championship game and you are still trying to get over it, this is still a great time for food, drinks and friends! Hello friends! I cannot believe as I write, we are less than 2 weeks away from ringing in 2023, and prior to that, all the various holiday celebrations. Crazy! What is time, really? On the note of time, so happy to share another quick and easy recipe leading up to the holidays and new year! This is (another) long time favorite of mine that is a perfect, 4-ingredient, appetizer or side dish for any holiday and/or new years gatherings. Or, in our house, any random Tuesday evening.

The OG of LoC, if you will. 4 years ago, when we had this idea for the Load of Crock channel, this was the first recipe I ever started testing. That's right. Started. And then, never finished. But, the wait is over, and trust me, it was worth it.

Happy crockpot season, my friends! While there is no start or end to the slow cooking season in our home, I do feel that September really marks the start of slow cooker season for most. And I am here for it, so let's go!

Ever heard of having a case of the shanks? Shanking the golf ball. Shanking the football. Etc., etc. Having the shanks has never been viewed as good. Until now. That's right. I give you the shredded beef tacos, in the crockpot, made with, you guessed it, center cut shanks.

So, here we go, the official kick off to the slow cooking season. With a shank (cut) of which you can proud. So, I will say it again. Let’s. Go. And of course, enjoy!
